1 cup seasoned stuffing cubes
1/2 cup milk
1 large egg, beaten
1 celery rib, finely chopped
1 small onion, grated
1 small carrot, grated
1/4 cup dried cranberries
1/2 teaspoon salt
1/4 teaspoon pepper
3 to 4-1/2 teaspoons minced fresh sage
3 teaspoons minced fresh rosemary
1-1/2 pounds lean ground turkey
1/2 cup whole-berry cranberry sauce
1/2 cup ketchup
1/8 teaspoon hot pepper sauce

Steps:

  • Preheat oven to 375°. In a large bowl, combine stuffing cubes and milk. Let stand 10 minutes; break up stuffing cubes with a fork. Stir in egg, celery, onion, carrot, cranberries, salt and pepper. Combine sage and rosemary; add half to the mixture. Crumble turkey over mixture and mix well. Pat into an ungreased 9x5-in. loaf pan., Bake, uncovered, 25 minutes; drain if necessary. Combine cranberry sauce, ketchup, pepper sauce and remaining herbs; spread over meat loaf. Bake 20-25 minutes or until no pink remains and a thermometer reads 165°. , Freeze option: Shape meat loaf in plastic wrap-lined loaf pan; cover and freeze until firm. Remove from pan and wrap securely in foil; return to freezer. To use, unwrap meat loaf and bake in pan as directed, increasing time as necessary for a thermometer inserted in center to read 165°.

1 (6 ounce) bag dried stuffing mix
2 large eggs, cracked and whisked
1/2 cup milk
1 tablespoon Worcestershire sauce
2 teaspoons minced fresh sage
2 teaspoon minced fresh thyme
2 teaspoons minced fresh rosemary
1 (14 ounce) can whole berry cranberry sauce

Steps:

  • Preheat your oven to 375 degrees F and line a rimmed baking sheet with foil, parchment paper, or a Silpat liner.
  • If you use foil spray the foil lightly with nonstick spray, set aside.
  • In a large bowl add ground turkey, dried stuffing mix, eggs, milk, Worcestershire sauce, sage, thyme, and rosemary.
  • Using your hands, or a spatula, gently mix together until well combined.
  • Add the mixed meat to your prepared baking sheet and shape into a 12x8 inch loaf.
  • Add to the preheated oven and bake for 30 minutes.
  • Remove from the oven and top the meatloaf with about 1/2 the can of cranberry sauce.
  • Place back in the oven and bake for another 15 minutes.
  • Remove from the oven, test center to make sure the meatloaf has reached 165 degrees F, and serve sliced with extra cranberry sauce on the side.

1 teaspoon dried parsley flakes
2 tablespoons honey
1/2 cup finely chopped pecans
store bought turkey gravy*

Steps:

  • Preheat oven to 375 degrees. Line a small baking sheet with aluminum foil and spray with nonstick cooking spray. Set aside.
  • In a nonstick skillet, melt butter over medium heat. Saute onion and celery until tender, 5 minutes.
  • While veggies are cooking, combine remaining ingredients into a large bowl. Add in soft veggies and stir to incorporate everything together. Form into a meatloaf shape on prepared baking sheet and bake 30-40 minutes or until thoroughly cooked.

1/4 cup olive oil
1 large onion, chopped
2 teaspoons fresh thyme leaves
1 teaspoon minced fresh sage
Kosher salt and freshly ground black pepper
2 cloves garlic, grated
1 tablespoon tomato paste
3 tablespoons Worcestershire sauce
3/4 cup panko breadcrumbs
1/2 cup chicken broth
3 pounds ground turkey
2 large eggs
1/2 cup ketchup

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil.
  • Heat the olive oil in a large skillet over medium heat. Add the onions, thyme, sage, 1 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring often, until the onions are softened, about 10 minutes. Add the garlic and cook 1 minute more. Add the tomato paste and cook for 1 minute, stirring to incorporate. Stir in the Worcestershire. Remove from the heat and allow to cool.
  • Add the panko to a large mixing bowl and pour over the chicken broth so the breadcrumbs soak up the liquid. Add the turkey, eggs, 2 teaspoons salt, 1/2 teaspoon pepper and the cooled onion mixture and mix well with your hands until well combined.   • Put the meatloaf in the oven and reduce the oven temperature to 350 degrees F. Bake until a thermometer inserted in the center of the loaf reads 165 degrees F, 45 minutes to 1 hour. Let cool slightly before slicing and serving.

1 ½ cups unseasoned stuffing mix
¾ cup chicken stock
1 cup yellow onion, finely diced

Steps:

  • Preheat the oven to 375°F (190°C). Grease a 9 x 5-inch (22 x 12 cm) loaf pan with butter and line the pan with a piece of parchment paper, leaving overhang on the 2 long sides.
  • Melt the butter in a large pan over medium heat. Add the onion, celery, carrots, ½ teaspoon salt, ¼ teaspoon pepper, and ½ teaspoon ground sage. Cook for 4-5 minutes, or until the vegetables are tender. Transfer to a large bowl and let cool for 15 minutes.

  • While the meatloaf loaf bakes, make the glaze: In a medium bowl, mix together the cranberry sauce, ketchup, and mustard.
  • Pour the glaze over the meatloaf, then return to the oven and bake for another 20 minutes, or until the internal temperature 165°F (75°C).
  • Let cool in the pan for 10 minutes, then use the parchment to carefully lift out the meatloaf and transfer to a cutting board. Cut into 1-inch-thick slices and serve immediately.
