SWEET ROLL DOUGH
I have been making cinnamon rolls and dinner rolls with this recipe since I was about 13. This recipe came from the Betty Crocker Picture Cookbook in the 60's.

Steps:
- Mix water and yeast in large mixing bowl.
- Stir until dissolved.
- Add milk, sugar salt, eggs, shortening and 1/2 of the flour.
- Mix until smooth and pour out onto floured surface. Knead while adding the additional flour. Knead until smooth and elastic( about 5 minutes).
- Round up in greased bowl with greased side up. Cover with damp cloth.
- Let rise in warm place until double (about 1&1/2 hours).
- Punch down; let rise again until almost double.
- Dough is ready to to make into cinnamon rolls or dinner rolls now.

Steps:
- 1. Scald milk (bring just to a boil and remove from heat immediately).
- 2. Stir in sugar, salt, and butter. Set aside and allow to cool to lukewarm.
- 3. In a large bowl mix warm water and yeast. Stir until dissolved.
- 4. Stir in lukewarm milk mixture.
- 5. Add beaten eggs.
- 6. Stir in half the flour. Beat until smooth. Add remaining flour gradually, mixing as you go. You may need a bit more or less than the total 4 1/2 cups called for in the recipe, depending on the humidity and other factors.
- 7. Your dough should be elastic and slightly stiff but not dry.
- 8. Turn dough out onto a floured board and knead until smooth and very elastic. This usually takes 8-10 minutes.
- 9. Butter the inside of a large mixing bowl. Put dough in bowl and turn dough over a couple of times to coat it all with the butter.
- 10. Cover bowl and place in a warm place so it can rise.
- 11. It will take about 1 hour to double in bulk.
- 12. At that time punch dough down and turn out onto a lightly floured board to shape.
- 13. At this point, you can shape and fill as desired. To make dinner rolls, pinch off about 2-3 tablespoons of dough and shape into a ball. Place each one in a buttered muffin tin or baking pan, barely touching each other, do not crowd rolls.
- 14. Cover prepared rolls and allow to rise in a warm place until doubled in bulk, again about 1 hour.
- 15. Rolls should now touch each other. (A little more rising will occur during baking.)
- 16. Preheat oven to 350 degrees when rolls are about 10 minutes from being ready for baking. When ready to bake place rolls in the oven and bake for 20-25 minutes. They should be browned nicely and smell so good and yeasty!
- 17. Brush tops of rolls with melted butter immediately when removed from the oven.
- 18. Allow rolls to sit for at least 10-15 minutes before eating.
BASIC SWEET-ROLL DOUGH

- Warm 1/2 cup water and the milk in a saucepan over low heat until a thermometer registers 100 degrees F to 110 degrees F. Remove from the heat and sprinkle the yeast on top, then sprinkle with a pinch of the sugar; set aside, undisturbed, until foamy, about 5 minutes.
- Whisk the melted butter, egg yolk and vanilla into the yeast mixture until combined. In a large bowl, whisk the flour, the remaining sugar, the salt and nutmeg. Make a well in the center, then add the yeast mixture and stir with a wooden spoon to make a thick and slightly sticky dough. Turn out onto a floured surface and knead until soft and elastic, about 6 minutes. Shape into a ball.
- Brush a large bowl with butter. Add the dough, turning to coat lightly with the butter. Cover with plastic wrap and let rise at room temperature until the dough is doubled in size, about 1 hour, 15 minutes.
- Turn the dough out of the bowl and knead briefly to release excess air; re-form into a ball and return to the bowl. Lightly butter a large piece of plastic wrap and lay it directly on the surface of the dough. Cover the bowl tightly with plastic wrap and refrigerate at least 4 hours or overnight.
FROM SCRATCH CINNAMON YEAST ROLLS
These rolls are from a Fleischmann's Yeast brochure printed in the 1960's. I used this recipe when I was a kid in 4-H and, after trying dozens of other recipes over the years, these have remained my all time favorite cinnamon rolls. Recipe is from scratch and takes a long time to make, but I think they are worth the effort.

- 1. Make yeast dough as directed in recipe, "The Best Sweet Yeast Roll Dough I Have Ever Found". Link given below in comments. Prep time given includes time for dough to rise. Follow directions down to Step 3 where it says, At this point you can shape and fill as desired.
- 2. Punch dough down. Divide in half. Roll one half of dough on a lightly floured surface to a 12 by 18 inch rectangle. Spread with half the butter. Combine sugar and cinnamon. Sprinkle half of the mixture over surface. Sprinkle nuts over sugar mixture if you are using nuts. Roll up tightly lengthwise, sealing edges. Cut into 12 slices. Place in greased 13 by 9 inch pan. Repeat with remaining dough. Cover. Let rise 30 to 45 minutes until nearly doubled again.
- 3. Bake in preheated 350 degrees oven for 25 to 30 minutes. Cool for 15 minutes. Combine icing ingredients and drizzle over rolls.
BASIC SWEET ROLL DOUGH FOR CINNAMON BUNS

- in a large bowl, combine 2 cups flour, sugar, salt and yeast; blens well to mix. in small sauce pan heat water milk and butter until very warm (120-130 Degrees F.) Add warm liquid and egg to flour mixture. Blend at low speed until moistened. by hand add the other 3 cups of flour until dough pulls away from the sides of the bowl.
- On floured surface, knead in another 1 to 2 cups of flour until dough is smooth and elastic, about 8-10 minutes. place dough in greased bowl and let rise covered in a warm place, until doubled in size.abouy 45 to 60 minutes.
- Punch dough down and divide in half. Shape and bake dough as desired, I make cinnamon rolls with this dough.by rolling it out spreading melted butter on it and sprinkleing it with cinnamon sugar and rolling up to cut in 1inch slices.
- To make dough a day ahead, after first rise time, punch dough down and cover to refrigerate overnight.
BASIC RICH SWEET YEAST DOUGH
An old fashioned sweet dough recipe for coffee cakes, coffee bread, babka, buns, kolacky, rolls, and so on. Prepare 24 hours ahead of time. This rich dough needs the chilling and long rest period to produce a wonderful versatile dough. You may halve the recipe if you wish.

- (Icing may be doubled and used for any cake or bun icing).
- Dissolve yeast in 1/4 cup warm water and set aside until foamy.
- Heat milk, shortening, sugar and salt to melt shortening.
- Cool to warm and add yeast mixture, egg yolks and whole eggs.
- Beat well by hand.
- Gradually beat in by hand 6 cups of flour and the cardamom.
- Knead well on a floured surface only adding additional flour to make a smooth and elastic dough.
- Place dough in an oiled bowl, turn to coat with oil and cover and let rise double in volume.
- Punch down and cover dough and refrigerate overnight in large bowl.
- When ready to use, punch down and knead briefly to warm up dough.
- Use dough as you wish for coffee cakes, sweet breads, buns, etc.
- You may divide dough into 6 buns, or 4 equal pieces to make 4 small loaves or braids.
- If braiding, divide each piece into 3 loose strands and braid and tuck under ends.
- Brush with melted butter.
- Place on baking sheets/pans and let rise double in volume.
- Bake in a 350F oven about 30 minutes or golden and tested done.
- Remove from pans/baking sheet to cool on rack.
- Mix icing ingredients and drizzle over warm cake/bread.
- Yield: approx.
- 6 buns, 4 small braids, or 2 large loaves.

SWEET DINNER ROLLS
This dough makes wonderful dinner rolls but can also be used to make cinnamon rolls. Mixing it in your bread machine but bake the rolls in the oven. They're light, soft and sweet.

- Place water, milk, egg, 1/3 cup butter, sugar, salt, flour and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select Dough/Knead and First Rise Cycle; press Start.
- When cycle finishes, turn dough out onto a lightly floured surface. Divide dough in half. Roll each half into a 12 inch circle, spread 1/4 cup softened butter over entire round. Cut each circle into 8 wedges. Roll wedges starting at wide end; roll gently but tightly. Place point side down on ungreased cookie sheet. BEST EVER SWEET ROLLS
I got this recipe when with a rolling pin set that I got from QVC in '96. They make HUGE rolls. I almost always put fruit in them as well - - cherry pie filling, cooked apples, dried apricots and the like. It makes way too many rolls for my family to enjoy while they are fresh, so once I roll them up and cut them, I only cook 3 of them and the rest go into the freezer. Then, I can take a few out at a time, thaw them & allow them to raise, then pop them into the oven.

- In large bowl, dissolve yeast in warm water 3-5 minutes.
- Add cake mix, 1 cup flour, eggs, oil and salt.
- Beat well until bubbles appear.
- Add 5 1/4 cups flour, slowly.

- 1. In a large bowl or a stand mixer add warm water, yeast and sugar. Let stand for 5 minutes. Add the beaten eggs. Now add the flour and salt. Mix together. This dough will be sticky.
- 2. On a lightly floured board dump out your dough and knead it until it is smooth and elastic. This dough should stay slightly sticky. Don't add more than 1/4 cup of flour while kneading. Put the dough into a greased bowl and coat the dough ball throughly with the oil. Cover with a towel and set in a warm place to rise until double in size about 1 1/2 hours. When dough has doubled punch it own, knead lightly and divide into 16 even pieces. I do this with a knife, I cut the dough ball in half, then in half again and again until I have 16 pieces. Roll these into balls and place on a well greased baking sheet, turning the rolls over in the pan until they are cover with the oil. Put them in a warm place to raise until double in size. This takes about an hour.
- 3. Pre- heat the oven to 375 degrees, bake the rolls for 15-20 minutes or until they are brown. Brush with butter as soon as you take them out of the oven. REFRIGERATED METHOD , make the dough but don't let it rise. Put the dough into a greased bowl and coat all sides, cover tightly with plastic wrap. You can keep the dough in the refrigerator for up to a week. Remove from the fridge when your ready to make the rolls. Let it sit on the counter for 20 minutes before working it into rolls. Let rise until doubled, this may take up to 2 hours or you can speed it up by putting it in the oven with a pan of hot water.
SWEET YEAST ROLLS
This is a simple yeast roll recipe from a dear friend who now lives in Maine. The nice thing about this recipe is that you can lessen the amount of sugar to get a less sweet dinner roll. I like to make them a little bigger and use them for hamburger buns. These make the house smell so good :)

- First add the baking soda and sugar to the hot milk & then add the shortening to the milk mixture & cool.
- Put the yeast into the warm water to dissolve.
- Sift the flour, salt and baking powder. When the milk is cool, add the yeast mixture to the milk, then mix with the flour. Cover with a towel; let the dough rise in a warm spot until doubled.
- Stir the batter well then beat vigorously for about 30 seconds. Form into to rolls about 2 hours before baking.
- Bake at 375 degrees for 15 to 20 minutes.
- You can also fill greased muffin-pan cups about two-thirds full.
- Prep time includes proofing time.
