Easy 5-Ingredient Thai Coconut Curry Hummus - A creamy hummus recipe loaded with spicy Thai flavors. Healthy, delicious, and great for dipping vegetables!

2 cans chickpeas ((15 ounces) drained)
3/4 cup unsweetened full-fat coconut milk
1/3 cup red curry paste
3 cloves garlic
Zest of 2 limes
1 teaspoon salt
Fresh thai basil leaves (for garnish)

Steps:

  • Place the chickpeas, red curry paste, garlic, lime zest, and salt in the food processor. Pour 1/2 cup of coconut milk over the top and cover.
  • Puree until very smooth, then check the consistency. If you like your hummus a little more loose, add another 1/4 cup coconut milk and puree again.
  • Scoop into a bowl and sprinkle chopped Thai basil over the top. Serve with endive, cut vegetables, or rice crackers.

1 1/2 cups cooked chickpeas (rinsed well if you're using canned)
3 cloves garlic (minced)
2 tablespoons tahini
3 tablespoons fresh lime juice
1-2 tablespoons Thai red curry paste (more or less depending on spice preference)
1/4 cup + 1 tablespoon full-fat coconut milk
1 tablespoon olive oil
Water to thin (if necessary)
Salt and pepper (to taste)

Steps:

  • Place chickpeas, garlic, tahini, lime juice, curry paste, coconut milk and olive oil in a food processor and whirl away until smooth. If the hummus is too thick, add water 1 teaspoon at a time until desired consistency is achieved.
  • Taste the hummus and add more red curry paste if desired; season with salt and pepper. Serve with chips or crackers, fresh vegetables or as a spread on toast.

¼ cup coconut oil
2 large cloves garlic, very thinly sliced
2 cups cooked garbanzo beans
¼ cup fresh lime juice
¼ cup peanut butter
¼ cup coconut milk
¼ cup sweet chili sauce
¼ cup minced lemon grass
¼ cup minced fresh Thai basil leaves
1 tablespoon grated fresh ginger
2 teaspoons green curry paste
1 jalapeno pepper, minced
½ teaspoon salt
1 pinch cayenne pepper
1 pinch chili powder

Steps:

  • Heat coconut oil in a skillet over medium heat; cook and stir garlic until fragrant and lightly browned, 30 seconds to 1 minute. Pour mixture into a ramekin or small bowl and cool.
  • Blend cooled garlic-oil mixture, garbanzo beans, lime juice, peanut butter, coconut milk, chili sauce, lemon grass, basil, ginger, curry paste, jalapeno pepper, salt, cayenne pepper, and chili powder together in a blender until smooth.

1 Tsp Cumin
1/2 Tsp Fish Sauce
Juice of 1 Lime
Handful of Cilantro

Steps:

  • You can't get any easier than this: Place all ingredients into a food processor and blitz away! I like my hummus fairly knobbly (about 1 to 2 mins), if you want a smoother paste, keep going till the desired consistency is achieved.
  • Serve with toasted pita, or spread on bread. This recipe can be fairly spicy though, so taste as you go. You can add more yoghurt if you like to cut the spice a fair bit.

Add a pinch of salt and pepper, toss to coat, and spread out in an even layer on the baking sheet. Roast for about 25 minutes, stirring halfway through.
  • Place the sliced onion in a 16-oz heatproof glass jar. In a small saucepan, bring the apple cider vinegar, water, salt, and maple syrup to a boil over high heat. Remove from the heat and carefully pour over the sliced onion. Set aside for 30 minutes.
