CRISPY BAKED CHICKEN WINGS

1 tablespoon vegetable oil
2 pounds chicken wings, separated into drumettes and flats
1 tablespoon baking powder
1/2 cup light brown sugar
2 tablespoons kosher salt
1 tablespoon butcher's grind cracked black pepper
2 tablespoons granulated sugar
1 tablespoon Hungarian paprika
1 tablespoon chili powder
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 1/2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
Pinch of celery seeds

Steps:

  • For the wings: Preheat your oven to 450 degrees F. Line a rimmed baking sheet with foil and brush the foil with the oil.
  • Pat the wings dry with paper towels, then sprinkle with the baking powder and toss to evenly coat in a large mixing bowl. Spread the wings evenly on the prepared baking sheet. Bake until golden brown, crispy and cooked through, 25 to 30 minutes, flipping halfway through.
  • For the dry rub: Combine the brown sugar, salt, black pepper, granulated sugar, paprika, chili powder, garlic powder, onion powder, cumin, cayenne and celery seeds in a small bowl.
  • Remove the wings from the oven and add to another large mixing bowl. Season well with some of the rub, and then toss to coat. (Reserve the remaining rub for another use.) Serve immediately.

I found this on another website as a Hooter's Clone. It really is the best I have ever tasted and a frequent request from my guests. The Franks Red Hot makes the difference. Oh, and heat the sauce over VERY LOW heat or it will seperate. If you let the wings sit for a bit they will become moist an you can do the second breading without the egg wash. Enjoy!

1 cup flour
1 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
1/2 cup butter (not margarine)
1/2 cup Frank's red hot sauce (near the Tabasco in the store)
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
20 chicken wings or 20 chicken drummettes
1 egg
water

Steps:

  • Combine breading in a bowl or gallon sized ziplock bag, coat chicken with flour mixture. Then dip floured chicken briefly in beaten egg (add a little bit of water to thin slightly) and again dredge in flour. Set aside.
  • Gently melt butter in pan, add Franks Red Hot, pepper and garlic powder. Be careful to keep the heat medium to medium low, and do not boil or butter will separate and the mixture will not stay blended. (If that happens, whisk it real quick and carry on anyway).
  • Fry chicken in a single layer (9-10 drumettes at a time) in deep fryer at 375°F for 12 - 13 minutes (so they are nice and crispy). Drain briefly in fry basket.
  • Pour half of the sauce into a glass container with a tight fitting lid. Dump in the chicken, put on the lid and carefully shake, coating the entire wing with sauce. Remove from container and set on a plate. The breading will absorb the sauce within a minute or so. Serve with celery sticks and either Ranch or Blue Cheese dressing.
  • (Note: When tripling the recipe, only double the sauce and breading. There will be plenty).

Once you try this fall off the bone goodness you'll eat wings no other way :) I've always loved Buffalo Wings and after a few trial by fire attempts i think I've found the perfect combination... Depending on how hot you like your wings you can use a few different sauces.. I like Franks Buffalo Sauce. These are great for Lunch, Dinner, Partys, cookouts ect.

12 chicken wings (24 Flaps & Drums once cut)
1 1/2 ounces chicken seasoning (Weber Grill Creations KICK'N CHICKEN seasoning)
1 (14 ounce) bottle buffalo wing sauce (Franks Buffalo "Hot" or Budweiser Mild & Tangy Wing Sauce)

Steps:

  • Cut up the wings removing tips then separate the flaps & drums at the joint (12 wings should make 24 flaps & drums).
  • In a Deep Frier or pot with Vegitable oil.
  • Fry Wings until they float and start turning brown. (I like the skin crispy so i let them go a little longer).
  • Place fried wings on a paper towel lined tray to allow oil to drain.
  • Pre-Heat Over to 400 Degrees.
  • Pour "Franks Buffalo Sauce" into a bowl.
  • Using tongs dip the wings in the buffalo sauce completely coating them and place them on a baking sheet.
  • Lightly sprinkle "Webers Kickin Chicken Seasoning" on the dipped wings and place in oven when it's ready for 10 minutes to bake on the buffalo sauce.
  • ENJOY !

My own recipe. I've been making these for years and every time I tweak it up a bit to make it hotter and hotter and to find the right taste. These are very spicy, but of course you can control the heat by adjusting the amount of peppers.

4 1/2 lbs chicken wings
1/2 cup butter
1 1/2 cups louisiana hot sauce
1/3 cup sambal oelek chili paste
2 -4 chipotle chiles
1/4 cup soy sauce

Steps:

  • **To make the sauce:.
  • Melt butter. Add hot sauces, soy sauce and peppers. It doesn't matter if the chipotles are dried or in adobo sauce. Either way is good.
  • Set aside in a pan.
  • **To prepare wings:.
  • *Divide wings, discarding the tips.
  • *Deep fry in batches, until browned.
  • *Drain each batch on paper towels.
  • *After each batch is drained, toss into hot sauce mixture.
  • Note: Once all the wings are in the sauce, toss, cover and simmer for a few minutes. This step isn't absolutely necessary, but lets the wings absorb more of the sauce.

This recipe receives raves every time I serve it! The sauce will be a small quantity and very thick. Don't let that scare you! Baking or grilling the chicken is also an option instead of frying.

vegetable oil for frying
2 pounds chicken wing pieces
¼ cup margarine, melted
¼ cup hot sauce (such as Frank's RedHot ®)
6 cloves garlic, chopped
1 (1 ounce) envelope dry onion soup mix
1 tablespoon lemon juice
1 pinch dried basil

Steps:

  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Preheat oven to 350 degrees F (175 degrees C).
  • Fry chicken in the hot oil, working in batches, until no longer pink in the center and is crispy on the outside, 10 to 15 minutes per batch. Transfer chicken to a paper towel-lined plate using a slotted spoon; set aside until cool enough to touch.
  • Stir margarine, hot sauce, garlic, onion soup mix, lemon juice, and basil together in a bowl until sauce is smooth.
  • Put chicken in a large resealable bag; add the sauce, seal the bag, and shake until wings are coated. Spread wings into a baking sheet.
  • Bake in the preheated oven until sauce has baked onto the chicken, about 5 minutes.
