YUM NUA - THAI BEEF SALAD

This is my mom's specialty. I hated it as a little kid, but now I adore it and make it often. It was hard to nail my mom's recipe down to measurements, but we figured that this was the closest we could get without saying "eyeball" it. The flavors are the classic Thai mix of salty, sour, sweet and spicy.

8 -10 ounces New York strip steaks (about 1 1/2 in thick)
salt and pepper
1/2 tablespoon vegetable oil
1/4 cup shallot, sliced thin
3 tablespoons chopped cilantro stems, and leaves
1/4 cup mint leaf (loosely packed to measure and then, chopped)
1 medium cucumber, seeded and sliced
4 -6 romaine lettuce leaves, for serving
1 clove garlic, minced
2 Thai chiles, minced (more or less depending on the heat desired)
2 tablespoons very thinly sliced lemongrass, crush slices with the back of knife after slicing
1 1/2 teaspoons palm sugar or 1 1/2 teaspoons light brown sugar, can be substituted
2 tablespoons fish sauce (nam pla)
2 1/2 tablespoons fresh lime juice

Steps:

  • Start making the dressing by crushing the minced garlic and bird chili peppers together against the cutting board with the flat side of your knife to make a paste.
  • Put this paste in a small bowl and add lemongrass, fish sauce, lime juice, and sugar.
  • Whisk together to combine and set aside.
  • To cook the steak, heat oil in a skillet over medium high heat.
  • Sear the steak on one side and continue to cook 5-6 minutes.
  • Turn over steak and cook for another 5 minutes or until medium rare or medium.
  • Remove from heat and let stand on cutting board for 5 minutes.
  • After meat has rested, slice steak very thinly.
  • In a large bowl, add beef (and any juices left on cutting board), mint, shallots, cilantro and cucumber.
  • Pour the dressing on top and toss gently.
  • Line a serving platter with romaine leaves and pile beef salad on top.
  • Serve with rice if desired.

1 tablespoon soy sauce
6 tablespoons fresh lime juice
1 teaspoon sugar (preferably palm sugar)
1 -3 chili pepper, Thai bird, seeds and ribs removed
1/2 cup shallot, thinly sliced, preferably large red variety
salt
1/4 cup vegetable oil
1 lb tofu, extra-firm, cut into 3/8-inch thick slabs
salt
black pepper
1 cup English cucumber, medium diced seedless
4 green onions, white and light green parts, cut into small bite sized lengths
1/2 cup cilantro leaf (& some for garnish)
2 tablespoons mint, minced fresh

Steps:

  • For the dressing:.
  • Stir together the liquids with the sugar. Lightly crush & add the chilis & shallots to the liquid. Will taste hugely overwhelming - no worries. It is balanced by the tofu.
  • For the salad:.
  • Heat the oil over a medium-high flame in a large skillet. Author suggests cast iron - I use French stainless. Dry the tofu. Brown the tofu in the skillet - about 5 minutes a side. Flip and brown on the other side. Remove to drain on paper towels. Season with salt and pepper.
  • Slice the tofu (when cool enough to handle) thinly, about 1/8" or so.
  • Toss the tofu and all remaining ingredients with the dressing. Alternatively drizzle with dressing or serve the dressing on the side in little bowls to dip a bite at a time (my fav).
  • Garnish with cilantro and serve.

I got this recipe from a coworker. She brings this salad to all the potlucks. Everyone always devours it with raves! Everyone always wants the recipe and she was happy to oblige. Wonderful flavors! She has since moved on and so I am posting it here so I don't lose it. It is written exactly as she provided. I am going to have to look up the red pepper sauce she uses and make it to figure out the amounts. Then I will edit the recipe with more exact directions.

2 -3 large yams, baked until tender then cubed
1 large red bell pepper, diced
1 scallions or 1 green onion, sliced thin
1/2 cup raw pumpkin seeds (to taste)
1 tablespoon sesame seeds (to taste)
1/2 cup raisins (optional)
1/3 cup olive oil
sesame oil, to taste (optional)
1 teaspoon grated gingerroot
1 crushed garlic clove
2 -3 tablespoons lime juice
1/4 cup soy sauce (to taste)
1 (5 ounce) bottle thai red pepper sauce (the bottle with the rooster on the label)

Steps:

  • Mix dressing together.
  • Pour over other ingredients; mix well.
  • Serve chilled or warm.
  • Cooking time is for baking the yams.

1 lb center cut beef tenderloin
1/2 teaspoon fresh ground black pepper
5 tablespoons fresh lime juice, to taste
2 tablespoons asian fish sauce, to taste
1/2 teaspoon sugar, to taste, if desired
2 small Thai red chili peppers (or serrano) or 2 small Thai green chili, minced (or serrano)
1/2 cup thinly slices shallot (about 2 large)
4 scallions, cut into 1/2 inch pieces
1/2 cup packed fresh coriander leaves, washed well and spun dry
2 tablespoons finely chopped fresh mint leaves
1 seedless cucumber

Steps:

  • Prepare grill (or preheat broiler).
  • Halve tenderloin horizontally to form 2 approximately 1-inch-thick pieces.
  • Rub both sides of each piece with black pepper, pressing it into meat.
  • Grill beef on an oiled rack set 5 to 6 inches over glowing coals 5 to 8 minutes on each side for medium-rare.
  • (Alternatively, broil beef on oiled rack of a broiler pan about 3 to 5 inches from heat 6 to 7 minutes on each side for medium-rare.) Transfer beef to a cutting board and cool 30 minutes (I actually prefer it warm).
  • If desired, chill beef, loosely wrapped, at least 2 hours and up to 1 day to facilitate thin slicing.
  • But beef across grain into very thin slices.
  • In a large bowl stir together lime juice, fish sauce, sugar, and chilies until combined will (sugar should be dissolved if using).
  • Add beef, shallots, scallions, coriander, and mint and toss will.
  • Score cucumber lengthwise with tines of a fork and cut crosswise into thin slices.
  • Arrange cucumber around edge of a platter and mound beef salad in center.
  • Garnish beef with coriander sprig and serve with rice.

GREEN MANGO AND PAPAYA SALAD IN CLASSIC THAI DRESSING (YAM MAMUANG)

1 green papaya, peeled and julienned
2 large green mangoes, peeled and julienned
1 pound haricots verts or long string beans, cut into 1-inch sections
6 tablespoons lemon juice
1 tablespoon vegetable oil
3 cloves garlic, finely chopped
2 onions, thinly sliced
3 tablespoons fish sauce
1 tablespoon sugar
1 tablespoon ground dried shrimp*
1 teaspoon finely sliced fresh Thai Red Chili*
1 bunch cilantro, stems removed
1 teaspoon dried chili flakes (optional)
8 Bibb lettuce leaves (to serve)
12 cherry tomatoes, cut in half (to serve)
2 tablespoons roasted ground peanuts

Steps:

  • In a large bowl, combine green mango, papaya, string beans and lemon juice. Set aside for 5 minutes. In a wok or frying pan, heat oil, add garlic and fry until golden. Add onions and fry until clear. Remove with a slotted spoon and set aside on absorbent kitchen paper.
  • To the mango mixture add fish sauce, sugar, dried shrimp, chili, cilantro and dried chili flakes, if desired. Toss gently and chill.
  • Serve on a bed of 2 Bibb lettuce leaves, with garnishes of tomato halves, peanuts, fried onion and garlic

1 1/2 lbs sweet potatoes, scrubbed, quartered lengthwise & cut crosswise into 3/4-inch pieces (or yams)
3 tablespoons cider vinegar
2 tablespoons sweet pickle relish
2 teaspoons Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup vegetable oil
2 green onions, thinly sliced
1/4 cup red bell pepper, finely chopped

Steps:

  • In a large pot, steam prepared yams 10 to 15 minutes or until tender, then remove from steamer.
  • When cool enough to handle, peel yams (if desired; I don't), then place in a large salad bowl.
  • While yams cool, combine vinegar, pickle relish, mustard, salt & pepper in a small jar with a tight-fitting lid, & shake well.
  • Add vegetable oil & shake again, before pouring over yams & tossing them to coat.
  • Add green onions & red pepper & either serve at room temperature or chilled.
