1 1/2 cups glutinous rice, 1 1/2 cups
5 cups water, 5 cups

Steps:

  • Soak the glutinous rice with cold water for 15 minutes and rub the rice with your hands and wash until the water starts to be clear.
  • Put the rice in the microwave safe container and put the water about 2 cup or submerge the rice.
  • Cook on high power about 20 minutes.

Thai sticky rice is slightly sweet and rather sticy, and fun to eat; children love it. The traditional way to eat sticky rice is to gently gather a clump of it into a ball and dip into a sauce. Time indicated does not include soaking time for the rice. Although I've posted recipe to use with my Bamboo Steamer, a pasta pot (with a deep basket) lined with cheese cloth will work just as well

2 cups thai sticky rice (long grain)
1 quart water

Steps:

  • Place rice into a mesh colander.
  • Rinse the rice grains in two or three changes of cold water in a bowl until the water runs clear from the colander.
  • Place the rice into a bowl and fill with cool water to 2 to 3 inches above the rice.
  • Cover the bowl and allow the rice to soak for 6 to 8 hours.
  • Drain the rice and transfer to cheesecloth-lined steamer or pasta pot basket.
  • Set steamer on wok or pasta pot with boiling water; do not let rice touch boiling water.
  • Cover pot and steam rice, checking water level often, adding more boiling water as need; cook for 20 minutes.
  • Remove from heat and let stand, covered for 5 minutes before serving.

A recipe I found on About.com for Thai recipes that sounds so good and I am posting it for ZWT. Here is what is stated about the rice: "This sticky rice recipe is simple to make and oh so delicious! A meal unto itself, this Thai Sticky Rice with Pork & Mushrooms is a savory dish that is similar to fried rice, except it has a wonderfully chewy texture that even kids enjoy. While this recipe would normally be made with Thai or Chinese sausage, I've substituted strips of bacon, which I find works wonders with this recipe. Note that you can either include the minced chili in the recipe, or leave it out and serve with chili sauce on the side (it's delicious like this!)."

2 cups thai sticky rice, soaked in 31/2 cups water (also called Thai "sweet rice")
3 -4 slices bacon (or Thai sausage if you can find it)
1/3 cup shallot, diced (or purple onion)
1 cup shiitake mushroom, diced
1 teaspoon garlic, minced
1 red chili, de-seeded and minced (OR 1/2 tsp. dried crushed chili (omit for mild rice)
1 1/2 tablespoons fish sauce
1 1/2 teaspoons dark soy sauce (OR 2 Tbsp. regular soy sauce)
1 tablespoon soy sauce
3 green onions, finely sliced
1 bunch banana leaf, thawed if frozen (OR bamboo leaves or cheesecloth)

Steps:

  • Soak 2 cups sweet (sticky) rice in 3-4 cups water, or enough so water exceeds the rice by at least 1 inch. Soak for at least 40 minutes (if you lose track of time, it's no problem - sticky rice can soak up to 4 hours or longer). Note: Sweet rice has a hard outer shell that needs to soften before it can be cooked.
  • While rice is soaking, prepare your steamer. Line a bamboo steamer or colander with 2 layers of banana/bamboo leaf, OR use cheesecloth, or a clean kitchen cloth. To clean and thaw the leaf (if frozen), rinse under hot water. Cut the leaf large enough that it extends over the top. Place steamer over a large pot, and have a tight-fitting lid ready.
  • Place bacon in a large frying pan/wok together with 1-2 tablespoons water. Fry over medium-high heat until cooked (chewy, not crisp). Remove from heat, leaving all or half the fat in the frying pan.
  • Remove bacon from the pan and cut into small pieces (I use a clean pair of scissors for this, like they do in Asia - much faster and easier than a knife!). Place it back in the frying pan.
  • Also add to the frying pan the shallots or onion, mushrooms, garlic, and chili. Return to medium-high heat and stir-fry 1-2 minutes, until fragrant. If your pan becomes dry, add a little water (1-2 Tbsp.).
  • Turn heat to low. Add the drained sticky rice, plus the fish sauce and soy sauces. Also add half the green onion. Stir until the color of the rice has consistently darkened . Remove from heat.
  • Transfer the rice from the frying pan into your prepared steamer. Make sure there is at least 1 inch of water in the pot. Cover with the lid and steam over high heat for 30-35 minutes. (You may have to add more water to your steamer partway through.).
  • After 30 minutes, remove from heat. Allow to sit (with lid on) for 5 minutes. The rice should be soft, sticky, and slightly translucent. If there are any hard grains, steam 5 minutes longer. (Dig down into the middle of the rice when testing for "done-ness".).
  • Taste-test the rice for salt. Sprinkle over a little more fish sauce if not salty or flavorful enough. If too salty, add a sqeeze of lime juice. Gently stir rice with a fork or chopsticks to mix inches.
  • To serve, slide the banana/bamboo leaf directly onto a serving plate. Or, if you want to pretty it up, line a serving bowl or plate with a fresh banana leaf. Mound the rice on top and sprinkle with remaining spring onion (add optional garnishes too if desired). ENJOY!

I am looking for the perfect sticky rice recipe that is easy to make. Some Asian markets sell this at the deli counter but there's too much rice and barely any good stuff. I got this recipe from http://tastytreats.wordpress.com, I have tweaked the recipe and method and it looks pretty close to what I am seeking. I would like to know nutritional values, or maybe...I won't want to know because it's going to ruin this comfort food for me. Especially the Chinese sausages, they're GREASY!

2 links Chinese sausage, chopped
1 tablespoon olive oil (optional)
1/4 cup dried shrimp
1 cup glutinous rice
2 cups water
1 cup medium grain rice, such as Nishiki
4 -5 small dried shiitake mushrooms
1 tablespoon light soy sauce (to taste)
1 teaspoon sesame oil, to drizzle (to taste)
1 spring onion, finely chopped

Steps:

  • Rinse and then soak the dried shiitake in warm water for about 20-30 minutes, or until they've become soft and pliable. Do the same for the dried shrimp.
  • Remove mushroom from water, squeeze dry, and reserve the water to add flavor to the rice. Remove the stems, they're too tough. Slice mushroom thinly.
  • Drain shrimp from water, reserve water to add to rice later.
  • While you wait for the little fungi to soften up, get a wok and heat it up. No oil will be necessary because the fat content in the sausages (whoops, forgot to mention that. But if it gets too dried, add about 1 tablespoon of olive oil But we're talking comfort food here, afterall...) will all come out during cooking. Quickly fry for 2-3 minutes, then add the dried shrimp and toss it about until you smell all the great aromas and much of the oil from the sausage has come out. Tip the sausage pieces and shrimp into a dish, taking care to leave most of the oil behind in the wok, and put aside.
  • Heat up the wok again and add the glutinous rice. This part is a bit like the beginnings of a risotto. In an ideal world, the glutinous rice would be cooked in this way throughout, in the wok, until the rice has completely cooked through. But we don't have time, so my mom taught me this method of par-cooking the glutinous rice before adding it to the rice cooker with the medium grain rice.
  • Keep stirring the rice until all the grains are coated in the sausage oil. Heat the reserved shrimp and mushroom water until nearly boiling, if using, if not heat up 2 cups of water. Then add small ladles of liquid in at a time, letting the rice absorb all the liquid before adding the next bunch. Do this for about 10 minutes until the rice looks fluffy and the mixture thickens. You may use mor less water than 2 cups.
  • Rinse your medium grain rice in the rice cooker and fill with water to 2cm above the rice. Add your par-cooked glutinous rice, the reserved sausage and shrimps. Slice the mushrooms and add those in, too, along with any of the water they were soaking inches. Add soy sauce. Mix well. If needed, top up with water so there is 2cm of liquid above the rice again. Turn on the rice cooker and leave to bubble away happily....
  • When the rice is ready, remove the lid and give it a big stir, loosening the rice. This ensures that it's all nice and fluffy. Drizzle with a bit of sesame oil. Mix well and serve in a large, thick bowl. Sprinkle over the chopped spring onions.
  • And as with most comfort foods, it tastes even better the next day.
