EASY SAUSAGE CASSEROLE



Easy Sausage Casserole image

A hearty and versatile sausage casserole that can be adapted to suit your family - you can easily swap the mushrooms for another vegetable such as carrots or butternut squash.

8 good quality pork sausages
1 tablespoon olive oil
2 onions, sliced thinly
Two cloves garlic, crushed
1 red pepper, diced
250g mushrooms, sliced
2 tablespoons tomato puree
1 teaspoon dried mixed herbs
1 teaspoon smoked paprika
sea salt and freshly ground black pepper
200ml beef Stock (I use a stock pot)
One 400g can chopped tomatoes

Steps:

  • Preheat the oven to 180C/160Fan/Gas mark 4.
  • Drizzle a little of the oil in a large frying pan and gently fry the sausages. When they are brown, remove from the heat and set aside. Add the remaining oil and gently fry the onion on a low-medium heat for five to eight minutes or until softened. Add the crushed garlic and cook for a further two minutes.
  • Add the diced pepper and sliced mushrooms, tomato puree, mixed herbs and smoked paprika. Season with salt and pepper and cook for about 5 minutes or until the vegetables have softened. Pour in the beef sock and chopped tomatoes, turn up the heat slightly and allow to simmer for a couple of minutes. Transfer everything to a deep casserole dish and cook for 50-60 minutes, until bubbling and piping hot.
  • Check the casserole for seasoning and serve with buttery mash or baked potatoes.

Pure comfort food. I love a a good sausage and egg breakfast with all the trimmings. This casserole has all that combined in one tidy package. Yummy yummy!!!

1 lb breakfast sausage
10 eggs
3 cups milk
2 teaspoons dry mustard
8 ounces cheddar cheese or 8 ounces colby-monterey jack cheese
6 cups bread, cubed
salt and pepper
sliced mushrooms (optional)
chopped tomato (optional)
chopped bell pepper (optional)
green onion (optional)
precooked potato, chunks (optional)
green chili (optional)

Steps:

  • Preheat oven to 325 degrees.
  • Cook the breakfast sausage as directed on the package. Crumble and drain.
  • In a large bowl combine the eggs, milk, dry mustard, pepper, and salt. Mix thoroughly.
  • Lay half the bread cubes in the bottom of a greased 9 x 13 casserole dish.
  • Add half the cheese and sausage to the casserole dish along with half of any of the optional ingredients if desired.
  • Repeat layer of bread, cheese, sausage, and optional ingredients if used.
  • Pour egg mixture over the top of the casserole.
  • Bake for about an hour or until eggs are set. Cover with foil if top browns too quickly.

1 lb bulk pork sausage
1/2 green pepper, chopped
1/2 cup chopped celery
1 (4 ounce) jar diced pimentos, drained
1 cup wild rice
2 teaspoons chicken stock powder
1 (10 1/2 ounce) can cream of mushroom soup
1 (2 ounce) can sliced mushrooms, drained
1 medium onion, chopped
1/2 teaspoon marjoram leaves
1/2 teaspoon thyme leaves
1 cup grated cheddar cheese

Steps:

  • ---To Prepare The Rice---.
  • Spray an 8 x 8-inch pan with cooking spray.
  • Rinse rice with cold water and drain.
  • Spread in prepared pan.
  • Cover the rice very generously with boiling water.
  • Cover pan with foil.
  • Place pan in a cold oven.
  • Turn oven on to 450°F.
  • When it reaches that temperature, turn the oven off and leave the rice in the oven overnight without opening the door.
  • It will be cooked when you get up in the morning.
  • ---To Finish The Casserole---.
  • Brown sausage in a large skillet.
  • Add green pepper, celery, and onion and continue cooking until vegetables are soft.
  • Drain off excess fat.
  • Add remaining ingredients, mixing well.
  • Stir in cooked wild rice.
  • Pour into a sprayed 3-quart casserole dish.
  • Cover and bake 45 minutes to 1 hour at 325°F or until heated through.

10 1/2 ounces cream of mushroom soup
2 1/2 large sweet potatoes, thinly sliced chips
1 red bell pepper, julianned
1 green bell pepper, julianned
1/2 medium white onion, julianned
1 lb ground sausage
1 lb ground beef
2 tablespoons oil
3 tablespoons garlic, minced
3 roma tomatoes, thinly sliced
4 ounces mushrooms, sliced
8 ounces milk
3 tablespoons dark brown sugar
3 ounces pure via stevia
1 1/2 cups french's crispy fried onions
1 dash salt and pepper, to taste

Steps:

  • Preheat oven to 350.
  • In medium sauce pan, add 2 T. oil, brown ground meat, drain; set to the side.
  • In medium sauce pan, combine 2 T butter, milk, brown sugar, stevia, and cream of mushroom soup; whisk until smooth and creamy; set to the side.
  • In a large skillet, saute red and green bell peppers, onions, mushrooms, and garlic in 2 T butter until crispy tender.
  • In a lightly greased 9x13 pan, layout sweet potato chips; add cream of mushroom sauce; add 1/2 sauted vegetable mix; add ground meat; add remaining sauted vegetable mix; sprinkle crispy fried onions; layer sliced tomatoes.
