RED BEANS AND RICE WITH SAUSAGE
This recipe was given to me by my sister. It's a hearty dish, and wonderful for the cold winter months. To make a little meatier, I cut up a small ham steak in cubes and add the cubed ham the last 20 minutes. Serve over cooked rice.

- Pick over the dried beans, and soak them in water overnight.
- The next day, drain off the soaking water, and place the beans in a large pot or slow cooker. Cover with water, and stir in the dried garlic and onion, salt, bay leaf, sugar, cayenne pepper, celery seed, cumin, and crushed red pepper flakes. Push the ham hock down into the beans. Bring to a boil, reduce the heat, and simmer over low heat for 3 to 4 hours.
- Stir in the smoked sausage, simmer for 20 more minutes, and serve.

- Simmer 5-7 minutes.

SMOKED SAUSAGE AND RED BEANS

THE EASIEST HOT SAUSAGE & KIDNEY BEANS WITH RICE
This is my go-to, super-easy weeknight dinner. Hot Links, canned kidney beans, onions, peppers, and jar salsa...doesn't get any simpler than that! This recipe allows for mindless "slap it together" nights or nights when you want to take a little more effort and make it *really* yummy!

- Get your rice started so that it'll be finished cooking when you are ready to eat.
- Slice the Hot Links lengthwise and then cut into bite-sized pieces.
- Peel your onion & de-seed the pepper. Cut the green pepper and onion into 1/2 inch chunks (you could also do strips, if you prefer).
- Heat your oil in a large skillet over medium heat. Add your peppers and onions and cook until they are the desired "done-ness" (I prefer mine well-cooked, so I occasionally pop them in the microwave for a minute or two to speed up the cooking process.).
- Remove peppers & onions from skillet (place in a bowl until later).
- Place sausage in skillet and cook until desired "done-ness" (we like ours nearly "blackened" with a bit of crisp on the outside).
- Drain most of the oil from skillet and then return onions/peppers. Add the can of kidney beans (drained).
- Continue cooking for several minutes to heat the beans and get some of the sausage flavor in the veggies.
- To serve: spoon a scoop of cooked rice on each plate/bowl (this is a bowl meal at our house!) Then top with the sausage mixture. A hearty spoonful (or two) of salsa on top finishes it off!
- This is usually from cabinets/fridge to plate in about 30 minutes. This time-range depends on how well cooked you like the vegetables, if you do any pre-cooking in the microwave, etc.
- In our house this recipe, as indicated above, serves 2 adults and 2 children (under the age of 3), with one serving leftover. I estimate that to serve *about* four.

- Cut the sausage into coins and browned them in the Ninja on Stove Top High. Set aside. Turn your Ninja to Stove Top Medium and heat oil. Add the onion and sauté for 5 - 7 minutes, or until tender. Add the garlic, celery, green bell peppers, Cajun seasoning and thyme and sauté for 2 more minutes. Set aside. Add rice and about 3 cups chicken broth. Bring to boil, and turned down to Stove Top Low. The rice will need extra liquid in the Ninja. You may need to turn it back up to Stove Top Medium, if the rice still has a little bit of a "crunch." Check every 5 minutes or so and add liquid if needed (this also helps to ensure the bottom won't burn.) When there is about 5 minutes left in cooking add the sliced sausage, kidney beans, the sautéed vegetable mixture, and the green onions. Taste for seasoning and add salt and pepper, if desired. Serve immediately.
AUTHENTIC AND QUICK RED BEANS AND RICE (WITH ANDOUILLE SAUSAGE)
I modified this from an authentic Louisiana Red Beans & Rice recipe because I didn't have time to soak dried beans. This still has all the flavor, but is faster since it uses canned beans. A nice touch is to use both light and dark kidney beans and to crumble some sausage into the mix. People will ask you for the recipe for this one!

- Heat one cup of water and soak bay leaves in the water for at least 30 minutes.
- In a large skillet, heat olive oil over medium heat. Add diced celery and cook 1-2 minutes. Then add diced Onion, bell pepper, and garlic and cook 3-4 minutes.
- Transfer vegetables to large stock pot. Drain kidney beans, reserving some of the liquid, and add beans to pot. Add one can of diced tomatoes (with liquid) to stock pot. Remove the bay leaves from the hot water and add the seasoned liquid to the pot. (If the bay leaves have not soaked long enough, you can add them later). If additional liquid is needed, add some of the reserved liquid from the beans or a small amount of water.
- In the same skillet you sauteed vegetables in, add Andouille sausage and cook over medium heat. You can slice the sausage then cook it or cook whole sausage then let cool and slice.
- Add cayenne pepper, thyme, sage, parsley, and Cajun seasoning to the stock pot with the beans and vegetables. Bring to a slight boil, and then reduce heat to medium-low. Simmer for 1 hour.
- Stir cooked sausage into beans, and continue to simmer for 30 minutes. At this point, you can add Goya brand Sofrito (a sauce used to season soups and stews) or 1 packet Sazon Goya (a seasoning packet that contains MSG) if desired. You can find Goya products in the Mexican food aisle of the grocery store.
- Add additional water, salt, pepper, or Creole seasoning to taste, if needed.
- Meanwhile, prepare the rice. In a saucepan, put 1 Tablespoon butter, and 2 cups water for every one cup dry rice and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes. Serve beans over steamed white rice. Serve Louisiana Hot Sauce at the table, if desired.

Growing up in Louisiana and living in New Orleans ten years hooked me on red beans and rice. This is a recipe I've used for years but the first to enter online. It is a simple process I do on a Saturday or Sunday and freeze the leftovers for emergency comfort food. Seasoning is variable and estimated. I tend to not use much salt in my foods.

- Rinse red beans and remove any debris.
- Add 7 cups of water, bay leaves, seasoning and the red beans to the crock pot.
- Set crock pot to high setting.
- Let cook for 4-6 hours or until beans soften.
- Remove about 1/2 cup of beans and mash then return to crock pot.
- Cut tube sausage into about 1/8" slices.
- Brown slices in skillet then drain.
- Add sausage slices to red beans.
- Sauce with thicken over time and more so on reheating. If thicker consistency desired, mash more beans and return to crock pot. It will appear a bit thin at this point.
- Cook on low for another 2-3 hours.
- Serve over rice with French bread or similar.
- Add hot sauce, like Tobasco, as desired.
