THAI CHICKEN SALAD
Recipe VIDEO above. A chicken salad with a fantastic Thai chilli lime dressing with a great tangy-sweet-salty-spicy balance that South East Asian food is known for. Using Chilli Garlic Sauce is a great way to thicken dressing as well as adding more layers of flavour. Serves 2 as a main, 4 as a side.

Steps:
- Take the chicken out of the fridge 30 minutes before cooking.
- Boil water in a saucepan. Add chicken, put the lid on, let the water come back up to a simmer, then remove from stove. Set aside for 20 minutes (even up to 45 min is fine). (Note 4)
- Remove chicken from water and shred, then cool.
- Place ingredients in a jar. Shake well. Taste and adjust as required. It should be a balance of tangy / sweet / salty / hint of spice. (Note 5)
- Place Salad ingredients in a large bowl. Drizzle over most of the Dressing, toss. Serve immediately, drizzled with remaining Dressing.

CRUNCHY THAI SALAD
Steps:
- Cook the noodles as normal and prepare all the vegetables while the noodles are cooking. When they are done rinse under cold water and add to the salad.;
- Mix all of the ingredients together in a jam jar, shake and pour over the salad. Garnish with cashew nuts or sesame seeds.;

- Arrange 1/2 of the lettuce on a platter.
- Break up the remaining lettuce into bite size pieces and place on top of the lettuce on the platter.
- Sprinkle cilantro and mint over lettuce.
- Arrange tuna or chicken, cucumber, oranges, grapes on top; cover and refrigerate while preparing the dressing.
- Peel 1/2 a lime with a vegetable peeler.
- Place peel in a blender or small food processor; add garlic. chilies, lime juice, fish or soy sauce and sugar; process until well blended and garlic and chilies are finely chopped.
- Pour dressing over salad.
- Top with cashews or peanuts.

- Season chicken breasts and grill or bake. Cut chicken into thin julienne strips and set aside. In a hot saute pan over medium high heat saute the onion, garlic, and mushrooms with the oil, tossing, 2 minutes. Set aside. Wash the lettuce leaves, pat dry and place in the center of 6 salad plates. Toss the remaining ingredients with the dressing in a bowl. Add the chicken and sauteed veggies and mix well. Evenly divide the salad and center on the lettuce leaf. Garnish with a cilantro leaf. Serve chilled.
- Mix all of the ingredients together and pour over desired salad, pasta or fruit. It's also great over freshly sliced cucumbers, zucchini, peaches, pears, or apples. Toss and chew!
- Place everything in a mill or coffee grinder and blend 15 to 20 seconds. Remove to a sealable container.

Steps:
- Heat an oiled pan, add fish and cook 3-4 minutes a side, or until cooked as desired. Tuna steaks are better pink in the middle and not overcooked, as they tend to become dry and quite tough.
- Combine all the other ingredients in a jar and shake until mixed.
- Note. you can adjust sweet chili and lime juice amounts e.g. more or less of each depending on your taste.
- To serve place fish on plate drizzle with sauce and serve with salad greens on the side.

I found this recipe in a church cookbook and it was submitted by C. Laird. It is a refreshing change of pace for chicken salad. The preparation time does not include cooking the chicken, as so often I use leftover cooked chicken for this meal.

- Cut cooked chicken into good sized chunks.
- Drain pineapple, reserving juice.
- Chop apple into chunks and dip in pineapple juice to keep them from browning.

- Place all ingredients for dressing into a small saucepan.
- Warm on low heat until creamy and well blended, whisking constantly.
- Add a 1 or 2 tablespoons of water to dressing until desired consistency.
- Mix about 2 cups of cold water and 1 Tbsp of lemon juice.
- Core apple and pear, cut into thin slices and drop into cold water.
- Wash and tear greens into bite size pieces.
- Combine chicken, cucumber and coriander.
- When ready to serve, drain and lightly dry the fruit.
- On chilled salad plates divide the greens into 2 portions, place chicken mixture in mound on top.
- Arrange the fruit slices on top and serve with the dressing.
