Steps:

  • Cook 2 cups sugar with 1 cup water in a saucepan over medium heat until the sugar dissolves, about 5 minutes. Cool completely. For peach puree: Thaw a 16-ounce bag of frozen peaches, then puree in a blender with 1 teaspoon grated orange zest and 1/2 cup of the sugar syrup. Strain through a fine-mesh strainer and transfer to a bottle or jar. For strawberry or blueberry puree: Thaw a 16-ounce bag of frozen berries, then puree in a blender with 1/3 cup of the sugar syrup. Strain and store in a bottle or jar. Refrigerate purees until ready to use.

Tropical Dragon Fruit Mimosas image

If you're going to do brunch right, you've got to have a cocktail and cousins, this one is a stunner. My dragon fruit simple syrup paired with passion fruit juice gives this tropical cocktail a beautiful ombré effect that's sure to impress.

1/2 cup granulated sugar
1 cup chopped dragon fruit (unpeeled)
1 (750-mL) bottle chilled sparkling wine
1 1/2 cups chilled passion fruit juice
Dragon fruit slices, for garnish

Steps:

  • Combine the granulated sugar, 1/2 cup water and chopped dragon fruit in a small saucepan over medium-high heat. Bring to a simmer and cook until the sugar dissolves, about 2 minutes. Mash the dragon fruit with a fork or potato masher. Set aside to cool completely. (The dragon fruit will tint the simple syrup pink while it cools.) Once cooled, strain the dragon fruit pieces and discard. (See Cook's Note.)
  • To serve, fill 6 champagne flutes with sparkling wine. Pour about 1 tablespoon of the dragon fruit simple syrup into the bottom of each of the champagne flutes. Top each with 1/4 cup of passion fruit juice. Garnish with the dragon fruit slices.

RASPBERRY-PEACH MIMOSAS

Muddle juicy raspberries with raspberry liqueur and take the classic combo of sparkling wine and peach nectar over the top.

3 tablespoons raspberry-flavored liqueur, such as Chambord
8 raspberries, plus more for garnish
2 cups chilled peach nectar
1 bottle chilled Champagne, Prosecco or other sparkling white wine

Steps:

  • Evenly divide the raspberry liqueur among 8 Champagne flutes. Add a raspberry to each and muddle with the end of a wooden spoon. Evenly top with the peach nectar and fill the glasses with Champagne. Garnish each with a raspberry.

Kosher salt and freshly ground pepper
One 16-ounce box lasagna noodles, broken into pieces
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
2 teaspoons fresh thyme leaves
2 1/2 cups milk (2 percent or whole)
2 teaspoons fresh lemon juice
Freshly ground pepper
1 rotisserie chicken (about 2 pounds), shredded
One 15-ounce tub whole milk ricotta cheese
12 ounces shredded mozzarella

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large pot of salted water, boil the broken lasagna noodles according to package directions until al dente. Drain and reserve.
  • In a medium pot, melt the butter. Once the foaming subsides, add the flour and whisk for about a minute until a roux forms. Add the thyme leaves and whisk another few seconds. Gradually add the milk and keep whisking until a creamy sauce forms, 5 to 8 minutes. Whisk in the lemon juice and season with 1 teaspoon each salt and pepper.
  • Pour 1/2 cup of the sauce in the bottom of a 12-inch cast-iron skillet. Arrange one-third of the noodles on top, then layer with about 1 cup of the chicken, dollop with half the ricotta, sprinkle with 1/3 of the mozzarella and drizzle another 1 cup of the sauce over the cheese. Repeat with another layer of noodles, chicken, ricotta, mozzarella and sauce. Add a final layer of noodles, mozzarella and sauce. Bake until the cheese is browned and bubbly, about 30 minutes.

7 cups sliced fresh strawberries (about 2 quarts)
3 cups orange juice
4 cups champagne, chilled
GARNISHES:
Optional: Fresh strawberries and orange slices

Steps:

  • Place half each of the strawberries and orange juice in a blender; cover and process until smooth. Press the mixture through a fine mesh strainer. Repeat with remaining strawberries and orange juice. , Pour a scant 2/3 cup strawberry mixture into each champagne flute or wine glass. Top each with about 1/3 cup champagne. If desired, serve each with a strawberry and an orange slice.
