Cozy, comforting, and fragrant, this flavor-packed Thai chicken noodle soup will warm you right up.

1 tablespoon vegetable oil
½ cup thinly sliced shallots, from 1-2 large shallots
1 tablespoon minced fresh ginger, from a 1-inch knob
2 tablespoons Thai green curry paste
4 cups low sodium chicken broth
1 (13.5 oz) can coconut milk
2 tablespoons fish sauce
4 packed teaspoons dark brown sugar
2 tablespoons fresh lime juice, from 1 lime
½ teaspoon turmeric
4 oz thin rice noodles
2 cups shredded cooked chicken, from a rotisserie chicken
Handful chopped fresh cilantro
3 scallions, light and dark green parts, thinly sliced
Sriracha sauce
Lime wedges

Steps:

  • Heat the oil in a medium soup pot over medium-low heat. Add the shallots and ginger and cook, stirring frequently, until softened, 3 to 5 minutes. Add the curry paste and cook, stirring constantly, for 1 minute more. Add the chicken broth, coconut milk, fish sauce, brown sugar, lime juice, and turmeric; bring to a gentle simmer. Continue simmering, uncovered, for 5 minutes.
  • Meanwhile, cook the rice noodles according to the package instructions.
  • When ready to serve, taste the soup and adjust the seasoning, if necessary. Gently reheat the noodles in the microwave, if necessary. Divide the noodles and chicken into serving bowls. Ladle the broth over top and sprinkle with cilantro and scallions. Serve with Sriracha sauce and lime wedges.
  • Note: As the soup sits on the stove, some of the fat may rise to the surface; skim it, if necessary.

1 ½ tablespoons water
6 cups chicken broth
2 ½ tablespoons soy sauce
1 tablespoon fish sauce
1 tablespoon rice vinegar
1 tablespoon chile-garlic sauce (such as Sriracha®), or more to taste
2 teaspoons vegetable oil
2 teaspoons minced fresh ginger root
2 cloves garlic, minced
1 teaspoon ground coriander
1 (16 ounce) package thick rice noodles
1 cup sliced zucchini
1 cup sliced red bell pepper
2 cooked chicken breasts, cut into 1-inch cubes
¼ cup crushed peanuts
¼ cup chopped fresh cilantro

Steps:

  • Stir cornstarch and water together in a small bowl until smooth. Pour chicken broth into a large pot and stir cornstarch mixture, soy sauce, fish sauce, rice vinegar, chile-garlic sauce, vegetable oil, ginger, garlic, and coriander into broth. Cover and bring to a boil.
  • Place rice noodles in the boiling sauce, reduce heat to medium, and simmer until noodles are tender, 5 to 10 minutes. Stir zucchini, red bell pepper, and chicken into sauce. Bring back to a boil, cover, and simmer until vegetables are just become tender, about 5 more minutes.
  • Remove from heat and let stand, covered, for 5 minutes to thicken. Serve garnished with crushed peanuts and cilantro.

2 ounces cooked prawns
1/2 liter water
3 tablespoons coconut milk
1 inch fresh ginger (cubed)
1 lime, juice of, only
1 teaspoon dried chilies or 1/4 fresh chili pepper
3 teaspoons dried lemon grass
2 teaspoons sesame
3 teaspoons soy sauce
olive oil (as required)
1/2 ounce miso (cream)
1 ounce rice noodles (or as desired)
1 cup peas
1 teaspoon ground ginger

Steps:

  • add the fresh ginger, soy sauce, tsp lemongrass/seame mix and oil to pan. saute for 30seconds.
  • heat prawns and add water, coconut milk, chili, remaining lemongrass, dash of soy sauce, peas, ground ginger and leave to simmer for 5-8mins on a reduced heat.
  • Add broken noodles, lime juice and miso. Simmer for further 5mins.
  • serve! as a starter for an oriental rice based dish, perhaps?

4 ounces dried rice noodles, medium size
1/4 cup vegetable oil
2 -3 cloves finely minced garlic
3 tablespoons chopped raw shrimp
3 tablespoons ground lean pork
1 teaspoon sugar
1 tablespoon fish sauce
1 teaspoon soy sauce
2 teaspoons hot chili sauce
2 beaten eggs
2 tablespoons tamarind paste
1/4 cup bean sprouts
1 sliced scallion
2 tablespoons coarsely ground salted peanuts or 2 tablespoons unsalted peanuts
2 tablespoons green onions, sliced

Steps:

  • Soak the noodles in hot water for 20 minutes, or until soft; drain.
  • Heat oil in a wok or large skillet, saute until golden.
  • Add in the shrimp and ground pork, and stir-fry until lightly browned.
  • Add the sugar, fish sauce, soy sauce and chili sauce, stir-fry until the sugar dissolves.
  • Pour in the beaten eggs, let them set slightly then stir to scramble.
  • Add in the noodles and stir-fry for about 2 minutes.
  • Push noodles to side of wok or skillet then add in the Tamarind sauce, cook for 1 minute.
  • Add in the bean sprouts, scallions, and stir-fry until bean sprouts are slightly cooked (about 1 minute).
  • Stir the noodles down to middle of wok and stir-fry until well mixed.
  • Sprinkle with chopped peanuts and sliced green onions before serving.

1 large onion, halved
1 piece fresh gingerroot (3 to 4 inches), halved lengthwise
1 tablespoon canola oil
1 rotisserie chicken
1 cinnamon stick (3 inches)
5 whole cloves
3 whole star anise
1 teaspoon coriander seeds
1 teaspoon fennel seed
3 quarts reduced-sodium chicken broth
1 package (8.8 ounces) rice noodles
2 tablespoons brown sugar
2 tablespoons fish sauce
1 tablespoon lime juice
Optional: Bean sprouts, fresh basil leaves, fresh cilantro leaves, thinly sliced green onions, chili garlic sauce, fish sauce and lime wedges

Steps:

  • Preheat broiler. Place onion and ginger in a foil-lined 15x10x1-in. baking pan; drizzle with oil. Broil 3-4 in. from heat 8-10 minutes or until well browned. Meanwhile, remove chicken from bones; reserve carcass and shred meat. Place carcass, onion, ginger, spices and broth in a 6-qt slow cooker. Cook on low 6-8 hours., Cook noodles according to package instructions. Strain soup and keep warm; discard carcass, vegetables and spices. Stir in brown sugar, fish sauce and lime juice. Place noodles and chicken in soup bowls. Ladle broth into soup bowls. Add toppings of your choice.
