THAI BEEF WITH PEPPERS



Thai Beef with Peppers image

Number Of Ingredients 16

1 package pad Thai rice noodles or linguine
1/2 cup low-sodium soy sauce
3 tablespoons sherry
2 tablespoons cornstarch
2 tablespoons packed brown sugar
1 tablespoon minced fresh ginger
1 teaspoon red chili paste or a few dashes red chili oil
2 cloves garlic, minced
1 lime, halved
1 pound flank steak, sliced very thin against the grain
2 tablespoons vegetable oil
1 medium yellow onion, sliced
1 red bell pepper, cored and sliced into rings
1 tablespoon diced fresh jalapeno or 1 teaspoon diced hot pepper
Fresh basil leaves, for garnish
Fresh cilantro leaves, for garnish

Steps:

  • Cook the noodles according to the package directions.
  • In a small bowl, mix the soy sauce, sherry, cornstarch, brown sugar, ginger, chili paste, garlic and the juice of half the lime. Pour a third of the marinade into a bowl with the sliced beef and toss to coat. Reserve the rest of the marinade for later.
  • Heat 1 tablespoon of the oil in a large skillet over medium-high to high heat. When it is very hot, throw in the onions and cook for a minute or so. Add the bell peppers and jalapenos. Cook for a minute, tossing until the peppers have brown/black bits but are still firm. Remove the vegetables to a plate.
  • Into the hot skillet, add the remaining tablespoon of oil. Add the meat mixture, evenly distributing it over the surface of the skillet. Allow to sit for 45 seconds, then turn with tongs. Cook for another 30 seconds, then add the onions and peppers back into the skillet. Reduce the heat to low. Pour in the remaining marinade and stir. Allow to simmer on low for a few minutes; the sauce will slowly thicken. Turn off the heat.
  • Drain the noodles, then add half of them to the stir-fry. Toss and add more noodles as desired. Stir in some very hot water if needed to thin the sauce.
  • Top with basil and cilantro leaves and serve immediately with a squeeze of the remaining lime half.

1 tablespoon (15ml) soy sauce, divided
5 teaspoons (25ml) Asian fish sauce, divided
1 teaspoon (4g) white sugar
4 to 6 fresh red or green Thai bird chilies, divided
6 medium cloves garlic, divided
1 1/2 tablespoons (20g) palm sugar (see note)
1 small shallot, thinly sliced
4 makrut lime leaves, very thinly sliced into hairs (central vein discarded), plus more for garnish (see note)
2 tablespoons (30ml) vegetable or canola oil, divided
2 cups packed Thai purple basil (about 2 ounces; 55g)(see note)
Dried Thai chili flakes or red pepper flakes to taste (optional)
1/4 cup fried shallots (see note)
Kosher salt
Cooked rice, for serving

Steps:

  • Combine beef, 1 teaspoon soy sauce, 2 teaspoons fish sauce, and white sugar in a bowl. Toss to combine and set in refrigerator to marinate for at least 15 minutes and up to overnight.

My mother got this recipe from her butcher about three years ago and makes them all year long (she just loves the idea of an indoor grill in the winter!) This recipe is super as is, but once my father urged mom to add a splash of lime juice to the marinade and put chunks of onions and mushrooms on the kabobs, she never looked back! Try them both ways--I promise you'll make them again:) *Prep time inclues marinating time.*

2 tablespoons cooking sherry
2 tablespoons rice wine (in the Asian section of the supermarket)
1/3 cup soy sauce
1/3 cup hoisin sauce
3 cloves garlic, finely chopped
1 red chili pepper, seeded and finely chopped
1 1/2 tablespoons freshly grated gingerroot
3 scallions, finely chopped
salt and pepper, to taste
2 lbs cubed beef or 2 lbs steak
2 large red bell peppers, seeded and cut into small chunks
pasta or green lettuce, to serve

Steps:

  • MARINADE: Put the sherry, rice wine, soy sauce, hoisin sauce, garlic, chile pepper, ginger, and scallions in a large bowl; mix until well combined.
  • Season to taste with salt and pepper.
  • Thread the meat onto 8 skewers, alternating it with chunks of red bell pepper.
  • When the skewers are full (leave a small space at each end open), transfer them to the marinade bowl and turn them over until each is well coated with marinade.
  • Cover with plastic wrap and refrigerate for 2 1/2 hours, or overnight.
  • When the skewers are thoroughly marinated, lift them out and grill them over hot coals, turning them frequently, for 10-15 minutes, or until the meat is cooked through.
  • Serve immediately over rice, pasta, or lettuce.

I like the red bell pepper and onions the best. I lowered the fat by using light mayo. Make sauce 2-4 hours ahead of time and marinate chicken 2 hours.

1 cup mayonnaise
1/8 cup sugar
1/8 cup soy sauce
1 tablespoon sesame seeds, toasted
1/2 tablespoon sesame oil
1/4 teaspoon white pepper
1/4 cup soy sauce

2 tablespoons water
1 tablespoon sesame oil
1 teaspoon crushed red pepper flakes
1 teaspoon minced fresh ginger
1 1/2 lbs boneless skinless chicken breasts, cut into 1-1/2-inch pieces
1 red bell pepper, cut into 1-1/2-inch pieces
1 sweet onion, cut into 1-1/2-inch pieces
2 tablespoons olive oil
1/2 teaspoon salt

Steps:

  • In a bowl, combine the sauce ingredients. Cover and refrigerate for 2-4 hours.
  • In a large resealable plastic bag, combine the soy sauce, brown sugar, water, sesame oil, pepper flakes and ginger. Add the chicken; seal bag and turn to coat. Refrigerate for 2 hours, turning occasionally.
  • Drain and discard marinade.
  • In a bowl, toss the red bell pepper and onions with olive oil and salt.
  • On six metal or soaked wooden skewers, alternately thread one chicken piece and bell pepper and onion(together).
  • Grill, covered, over medium heat for 4-5 minutes on each side or until chicken juices run clear and veggies are crisp-tender. Serve with dipping sauce.

ENGLISH SPICED BEEF



English Spiced Beef image

This was one of the great Victorian Christmas season dishes; the perfect centre piece for a cold supper buffet. A neat round joint of silverside or topside is the best for this kind of dish.

6 lbs joint of beef
3 ounces light brown sugar
1 ounce black peppercorns
1 ounce juniper berries
1 ounce allspice berry
4 ounces sea salt
1/4 ounce saltpeter

Steps:

  • Saltpeter is a necessary preservative when curing meat and also adds a pleasing red color otherwise the beef will turn out a murky grey.
  • Rub the meat all over with the sugar and put it in a pot with a lid for 2 days. Leave it in a cool place, turning and rubbing the meat occasionally with the sticky liquor that develops.
  • Crush the peppercorns, juniper and allspice with a pestle and mortar and mix with the salt and saltpeter.
  • Rub this mixture well into the meat and leave it in the pot for a further 9 days. Turn the meat and rub the pickling mixture into the flesh daily.
  • When the pickling is complete, remove the beef and rub off any excess spices adhering to the surface. Do not rinse it.
  • Wrap the meat in cooking foil [the Victorians used suet] and put into a large ovenproof pot. Add about 10 fl oz water, cover the pot with a double layer of foil and fit the lid on tightly.
  • Preheat the oven to 275 deg F.
  • Bake the meat slowly allowing 45 min per lb.
  • When the meat is cooked, remove the pot and set aside until it is quite cold.
  • Unwrap the meat, drain off any excess liquid and place on a board.
  • Cover with foil, put a weight on it and leave for at least 24 hr.
  • Carve the meat into thin slices and serve with anything from good mustard to pickled kumquats.

1 lb boneless beef top sirloin steak, cut 1-inch thick
1 large red bell peppers or 1 large yellow bell pepper
12 large mushrooms
1 (6 ounce) package long grain and wild rice blend
1/4 teaspoon salt
1 tablespoon fresh lemon juice
1 tablespoon olive oil
1 tablespoon water
2 teaspoons dijon-style mustard
1 teaspoon honey
1/2 teaspoon dried oregano leaves
1/4 teaspoon pepper

Steps:

  • Trim fat from beef steak; cut into 1 1/4-inch pieces.
  • In large bowl, whisk together seasoning ingredients; add beef, bell pepper and mushrooms, tossing to coat. Alternately thread pieces of beef, bell pepper and mushrooms on each of four 12-inch metal skewers.
  • Prepare rice according to package directions; keep warm.
  • Meanwhile, place kabobs on rack in broiler pan so surface of meat is 3 to 4 inches from heat. Broil 9 to 12 minutes for medium rare to medium doneness, turning occasionally.
  • Season with salt. Serve kabobs with rice. Makes 4 servings (serving size; 1 kabob and 3/4 cup rice) Total preparation and cooking time: 30 minutes Cook's Tip: To grill, place kabobs on grid over medium, ash-covered cools.
  • Grill kabobs, uncovered, 8 to 11 minutes for medium rare to medium doneness, turning occasionally; season with salt.
