1/2 cup packed brown sugar
2 tablespoons cornstarch
2 cups beef broth
1/3 cup reduced-sodium soy sauce
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground ginger
1/4 teaspoon hot pepper sauce
2 pounds boneless beef sirloin steak, cut into thin strips
6 tablespoons olive oil, divided
4 cups fresh broccoli florets
2 cups fresh cauliflowerets
1-1/2 cups julienned carrots
2 cups sliced fresh mushrooms
1/4 cup peanut butter
Hot cooked spaghetti
1/2 cup chopped peanuts

Steps:

  • In a small bowl, combine the first 8 ingredients until smooth; set aside. In a large cast-iron skillet or wok, stir-fry beef in 3 tablespoons oil until meat is no longer pink. Remove and keep warm., In the same skillet, stir-fry broccoli, cauliflower and carrots in remaining oil for 5 minutes. Add mushrooms; stir-fry until the vegetables are crisp-tender, 3-5 minutes., Stir broth mixture and add to the pan. Bring to a boil; cook and stir until thickened, about 2 minutes. Reduce heat; add beef and peanut butter. Cook and stir over medium heat until peanut butter is blended. Serve with spaghetti. Sprinkle with peanuts. Freeze option: Do not cook spaghetti. Freeze cooled beef mixture in freezer containers. To use, partially thaw in refrigerator overnight. Cook spaghetti according to package directions. Place beef mixture in a large skillet and heat through, stirring occasionally; add a little broth if necessary. Serve with spaghetti and sprinkle with peanuts.

2 tablespoons roughly chopped fresh cilantro leaves and stems
2 tablespoons neutral oil, such as canola
1 tablespoon grated fresh ginger
1 tablespoon roughly chopped lemongrass (from root end)
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon shrimp paste
10 cloves garlic
8 medium red chiles, such as Fresno
4 small shallots, halved
1 Sri Lankan (kaffir) lime leaf, torn into pieces (see Cook's Note)
Kosher salt and freshly ground black pepper
4 tablespoons canola oil
2 pounds flank steak, thinly sliced against the grain

1 yellow onion, thinly sliced into strips
1 green bell pepper, sliced into strips
1 red bell pepper, sliced into strips
Two 14-ounce cans coconut milk
1 cup low-sodium chicken broth
2 tablespoons fish sauce
3 tablespoons roughly chopped fresh cilantro
2 tablespoons roughly chopped fresh Thai basil
1 tablespoon roughly chopped fresh mint
Juice of 2 limes

Steps:

  • For the red curry paste: In a food processor, combine the cilantro, oil, ginger, lemongrass, coriander, cumin, shrimp paste, garlic, red chiles, lime leaf, 1 teaspoon salt and 1 teaspoon pepper. Pulse to a consistent paste.
  • For the curry: Heat 2 tablespoons of the oil in a large Dutch oven over medium heat. Add the curry paste and cook, stirring well, until aromatic, about 2 minutes. Transfer to a bowl and set aside. Add the remaining 2 tablespoons oil to the pot and increase the heat to high. Sprinkle the flank steak with a pinch of salt, then add it to the pot; cook for 3 to 4 minutes. Remove the steak and add the onions and peppers; cook until tender, 2 to 3 minutes. Add the coconut milk, bring to a gentle boil, then add the curry paste back to the pot; stir well. Reduce the heat and simmer for about 15 minutes. (If the coconut milk breaks and separates, don't worry: it will come back together to a smooth consistency.) Add the chicken broth and fish sauce, and continue simmering until the sauce has a nice, gravy-like consistency, 12 to 15 minutes. Return the beef to the pot and finish with the cilantro, basil, mint and lime juice. Taste and adjust the seasoning.

1 medium green pepper, cut into 1-inch pieces

2 large celery ribs, sliced
1 cup cold water
5 teaspoons cornstarch
1 to 2 teaspoons curry powder
Hot cooked rice or noodles

Steps:

  • In a bowl, combine soy sauce, garlic, ginger and 2 tablespoons oil. Add beef; toss to coat. Cover and refrigerate for 15-20 minutes. , In a large skillet or wok, heat remaining oil. Stir-fry beef over medium-high heat for 2-3 minutes. Remove beef and set aside. In the same skillet, stir-fry the onion for 1 minute; add peppers and celery. Stir fry for 2 minutes; return beef to the skillet. Combine water, cornstarch and curry powder until smooth; add to skillet. Bring to a boil and boil for 1 minute, stirring constantly. Serve over rice or noodles.

1 small Aubergine (Eggplant) (chopped into cubes)
2 small Onions (cut into wedges)
1 tbsp Vegetable oil (Can sub for any oil)
50 g (small tub) Green Curry Paste (we used Blue Dragon, you can make your own if prefered?)
500 grams (1 lb) Steak (Cut into Strips (see blog post for best cuts to use) )
400 ml (1 can) Coconut milk (see info on the blog post, about substituting with light coconut milk )
2 tbsp Fish Sauce
1 tbsp Brown Sugar
3 Red &/or Green Chillies
1/2 tbsp Fresh Ginger (Finely chopped )
4 Curry Leaves (Substitute with lime or bay leaves)
Handful Fresh Basil (Chopped to garnish )

Steps:

  • Make sure you have chopped, weighed out and prepared everything before you start! Also, start cooking rice now. Check out our Jasmine Sticky Rice for how to make it perfectly every time.
  • Bring a pan of water to the boil, wait for it to bubble furiously before adding the sliced aubergine (eggplant) and onions.
  • After only 2 minutes of cooking, drain and rinse in a colander with the cold water tap, until cold. Set aside. (This process is called blanching)
  • Heat oil in a pan, add the thai green curry paste and stir for 1 minute it will melt down as it heats.
  • Add beef steak strips, flick the beef strips with a spatula to cover with green curry paste for only 1 minute. It will still be pink, do not wait for it to brown, it will continue to cook in the next steps).
  • Pour coconut milk into the pan with fish sauce and sugar. Stir through and bring to the boil.
  • Add the previously blanched aubergine and onions into the pan, stir through.
  • Turn heat down to medium and add ginger, curry leaves and extra chillies (if using). Simmer for the final 2 minutes.
  • Add a handful of chopped fresh basil.
  • Serve with rice or noodles, and extra chillies (if wanted).

Steps:

  • Stir together broth, cornstarch, soy sauce, curry powder and red pepper flakes; set aside.
  • Spray wok or large skillet with cooking spray; heat over medium high heat.
  • Add onions and garlic and stir-fry for 1 minute; remove from wok.
  • Add broccoli and carrot to wok; stir-fry 2 to 3 minutes or until crisp tender; remove from wok.
  • Add oil to hot wok.
  • Add chicken and stir-fry 2 to 3 minutes or until no longer pink.
  • Stir broth mixture and add to wok.
  • Cook and stir until broth mixture comes to a boil and thickens slightly.
  • Return all vegetables to to wok and heat through.
  • Serve with rice.

After having my first and most delicious Thai meal, I was on the hunt for recipes to make at home. I found this recipe in a beautiful book called, appropriately, "Beautiful Thailand". As with all curry dishes you will want to adjust the heat to your tastes. I find 1 tablespoon of curry paste to be more than sufficient to clear a sinus cold so you may want to start with 1/2 tablespoon. Have fun!

90 ml coconut milk
2 tablespoons fish sauce
2 tablespoons sugar
6 kaffir lime leaves
1 tablespoon oil
2 tablespoons panang curry paste (use only 1 Tbsp. or less for less heat)
250 g beef sirloin, sliced thinly
1/8 cup green pepper, sliced
1/8 cup red pepper, sliced
1/4 cup onion, sliced
2 tablespoons roasted peanuts, chopped fine (or cashews)

Steps:

  • Mix together the sauce ingredients and set aside.
  • Heat a large skillet and add the oil and curry paste. Cook for 1 minute on low heat.
  • Return the temperature to high and saute the beef, then add the sauce. Cook until the sauce is thick, about 5 minutes.
  • Add the sliced peppers , onions and ground peanuts. Cook for 2 minutes more.
  • Serve over Jasmine rice. (P.S. Don't eat the lime leaves).

12 oz beef stir-fry strips 375 g
1 red pepper, cut into strips
1/4 lb cremini mushrooms, halved or quartered 125 g
2 cups cubed eggplant 500 mL
2 tbsp Thai green curry paste 30 mL
1 tbsp fish or soy sauce 15 mL
1 can coconut milk 414 mL
2 green onions, thinly sliced on angle
2 tbsp finely chopped cilantro 30 mL

Steps:

  • In large skillet or wok, heat half the oil on high. Stir-fry beef and pepper 3 min., or until meat is cooked through. Transfer beef and peppers to plate.
  • Add remaining oil to skillet. Stir-fry mushrooms and eggplant over medium-high heat, 3 to 5 min., or until eggplant starts to soften. Stir in curry paste and fish or soy sauce and cook 1 min. Add coconut milk. Reduce heat to medium. Cook 5 min., stirring occasionally, or until eggplant is tender.
  • Stir reserved beef and peppers into skillet mixture, along with green onions. Simmer just until heated through. Stir in cilantro to serve.

1 1/2 cups canned unsweetened coconut milk
1/3 cup chopped fresh basil

Steps:

  • Place beef and curry paste in medium bowl. Stir to coat beef thoroughly. (Can be made 8 hours ahead. Cover; chill.)
  • Heat 2 tablespoons oil in large skillet over high heat. Add asparagus and sauté until crisp-tender and beginning to char slightly, about 3 minutes. Using slotted spoon, transfer asparagus to bowl.
  • Add remaining 2 tablespoons oil to skillet. Add curry-coated beef in single layer. Cook over high heat without stirring until bottom of beef begins to char slightly, about 2 minutes. Add coconut milk and cook, stirring often, until sauce is bubbling and slightly reduced, about 2 minutes. Add asparagus and heat through. Stir in basil. Squeeze lime wedges over mixture and serve.

  • Thinly slice the steaks. Pour the chili oil and soy sauce over the sliced steak, making sure to mix the marinade throughout the meat. Cover and let the meat marinate for at least two hours in the refrigerator (the longer the better).
  • Add all of the sauce ingredients into a blender. (I use my nutri-bullet). Blend the ingredients until smooth. Set aside.
  • Cook noodles according to package directions. Drain, set aside. (I add about 2 teaspoons of chili oil to the drained noodles. Use tongs to make sure the noodles are coated with the chili oil to make sure they don't stick together.)
  • Heat wok pan using medium high heat. Add a few drizzles of the red chili oil to the pan, once the chili oil is hot, add the meat to the pan. Cook the meat for about two minutes making sure to stir or flip the meat during the cooking time. Remove meat from the pan.
