- Put shredded carrots and chopped parsley in a large bowl
- Whisk lemon juice and spices. Keep whisking while slowly adding the olive oil to emulsify the ingredients.
- Toss dressing with shredded carrots and parsley. Chill for an hour in the fridge and let flavors merge. Enjoy!
- Note: This salad can be stored in an airtight container in the fridge for several days.

Steps:
- Place shredded carrots and sliced green onions into a large bowl. Set aside.

- When ready to serve, toss with remaining dressing.

- In a large salad bow, add all of your salad ingredients except for the grapefruit.

- Wash and sort cranberries; place in large mixing bowl.
- Add carrots, apple, sugar, salt and cider and stir to blend well.
- Spray a 2-quart casserole with nonstick spray coating.
