CARNE ASADA RECIPE
Carne Asada marinated and spice rubbed for the most juicy, tender, flavorful Carne Asada EVER! This Carne Asada recipe is perfect for tacos, burritos, nachos, salads, etc. at a fraction of the price and fabulous for crowds!

Steps:
- To a small plastic bag (or sealable container), add Spice Mix and whisk to combine. Set aside.
- Add Marinade Ingredients to a large freezer bag and whisk to combine. Add 3 tablespoons Spice Mix to Marinade and whisk to combine. Add steak and seal bag, removing excess air. Marinate in the refrigerator 4-12 hours.
- When ready to grill, mix remaining Spice Mix with 2 tablespoons olive oil to create a Spice Rub.
- Discard marinade and pat steaks dry with paper towel (just so steak is not wet, not to remove marinade/spices). Rub steak evenly all over with Spice Rub and let rest at room temperature for 30-60 minutes.
- Grease and preheat outdoor grill to medium-high heat. Grill steak for 5-6 minutes per side, or until an internal thermometer reads 130-135 degrees F for medium rare or around 140 degrees for medium. Grill time will vary depending on thickness of your steak and desired level of doneness.. *If you like your steaks rare then use HIGH heat so you can get the charred outside in less time.
- Remove steak and let rest 10 minutes before thinly slicing against the grain on a diagonal.

- Place flank steak on cutting board and remove any silver skin or excess fat.
- In a blender, mix all marinade ingredients.
- Add steak and marinade to ziploc bag or covered bowl and marinate at least 5 hours, preferably 12-24 hours.
- Heat grill to medium high heat.
- Add steaks and vegetables to grill and flip every 3 minutes until desired doneness - for medium rare, it will take about 10-12 minutes.

CARNE ASADA (GRILLED STEAK)
Carne asada, or grilled meat, is great backyard grill food. It is enjoyed throughout Central America and Mexico. Many recipes get very elaborate with the marinade ingredients, but the original recipe relies on a simple combination of onions and citrus juice to highlight the flavor of the beef. The ingredient measurements are pretty vague, but it lets you make it according to your own taste. Personally, I would use the maximum amounts of everything. Enjoy!

- In a large stainless steel or glass bowl, mix the meat with the onions, orange juice, salt, pepper and oil. Cover and marinate at least 1 hour, or better yet overnight.
- Start a good fire in your grill, preferably with mesquite charcoal. Remove the meat from its marinade, pat dry and grill over hot flame until the first side is well browned, from 5-7 minutes.
- Turn the meat over and grill on the other side until cooked to desired doneness. Remove to a clean platter.
- Slice meat into thin strips across the grain and serve as a topping for tostadas or as a filling for tacos or burritos.
- VARIATIONS:.
- Add some lime juice along with the orange juice in the marinade. Or use sour orange juice (naranja agria) if you can find it.

- I wash the meat and dry it carefully, then in a bowl combine all ingredients. Mix carefully with your hands to make sure all of the meat is thoroughly coated.
- Refrigerate the meat all night or at least for 4 hours to get the best flavor. Then grill the meat on a medium low grill.
- I always put the cilantro and onion slices on top of the meat while it is grilling to give it extra flavor and then serve the onions and cilantros with the meat.

- Trim the skirt steak, removing any silver skin and fat.
- Put marinade ingredients into a container and mix thoroughly.
- Add steak to marinade, make sure to fully cover and refrigerate for at least a couple of hours or overnight.
- Set up Weber to cook using high direct heat with lump charcoal.
- Allow the grill to warm up for 10 minutes before cooking the steak.
- Keep flipping steak every 30 seconds to a minute.
- Keep moving steak if flare-ups begin.
- Check the internal temp regularly with an instant read thermometer.
- Remove from heat when internal temp of 130°F is reached.
- Allow the steak to rest for 5 minutes before slicing.
- Cut the steak against the grain, with ¼ to ⅓ thick slices.
