CHICKPEA FLOUR PIZZA CRUST RECIPE
Whether you are cutting grains, needing a plant-based protein boost in your vegetarian or vegan lifestyle, or simply not wanting to heat up the house, this crust fits the bill.

Steps:
- Mix all the ingredients in a large mixing bowl. You'll end up with a very lumpy batter (not a stretchy dough, don't worry!).
- Cover and allow to rest overnight on the countertop. (Note: Best soaking practice is to leave out the salt and incorporate it the following day.) You should find that by the next day, the lumps have all worked themselves out, which is handy. If you find yourself short on time you can skip this step.
- When ready to make the pizzas, heat 1-2 cast iron skillets over medium heat for at least 5 minutes to get the cooking surface nice and hot.
- Prepare all your toppings for efficiency.
- Preheat your broiler to high (or low, see below).
- Add a little oil of your choice (I usually use refined coconut oil (use the code STEWARDSHIP for 10% off at that site!)).
- Pour a thin layer (about 2/3-1 cup) evenly into the skillet, tilting it if necessary or using the back of a ladle to spread out the batter to the edges. Thinner crusts are tastier and crispier, in my opinion, although harder to pick up with your hands.
- Cook 1-2 minutes until browned on the bottom - it will bubble on the top a lot like pancakes when it's ready to flip.
- Flip and cook 1-2 minutes more. For extra crispy crust, flip two more times to really brown it without burning.
- Remove the crust to a baking stone or cookie sheet. (You can get another one going in the skillet at this point.) If you have a lot of cast iron skillets or are making a smaller batch, you could certainly top and broil right in the skillet.
- Top with sauce, toppings and cheese of your choice.
- Broil 1-3 minutes on high to melt the cheese. (OR you can broil for about 5-7 minutes on low, which keeps the crust crusty and gives you a little more time to cycle the pizzas through and not burn your cheese because you're distracted by the other crusts. Your call!) I actually prefer 5 minutes on low and then 1 minute on high to really brown the cheese nicely.
THAI CHICKEN PIZZA

- Preheat oven to 425 degrees F.
- Form pizza crust on pizza pan or cookie sheet. Top with duck or plum sauce - spread it around like you would pizza sauce. Sprinkle the pizza with some crushed red pepper flakes then top with cheese and peppers. Bake until golden and bubbly, 15 to 17 minutes.
- Preheat a grill pan over medium-high heat. Combine vegetable oil, soy sauce and peanut butter with hot sauce and grill seasoning. Use the microwave to loosen up peanut butter if it is too cold to blend into sauce, 10 seconds ought to do it. Add chicken and coat evenly with mixture. Let stand 10 minutes then grill chicken cutlets 2 to 3 minutes on each side, until firm. Slice chicken into very thin strips.
- While chicken cooks, mix honey and vinegar and add the cucumber. Turn to coat evenly.
- Top the hot, cooked pizza with chicken, scallions, sprouts and cilantro. Drain cucumbers and scatter over the pizza. Garnish pizza with peanuts, cut into 8 wedges and serve.
CANNED CHICKPEA PIZZA CRUST

- Preheat oven to 400 degrees F. Line a baking sheet with parchment paper and spray with nonstick cooking spray.
- Combine chickpeas, flour, garlic powder, Italian seasoning, onion powder, salt, egg and some pepper in a food processor until smooth. (The mixture will be creamy, like hummus.) Transfer to prepared baking sheet and spread into a 10-inch circle with a rubber spatula.
- Bake 15 minutes. Remove from oven and add desired toppings. Return to oven and bake an additional 10 minutes. Slice and serve.
SPICY THAI CHICKEN PIZZA WITH PEANUT SAUCE
This wonderfully spicy and refreshing pizza is simple and very quick to make. Perfect for a light summer meal.

- Preheat oven to 425°F; do not bake the Boboli yet.
- In a microwave safe bowl, add garlic, gingerroot, peanut butter, honey, vinegar, soy sauce and pepper flakes. Microwave until peanut butter is melted (about 1 minute). Mix well with a whisk.
- Take pre-baked pizza crust out of the package and top with peanut sauce, cheese, bell pepper and cooked chicken. Bake for 5 minutes or until cheese is melted.
- Meanwhile, prepare other vegetables.
- Remove crust from oven and top with remaining vegetables, peanuts and cilantro.
- Cut and serve immediately while the crust is still hot! Enjoy!
CHICKPEA CRUST PIZZA
Steps:
- Preheat the oven to 425 degrees F.
- For the tomato sauce: In a large pot, heat the oil over medium-high heat. Add the garlic, carrots and onion and saute until the vegetables are soft, approximately 5 minutes. Season with salt and pepper. Add the tomato sauce and bring to a simmer. Cover and simmer on low heat until thick, about 20 minutes.
- For the crust: Meanwhile, in a bowl, whisk together the chickpea flour, garlic powder, salt and 2/3 cup water. In a 7 1/2-inch round nonstick pan, heat the olive oil over medium heat and pour the "dough" into the pan (about 1/8 inch thick). Cook the "dough" until the edges start to brown, approximately 3 minutes. Flip the crust over like a pancake and cook on the other side for another 3 minutes. Transfer the crust to a baking sheet.
- To finish the tomato sauce, put the sauce into a food processor and process until smooth.
- For the pizza topping: Brush the olive oil over the chickpea crust. Spread a thin layer of the tomato sauce over the crust, leaving a 1/2-inch border. Sprinkle on the grated provolone, covering the tomato sauce. Place the chicken sausage slices on top.
- Bake until the cheese is melted and bubbling, 10 to 15 minutes.
CHICKPEA CRUST PIZZA
This gluten-free crust is ideal for a party, since it can be prepared ahead, then baked and topped at the last minute. Cut into smaller pieces, it makes a great hors d'eouvre. Vary the toppings as you like -- salty, briny olives, capers or anchovies are especially good on this pizza.

- For the crust: Whisk the chickpea flour and 1 1/2 teaspoons salt together in a medium bowl. Whisk in 1 1/2 cups water and 2 tablespoons olive oil until smooth. Cover and let stand at room temperature for 2 hours.
- Preheat the oven to 425 degrees F with a pizza stone or baking sheet on the bottom rack. Line 2 baking sheets with parchment paper. Heat a large nonstick skillet over medium-high heat and add 2 tablespoons olive oil. Whisk the baking powder into the chickpea mixture and pour half of the batter into the hot skillet, swirling to evenly coat the bottom. Cook until just set, about 2 minutes. Transfer the skillet to the hot pizza stone and bake until the edges and top are browned and crisp, about 5 minutes. Flip the crust in the skillet and bake until the top is browned and crisp, about 3 minutes more. Transfer the crust to a parchment-lined baking sheet. Make another crust with the remaining 2 tablespoons olive oil and the remaining batter.
- For the toppings: Brush the crusts lightly with olive oil. Arrange the mozzarella on top and sprinkle with Parmesan. Divide the tomatoes between the two crusts and sprinkle with salt and pepper. Roughly tear the basil leaves and scatter over the top. Bake on two sheet pans, switching the position halfway through, until the cheese is browned and bubbly, 10 to 12 minutes. Drizzle with some olive oil and serve.
THAI GRILLED PIZZA

- Prepare grill for indirect-heat cooking.
- Combine lime juice, soy sauce, onion, cilantro, peanut butter, oil, brown sugar, ginger, lime zest, red pepper flakes and garlic in a stockpot. Stir in shredded turkey. Heat over low heat, stirring occasionally.
- Unroll pizza dough and pat into a rectangle, approximately 10 x 13 inches. Cut dough into 4 equal pieces.
- Reduce grill heat to low. Brush grill rack with olive oil. Using the indirect grilling method, slide pizza crusts on grill and cook until golden, about 3 to 4 minutes, until dough is puffy and lightly browned.
- Turn pizza crusts over. Top browned side of piza crusts with heated turkey mixture. Sprinkle with green onions, carrot sticks and cilantro. Sprinkle with cheese, if using.
- Cover with grill lid or tent with foil. Heat pizzas about 5 minutes or until crusts are cooked on bottom, cheese melts and pizzas are hot.

An easy version of the California Pizza Kitchen favorite. I like to use the Italian pizza crust (Boboli) because it is quick, but you could also adapt it to use your own favorite pizza crust. A good one I like here on Zaar is Recipe #8497 posted by Steve Sickenberger.

- In food processor or blender, combine peanut butter, vinegar, soy sauce, chili oil, ginger, honey and sesame oil.
- Set aside.
- Season chicken to taste with salt and cayenne pepper (use sparingly).
- Saute in olive oil until done (about 6-8 minutes).
- Cut chicken into bite sized pieces and coat with 2 tablespoons of the peanut sauce.
- Spread peanut sauce over the surface of the Italian pizza crust.
- Scatter chicken pieces over top and sprinkle with sesame seeds and green onions.

- Position an oven rack on the second-lowest level in the oven; place a baking stone on the rack.
- Position another rack in the upper third of the oven; preheat oven to 500°.
- Prepare toppings: in a saucepan, warm the oil over low heat; stir in the curry paste.
- Add in the coconut milk, fish sauce, brown sugar, and lime juice.
- Increase heat to medium; bring to a simmer.
- Add in the chicken, chopped basil, and bamboo shoots; simmer until chicken is cooked through, about 10 minutes.
- Using a slotted spoon, drain the chicken and bamboo shoots and transfer to a plate to cool.

- Top the pizza: spread the reduced sauce over the dough, leaving a 1-inch border.
- Drain and discard any juice from the chicken and bamboo shoots; arrange them in a single layer over the sauce; sprinkle mozzarella evenly over the top.
- Place the pizza in the oven on the upper rack; bake 10 minutes, until the crust is crisp and golden brown.
- Using a pizza peel, lift the pizza off the pan and place the crust directly on the baking stone (remove pizza pan from oven).
- Bake about 3 minutes, until the bottom of the crust is golden brown.
- Using the peel, remove the pizza from the oven and transfer to a cutting board.
- Scatter bell pepper, carrot, and basil ribbons over the pizza; slice pizza into wedges and serve immediately.

- Combine sauce ingredients in a small pan over medium heat.
- Bring the sauce to a boil; boil gently for one minute.
- Divide into 2 portions for use on chicken and pizza; set aside.

- Preheat the broiler.
- Sift the chickpea flour with the salt into a medium bowl.
- Slowly add 1/4 cup of the water, whisking constantly to form a paste. Beat with a wooden spoon until smooth. Whisk in the remaining 1/4 cup of water and let the batter stand at room temperature for 30 minutes, then stir in the rosemary.
- Heat 1 tablespoon of the olive oil in a 12" nonstick ovenproof skillet.
- Stir the batter once, pour it into the skillet and drizzle the remaining 2 tablespoons of olive oil on top.
- Cook the pizza over moderately high heat until the bottom is golden and crisp and the top is almost set, 2 to 3 minutes.
