TRADITIONAL IRISH BOXTY: THE BEST EVER POTATO PANCAKES, WITH A TWIST (IRISH POTATO PANCAKES)
A wonderful and hearty Irish potato pancake recipe.

Steps:
- In a small bowl, place the flour, baking powder and salt; set aside.
- In a large mixing bowl, combine the mashed potatoes with the grated raw potato, then add the flour and mix well.
- Slowly add the buttermilk and stir gently (do not over mix).
- The mixture should be like a very firm, thick batter; almost like a dough, so add more buttermilk if needed (I just used 1 cup/8 oz).
- Heat a griddle or nonstick frying pan over medium-high heat, and add a pat of butter, just before scooping out some of the boxty batter onto the pan.
- Flatten and shape into a nice, round pancake shape and fry until golden brown on the bottom.
- Turn and continue to cook until golden brown on top too, turning the heat down if they are browning too quickly (remember there are raw potatoes which need to cook).
- Continue to add a little butter and fry the boxty until all the batter is finished. Serve hot.

- In a large bowl, combine potatoes, egg, garlic powder, salt and pepper.
- Mix well.
- Roll potato mixture into palm-sized pancakes.
- Add oil to skillet and heat (set to 375 if using an electric skillet).
- Add pancakes to oil and fry, about 4 minutes on each side until crunchy and browned.
- When golden brown on each side, remove from skillet and let sit on paper towel for 5 minutes to cool and drain excess oil.
- Garnish with green onions and serve immediately.

IRISH POTATO PANCAKES
Steps:
- Combine all the ingredients in a large mixing bowl and mix until the batter is thick and creamy.
- Heat a large, nonstick frying pan over medium-high heat and add a teaspoon of oil.
- Cook spoonfuls of the batter for 5-7 minutes per side until golden, crisp and cooked through.
- Place cooked pancakes on a sheetpan/roasting tray and place in a warm oven while you cook the remaining batter.
- Serve warm with sides of your choice.

A staple Irish dish dating to the 1700's, boxty are potato pancakes made from a combination of grated and mashed potatoes that are fried until delightfully crispy on the outside and soft on the inside.

- Boil, drain, and mash the potatoes. Chill until cold or overnight.
- In a small bowl, combine the flour, baking soda and salt. Set aside.Grate the potatoes, place them on a cotton clean kitchen towel and wring out as much liquid as you can (*see Note).Place the cold mashed potatoes, grated potatoes, and flour mixture in a large mixing bowl. Add 1 1/2 cups buttermilk and combine the mixture. If the mixture is too thick/dry, add a little extra.Heat some butter, bacon grease, lard or oil in a heavy pan over medium-high. Scoop the potato mixture into the pan to form individual patties, pressing down on them to flatten them. Fry until the bottom is nicely browned and then flip them over and fry the other sides are likewise nicely browned. Be careful not to cook them too fast or they will become browned before the raw potato is cooked. Adjust the heat as needed.Transfer the boxty to a warm oven while you fry the remaining boxty. Serve immediately while hot.

PERFECT POTATO PANCAKES
I like to serve these potato pancakes with barbecued sausage. They're also nice with baked ham and applesauce or with breakfast sausages. And, with these and other types of meals, they're a good alternative to french fries. My children are married, and I'm a widow. So I don't do as much cooking as I once did. Guests always ask for the recipe when I serve this dish, though. And when my son and his family visited me from Winnipeg not long ago, one of the first things he asked for were Perfect Potato Pancakes!

- Peel and shred potatoes; place in a bowl of cold water. Line a colander with cheesecloth or paper towels. Drain potatoes into cloth and squeeze out as much moisture as possible. In a large bowl, combine the potatoes, eggs, flour, onion, salt and pepper., In an electric skillet, heat 1/4 in. oil over medium heat. Drop batter by 1/4 cupfuls into oil, about 3 in. apart. Press lightly to flatten. Fry until golden brown, about 4 minutes on each side. Drain on paper towels. Repeat with remaining batter. If desired, top with maple syrup or applesauce.

- Peel and cut the potatoes for the mash into quarters. Cover with water in a medium saucepan, and bring to the boil. Reduce heat, cover with the lid and simmer for 15 to 20 minutes until the potatoes are fork tender. Drain and mash.
- Grate the other potatoes. Place a cheesecloth over a bowl and add the grated potatoes. Gather the cheesecloth in a ball. Over the bowl, squeeze the excess fluid and starch from the grated potatoes. Discard the fluid.
- In a large mixing bowl combine the mashed potato and grated potato. Sift the flour, salt and baking soda into the bowl. Combine well with the potatoes.
- Add one cup of buttermilk to the potato/flour mixture and stir well to form a thick batter. Add additional buttermilk, up to 1/2 cup if the mixture is too thick.
