SOUTHEAST ASIAN SHRIMP AND GRAPEFRUIT SALAD



Southeast Asian Shrimp And Grapefruit Salad image

1 to 1 1/2 pounds shrimp
Salt
3 tablespoons nam pla (fish sauce) or soy sauce
1 tablespoon sugar
Juice of 2 limes
6 cups lettuce or mesclun, washed and dried
2 grapefruit, peeled and sectioned, tough white pith removed, each section cut in half
1/4 cup chopped mint
1/4 cup chopped cilantro
Minced chilies or dried red pepper flakes, optional
1/2 cup chopped dry-roasted peanuts, optional

Steps:

  • Put shrimp in a saucepan with salted water to cover; bring to a boil, then turn off heat and let sit for 5 minutes, or until shrimp are opaque in center. (Alternatively, grill or saute, sprinkling shrimp with salt as they cook.) Cool in refrigerator or under cold running water, then peel (and devein if you like). Cut shrimp in half if they're large.
  • Combine nam pla or soy sauce with 2 tablespoons water, sugar and lime juice, and blend or whisk until smooth.
  • Arrange the lettuce on 4 plates; top each portion with a few grapefruit pieces, some shrimp, and the mint and cilantro; drizzle with the dressing, then sprinkle with a little of the minced chilies and chopped peanuts if you like, or pass them at the table.

800 gr prawn tails (cooked (20 pcs))
1 pc grapefruit (segmented)
2 tbsp coconut (toasted slices)
2 tbsp peanuts (toasted & crushed )
1 pc lemongrass (thinly sliced)
1 tbsp dried shrimps ((optional))
2 pcs shallots (sliced (1 raw + 1 fried))
1 tbsp corn starch
200 ml frying oil
1-2 pcs kaffir leaves (sliced)
6 pcs cherry tomatoes (halved)
2 tbsp fresh coriander (coarsely chopped)
2 tbsp fresh mint (coarsely chopped)
2 pcs chillies (sliced)
2 tbsp palm sugar (or coconut sugar)
2 tbsp fresh lime juice
2 tbsp fish sauce

Steps:

  • Combine the ingredients for the dressing and adjust to your taste. (More sour, less spicy or sweeter)
  • Place the sliced shallots into ice water for 20 minutes. Pat dry and coat with cornstarch before deep frying in oil at 150°C.
  • Combine all ingredients and toss with the dressing, except the toasted coconut.
  • Arrange the mixed salad with king prawns on a plate and top with the toasted coconut slices and lime wedges.

1 pound uncooked medium shrimp, peeled and deveined
2 large grapefruit, peeled and sectioned
1 small red onion, thinly sliced
1 large avocado, peeled and cut into 1/2-inch dice
2 tablespoons lime juice
2 tablespoons Thai fish sauce
1 fresh red chile pepper, finely chopped
⅛ teaspoon brown sugar
1 tablespoon chopped fresh cilantro

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the shrimp, and return to a boil. Cook the shrimp until they are bright pink on the outside and the meat is no longer transparent in the center, 3 to 5 minutes. Drain and set aside to cool.
  • Combine the grapefruit, onion, avocado, lime juice, fish sauce, chile pepper, and brown sugar in a large bowl. Top grapefruit salad with cooked shrimp, and sprinkle with chopped cilantro.

1 medium rustic loaf , torn into big chunks
1 tbsp olive oil
2 large pink grapefruit s
2 avocados
4 Little Gem lettuces
200g bag cooked large prawn , defrosted if frozen
3 tbsp Thai sweet chilli sauce

Steps:

  • Heat oven to 220C/fan 200C/gas 7 and put the bread chunks onto a baking sheet. Drizzle with 2 tsp of the oil, rub in with your hands, season, then bake for 10 mins until golden and crisp.
  • While the croûtons bake, cut the peel and pith away from the grapefruit, then cut out the segments, dropping them into the bowl as you go. Squeeze the juice from the heart of one of the grapefruit into a separate smaller bowl.
  • Peel, stone and slice the avocados and separate the leaves of the lettuce. Add to the segments along with the prawns. Whisk the sweet chilli sauce and remaining 1 tsp oil into the grapefruit juice, then season to taste. Once the croûtons are ready, cool for a few mins, then toss with the rest of the salad. Put onto plates and drizzle with the sweet chilli dressing to serve.

20 raw king prawns
1 small shallot , finely chopped
4 garlic cloves , finely chopped
1 fresh red chilli , halved, seeded and finely chopped
2.5cm piece of fresh root ginger , peeled and finely chopped
1 stem of lemongrass , tough outer leaves removed, finely chopped
a good handful of fresh mint leaves, finely chopped
a good handful of fresh coriander leaves, finely chopped
100ml/3½ fl oz olive oil
grated zest and juice of 1 lime

Steps:

  • Tip all the chopped ingredients into a bowl, add the olive oil along with the lime zest and juice and mix well. Set aside for 30 minutes to allow the flavours to mingle.
  • To make fragrant Thai prawns, remove heads and peel shells from 20 raw king prawns but leave tail sections on. Toss in the marinade and cook on a really hot barbecue for 45 seconds on each side until they turn from grey-blue to pink.
