Meet your new favorite party food! Perfectly toasted, soft rolls are filled with tender ground beef, melted cheddar cheese, a homemade special sauce and all your favorite toppings to make this cheeseburger sub recipe. Whether you serve these burger-inspired sub sandwiches at a watch party, tailgate or just a casual gathering, everyone is sure to love them.

¼ cup mayonnaise
1 tablespoon sweet relish
1 garlic clove (minced or grated)
½ teaspoon apple cider vinegar
¼ teaspoon paprika
⅛ teaspoon onion powder
Few dashes of hot sauce
Few dashes of Worcestershire sauce
Salt to taste
1 pound ground beef
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon pepper
½ teaspoon paprika
2 garlic cloves (minced or grated)
4 6-inch sub rolls
1 cup freshly grated cheddar cheese
1 tablespoon melted butter
Additional desired toppings (optional)

Steps:

  • To make the special sauce, add the mayonnaise to a small bowl and stir in the remaining ingredients. Store in an airtight container in the refrigerator. You can do this up to a week in advance.
  • To make the cheeseburger subs, in a large skillet over medium heat, add the oil. Once the oil warms, add the ground beef and sprinkle with salt, pepper and paprika. Cook the beef, using a wooden spoon to break up the meat during the cooking process. Add the garlic and cook for 30 seconds, constantly stirring. Turn off the heat and drain the beef.
  • Divide the beef among four sub rolls. Top each with 1/4 cup shredded cheddar. Place in the broiler until the cheese melts. This should only take about a minute, so keep a close eye to make sure the bread doesn't burn. Remove from the broiler and dress with special sauce and desired toppings. Lightly brush the sub rolls with melted butter. Enjoy!

2 1/2 lbs ground beef
1 small onion, (diced)
2 tsp garlic powder
2 tsp kosher salt
1/4 tsp black pepper
2 Tbsp worcestershire sauce
2 slices provolone cheese
2 slices american cheese
6 oz shredded cheddar cheese
6 long submarine rolls ((6 inches each))
1/2 cup mayonaise
2 tsp red wine vinegar
1/2 tsp Italian seasoning, dried
pinch of sugar
pinch of garlic powder
pinch of kosher salt and pepper
2 Tbsp extra virgin olive oil
sliced tomatoes
shredded lettuce
sliced onion
grated parmesan cheese

Steps:

  • Place the ground beef in a large nonstick skillet set over med/high height. Break up the beef and let it begin to brown.
  • Add the onion and stir well. Let the beef brown, then drain off the fat. (I use a colander).
  • While the beef cooks, whisk together all the ingredients for the sub sauce.
  • Season the beef well, add the worcestershire sauce, and then add in the cheese. Stir until it begins to melt. Turn off the heat.
  • Split each roll lengthwise on top, but don't cut fully through the bottom. Scoop out some of the bread from the middle and spread each sub roll with some mayonnaise.
  • Divide the beef between the rolls. Drizzle with sub sauce and sprinkle with parmesan. Top with lettuce, tomatoes and onion and serve.

1 tablespoon vegetable oil
1/2 onion, finely chopped
1 1/4 pounds ground beef, broken into pieces
Kosher salt and freshly ground pepper

8 slices American cheese (about 4 ounces)
1/3 cup mayonnaise
4 soft white hero rolls, split and toasted
Shredded iceberg lettuce, sliced tomatoes, ketchup and hot sauce, for topping

Steps:

  • Heat a large cast-iron skillet over medium-high heat. Add the vegetable oil, then add the onion, ground beef, 1/2 teaspoon salt and a few grinds of pepper. Cook, undisturbed, until the beef starts to develop a crust, 1 to 2 minutes. Flip with a spatula, breaking up the meat. Continue cooking until browned, about 30 more seconds. Stir in the pickled peppers, then arrange the cheese over the meat mixture; remove from the heat and let melt.
  • Spread the mayonnaise on both sides of the rolls. Divide the beef among the roll bottoms using a spatula. Top with lettuce, tomatoes, ketchup, hot sauce and the roll tops. Serve with potato chips.
