ROAST STICKY CHICKEN-ROTISSERIE STYLE

Ever wish you could get that restaurant-style rotisserie chicken at home? Well, with minimal preparation and about 5 hours' cooking time (great for the weekends!) you can! I don't bother to baste the bird, though some like to for the first hour. The pan juices always caramelize at the bottom, and the chicken will turn golden brown...fall-off-the-bone good!

4 teaspoons salt
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon white pepper
½ teaspoon cayenne pepper
½ teaspoon black pepper
½ teaspoon garlic powder
2 onions, quartered
2 (4 pound) whole chickens

Steps:

  • In a small bowl, mix together salt, paprika, onion powder, thyme, white pepper, black pepper, cayenne pepper, and garlic powder. Remove and discard giblets from chicken. Rinse chicken cavity, and pat dry with paper towel. Rub each chicken inside and out with spice mixture. Place 1 onion into the cavity of each chicken. Place chickens in a resealable bag or double wrap with plastic wrap. Refrigerate overnight, or at least 4 to 6 hours.
  • Preheat oven to 250 degrees F (120 degrees C).
  • Place chickens in a roasting pan. Bake uncovered for 5 hours, to a minimum internal temperature of 180 degrees F (85 degrees C). Let the chickens stand for 10 minutes before carving.

4 tsp. salt
2 tsp. paprika
1 tsp. cayenne pepper
1 tsp. onion powder
1 tsp. thyme
1 tsp. white pepper
1/2 tsp. garlic powder
1/2 tsp. black pepper
1 large (10 pounds) whole chicken, chicken parts or 20 lb. turkey
1 cup chopped onion or
1 sliced orange

Steps:

  • Combine all the spices.
  • Remove the giblets from chicken.
  • Rinse the chicken.
  • Rub the spice mixture into the chicken, both inside and out, making sure it is evenly distributed and down deep into the skin.
  • Place the seasoned chicken into a 9×13 inch pan, seal with foil and refrigerate overnight.
  • If you're using chicken parts, just rub the seasoning over both sides of the parts.
  • When you're ready to roast the chicken, stuff the cavity with onions or oranges.
  • Roast, uncovered, at 250° for 5 hours. Roast chicken parts 3-5 hours. Roast a turkey 8-10 hours.
  • After the first hour, baste the chicken with pan juices every half hour to 45 minutes.
  • If you don't have enough juices after 3 hours to baste, add 1 cup of water to the pan.

¼ cup butter, softened
4 cloves garlic, chopped
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh rosemary
1 lemon, zested and halved
1 teaspoon salt, divided
1 teaspoon ground black pepper, divided
1 whole chicken
1 tablespoon olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix butter, garlic, thyme, rosemary, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon pepper together in a bowl.
  • Loosen skin on chicken breast; rub butter mixture between skin and breast meat. Press on the skin to distribute evenly. Rub oil, remaining 1/2 teaspoon salt, and 1/2 teaspoon pepper all over; place lemon halves inside cavity. Set in a baking pan.
  • Roast in the preheated oven, basting after 30 minutes, until chicken is no longer pink, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C). Let rest before carving, about 15 minutes.

Beautiful and delicious, this incredibly moist roasted Chicken puts Kenny Roger's Roasters, Boston Market, and other rotisserie style chickens to shame! Please don't let the word "overnight" mislead you; for actual hands-on preparation, this is a Quick-N-Easy way to impress Sunday dinner guests!

4 teaspoons salt
2 teaspoons paprika
1 teaspoon cayenne pepper
1 teaspoon onion powder
1 teaspoon thyme
1 teaspoon white pepper
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1 large roasting chicken
2 large onions, peeled and quartered

Steps:

  • (Day 1) Blend all spices together and set aside.
  • Remove neck and giblets from chicken cavity, rinse well inside and out, and pat dry with paper towels.
  • Rub with spice mixture, both inside and out, then stuff cavity with onions.
  • Wrap in a resealable"food grade" plastic bag (I just use a new, unscented, white kitchen can liner.), tie closed, and refrigerate overnight.
  • (Day 2) Remove from plastic bag and place in a shallow baking pan.
  • Roast uncovered in a 250 F oven 5 hours.
  • (This is not an error, I repeat, 250 F for 5 hours!) If the chicken contains a pop-up thermometer, ignore it.
  • This recipe is SAFE.
  • According to the United States Department of Agriculture Food Safety and Inspection Service, a whole chicken should reach an internal temperature of 180 F.

This chicken has the crispiest skin, the most wonderful aroma, and the juciest meat. And, I love the simplicity of it. My friend from Lafayette, LA heard a chef talk on the radio about how to prepare his favorite roasted chicken and she called me with the directions. We don't know the name of the chef, sorry. But whoever he is, this really is fantastic!

1 (2 -3 lb) whole chickens
1/2-1 tablespoon kosher salt or 1/2-1 tablespoon sea salt

Steps:

  • Wash and completely dry the chicken, inside and out, (this is the key, you do not want the bird to steam).

Looking forward to trying this one and wanted to save it first. I think we'll try it as a crock pot recipe as i've had lots of success roasting chickens that way. The recipe comes from Spark Recipes and looks yummy as well as healthy (go figure). Prep time includes marination overnight in fridge. :) Crockpot would be 8 hours on low rather than the 5 hours in the oven.

Printed in a newspaper about 25 years ago, we have treasured this recipe. In fact, my most effective threat to set things right in the family was threatening to throw out this recipe! It was attributed to Paul P.'s mother. It is borderline hot, fall-apart luscious, crispy skin with a killer gravy. I have made slight changes, such as using a 6# baking hen in place of a 3# chicken, but have adjusted the recipe accordingly. We like hot, so I use half again the quantity of spices but that is at your discretion. So here it is for your enjoyment, never to be lost or God forbid, thrown out!

  • Stuff hen with the warm onions and bake for 4 hours or until done.
  • Remove hen to cutting board, add broth to baking pan, scraping up bits and thickening with flour or corn starch to your preferred thickness.

I decided to make a whole chicken last week and see how creative I could get with the left overs (money was extremely tight between paychecks this month). I fed two people roasted chicken, chicken and rice soup, chicken enchiladas and chicken salad from this recipe and it was all great!

1 whole chicken, about 3 1/2 pounds, defrosted
1/4 small onion
3 fresh garlic cloves
1 teaspoon dried rosemary, dried sage or 1 teaspoon poultry seasoning
1/2 lemon
1 tablespoon olive oil
salt, to taste
black pepper, to taste

Steps:

  • Place an oven rack at the second lowest position and preheat the oven to 450.
  • Spray a chicken grill rack and roasting pan (bottom and top) with cooking spray. Set aside.
  • Remove giblets and discard. Rinse the chicken inside and out with cold tap water, removing and discarding any excess fat.
  • Pat the outside of the chicken dry with a paper towel.
  • Place the onion quarter in the cavity of the chicken.
  • Peel the garlic cloves and place them inside the chicken cavity.
  • Sprinkle the dried rosemary inside the chicken.
  • Squeeze the juice from the lemon half over the outside of the chicken and then place the lemon half inside the cavity (cut it if necessary to make it fit).
  • Place the chicken on the prepared roasting rack and place the rack inside the roasting pan.
  • Rub the outside of the chicken with oil and sprinkle it lightly with salt and black pepper.
  • Place the pan in the oven and roast until an instant-read thermometer registers 180 when inserted in a thigh ( don't touch the bone), 50 - 60 minutes.
  • Remove the chicken from the oven and let stand 10 minutes before cutting it into serving pieces.
