Easy Breakfast Frittata Recipe by Tasty image

Easy breakfast frittatas for all! While you refrigerate your egg mixture, fry up bacon, tomatoes, spinach, and onion - or really, whatever vegetables you have in the pantry or are in season. Mix everything together in an oven-safe pan, sprinkle with cheese, and bake for 15 minutes. Top this super simple meal with some chopped green onions and pair with a salad, some fruit, or (better yet!) a mimosa.

Number Of Ingredients 10

6 eggs
½ cup heavy cream
1 teaspoon salt
½ teaspoon black pepper
4 strips bacon, diced
1 cup onion, diced
½ cup tomato, diced
4 cups spinach
½ cup shredded cheddar cheese
green onion, for topping

Steps:

  • Preheat oven to 350°F (180°C).
  • In a large bowl, whisk the eggs, heavy cream, salt, and pepper. Refrigerate until read to use.
  • In an oven-safe pan, cook bacon. Once fully cooked, take out the bacon and set aside.
  • Add onions to the same pan and cook until translucent.
  • Add tomatoes and spinach ,and cook for a couple minutes until spinach is slightly wilted.
  • Add the bacon back into the pan. Blend together.
  • Add the eggs and cheese into the pan.
  • Give it a good stir, then bake for 15 minutes, or until the eggs do not jiggle in the middle.
  • Top off with green onions, if desired.
  • Enjoy!

Start the holiday off right with this Thanksgiving breakfast frittata filled with mushrooms, butternut squash, shallots and herbs.

Number Of Ingredients 10

1/2 medium butternut squash, chopped
1 tablespoon extra virgin olive oil
1 large shallot, thinly sliced
2 cups sliced mushrooms
salt and pepper
4 eggs
6 tablespoons egg whites
1/3 cup milk (any kind)
4 sprigs fresh thyme leaves
1 sprig fresh rosemary leaves, chopped

Steps:

  • Preheat oven to broil.
  • Place butternut squash on a greased baking sheet and broil for about 10 minutes until just softened. You don't want to roast/brown, just soften.
  • Meanwhile, place olive oil in a 10 inch oven-safe skillet over medium-high heat.
  • Add shallots and saute for 2 minutes until softened.
  • Add the mushrooms to the skillet, toss with the shallots and cook for 5-7 minutes until softened and water has cooked off.
  • Add the butternut squash from the baking sheet to the skillet.
  • Season with salt and pepper to taste.
  • Add the thyme and rosemary and toss to combine.
  • Whisk the eggs, egg whites and Silk almondmilk together in a medium bowl.
  • Pour the egg mixture into the skillet and let cook for about 5 minutes on the stove top until the edges are set.
  • Transfer the skillet to the oven and broil for 5 minutes until middle is set and edges are starting to turn golden.
  • Remove from oven, let cool a few minutes before slicing.
  • Serve with cranberry sauce if desired.

This looks so nice when it's done, with the cheese bubbling on top. And it tastes as good as it looks! You could also use left over cooked potatoes, sliced, instead of cooking them especially for this dish.

2 potatoes, cubed
6 strips bacon, cut into bite-sized pieces
1 onion, chopped
4 mushrooms, sliced
4 eggs, beaten
1/2 cup cheddar cheese, grated
1 pinch dill or 1 pinch other herbs
salt and pepper
1 teaspoon olive oil

Steps:

  • Boil potatoes in a small saucepan until tender.
  • Meanwhile, heat oil in a pan and fry the onions, mushrooms and bacon until onions are clear and bacon is cooked.
  • Drain potatoes and put into frying pan, cooking for another 2 minutes.
  • Make sure ingredients are spread evenly over the pan and then pour eggs evenly over the base.
  • Season with herbs, salt and pepper, to taste.
  • Let cook for 2 minutes or until eggs start to set.
  • Sprinkle cheese over the top and bake under a grill until eggs are cooked and cheese is bubbling and brown (3-5 minutes).
  • Serve with a tall glass of orange juice and some toast.

This is one of my favorite recipes for breakfast. It's easy and filling and tastes so good. I love the pepper jack cheese instead of cheddar for a change of pace, but if you don't like pepper jack, you can always use cheddar.

1/2 cup green pepper, diced fine
1/2 cup onion, diced fine
8 eggs
2 cups shredded monterey jack pepper cheese
1 lb bulk pork sausage
1/4 teaspoon black pepper

Steps:

  • Preheat the oven to 350°F.
  • Scramble the sausage, onions and peppers. Cook until the sausage is no longer pink and the vegetables are soft.
  • Drain off all the grease and place in a 9x9 oven-safe casserole. Beat the eggs and pepper and stir in the cheese.
  • Spread the meat mixture evenly and pour the egg mixture over the meat.
  • Bake 25-30 minutes or until the eggs are mostly firm, but still soft in the center.

  • Heat oven to 350°F.
  • Cook turkey, stuffing and beans in a small ovenproof skillet on medium-high heat 2 to 4 min. or until heated through, stirring frequently.
  • Stir in eggs; top with cheese. Cover.
  • Bake 20 to 25 min. or until knife inserted in center comes out clean.
