Little turkey lettuce wraps pack big Thai flavor with ginger, lime, cilantro and fish sauce.

2 tablespoons vegetable oil
2 garlic cloves, minced
2-inch piece fresh ginger, peeled and minced
1 bunch scallions, sliced (white and green parts kept separate)
1 teaspoon seafood seasoning, such as Old Bay
1 1/2 pounds ground turkey
1/4 cup Asian fish sauce
1 1/2 cups diced fresh pineapple
1/2 cup loosely packed fresh cilantro leaves, roughly chopped
Juice of 2 limes, plus wedges for serving
Hot cooked white rice, for serving
1 head of Boston lettuce, leaves separated, for serving

Steps:

  • MAKE THE FILLING: Heat the oil in a large skillet over medium-high heat. Add the garlic, ginger, scallion whites, and seafood seasoning. Cook until the vegetables start to brown, about 5 minutes. Add the turkey and cook, breaking up with a wooden spoon, until golden, about 5 minutes. Stir in the fish sauce and scallion greens and cook until the liquid is almost completely absorbed, about 5 minutes. Stir in the pineapple, cilantro, and lime juice. Remove from the heat.
  • SERVE: Spoon the filling over the hot cooked rice and serve with lime wedges and lettuce leaves to make lettuce wraps.

2 teaspoons vegetable oil
8 ounces white mushrooms, chopped
3 scallions, chopped
2 cloves garlic, minced
One 6-ounce can water chestnuts, chopped
1/4 cup soy sauce
1 tablespoon brown sugar
1 tablespoon rice wine vinegar
3 tablespoons soy sauce
2 tablespoons rice wine vinegar
1 tablespoon honey
1 tablespoon Dijon mustard or spicy mustard
1 tablespoon Sriracha sauce
1/2 teaspoon sesame oil
8 to 12 large iceberg lettuce leaves, cleaned and dry
Shredded carrots, for serving
Bean sprouts, for serving
Chopped fresh cilantro, for serving

Steps:

  • For the filling: Brown the turkey in the oil in a large saute pan over medium-high heat until no longer pink. Add the mushrooms, scallions, garlic and water chestnuts, and cook until the mushrooms soften. In a small bowl, mix the soy sauce, brown sugar and vinegar, pour over the turkey mixture and cook 1 minute. Remove from the heat.
  • For the drizzling sauce: In a small bowl, whisk together the soy sauce, vinegar, honey, mustard, Sriracha, sesame oil and 1/4 cup water.
  • Serve the turkey mixture with the lettuce leaves, drizzling sauce and vegetables for lettuce wrap assembly.

3 tablespoons chopped fresh cilantro
1 tablespoon chopped fresh mint
2 tablespoons fresh lime juice
2 tablespoons fish sauce
3 tablespoons creamy peanut butter
2 teaspoons garlic and red chile paste
1 teaspoon sugar
1/2 teaspoon crushed red pepper flakes
1 cup shredded carrots
1/3 cup chopped salted peanuts
12 medium Bibb lettuce leaves, rinsed, patted dry with paper towel

Steps:

  • In 10-inch nonstick skillet, cook turkey over medium-high heat, stirring frequently, until thoroughly cooked; drain and return to skillet. Stir in green onions, cilantro, mint, lime juice, fish sauce, peanut butter, chile paste, sugar and red pepper flakes. Cook 3 to 4 minutes longer or until hot.
  • To serve, spoon 2 heaping tablespoons turkey mixture, 2 tablespoons carrots and 1 teaspoon peanuts onto each lettuce leaf; wrap around filling. Serve warm.

1 package (16 ounces) frozen stir-fry vegetable blend, thawed
1/3 cup reduced-sodium teriyaki sauce
1/4 cup hoisin sauce
3 tablespoons reduced-fat creamy peanut butter
2 tablespoons minced fresh gingerroot
1 tablespoon rice vinegar
1 tablespoon sesame oil
3 garlic cloves, minced
4 green onions, chopped
10 Boston lettuce leaves
Additional hoisin sauce, optional

Steps:

  • In a large nonstick skillet coated with cooking spray, cook turkey over medium heat until no longer pink., Coarsely chop stir-fry vegetables; add to the pan. Stir in the teriyaki sauce, hoisin sauce, peanut butter, ginger, vinegar and oil. Stir-fry over medium-high heat for 5 minutes. 1 tablespoon sesame oil
1/4 cup hoisin sauce
2 tablespoons balsamic vinegar
2 tablespoons reduced-sodium soy sauce
1 tablespoon minced fresh gingerroot
2 garlic cloves, minced
8 Bibb or Boston lettuce leaves

Steps:

  • In a large skillet, cook and crumble turkey with vegetables in sesame oil over medium-high heat until turkey is no longer pink, 8-10 minutes, breaking up turkey into crumbles. Stir in hoisin sauce, vinegar, soy sauce, ginger and garlic; cook and stir over medium heat until sauce is slightly thickened, about 5 minutes. Serve in lettuce leaves.

  • Heat the oil in a large, non-stick frying pan over medium-high heat. Add the onion, carrot, and bell pepper and cook for about 12 minutes, or until they are quite dark and become sweet smelling. Add the ginger and garlic and cook 1 minute more.
  • While the veggies are caramelizing, mix the Thai-inspired sauce ingredients in a small bowl. In another small bowl, mix the creamy ginger tahini sauce ingredients with 3 tablespoons of water. Add more water if you want a thinner sauce.
  • When the veggies are cooked, push them to the side of the pan and add the turkey. Let it cook until it is no longer pink, about 5 minutes. Break up any larger chunks with your wooden spoon then mix the turkey into the veggies. Add the Thai-inspired sauce and let it come to a boil. Stir in the green onions.
  • Serve the Thai turkey on bibb lettuce leaves with the tahini sauce drizzled over the top and any or all of the optional toppings.
