2 skinless chicken breasts
small pack coriander , chopped
1 pak choi , quartered
175g sugar snap pea
1 tsp fish sauce
1 tsp soy sauce
2 tbsp rice vinegar
2 tbsp sweet chilli sauce
zest and juice 1 lime
1 tbsp Thai green curry paste
100g basmati rice

Steps:

  • Heat oven to 220C/200C fan/gas 7. Heat a non-stick frying pan over a high heat and cook the chicken breasts for 4-5 mins on each side until browned.
  • Lay a large piece of baking parchment on a baking tray, add half the coriander, the pak choi and sugar snap peas, then place the chicken breasts on top. Combine the fish and soy sauce, rice vinegar, sweet chilli, lime zest and juice, and curry paste, and pour over the chicken and veg, then cover with another piece of parchment. Fold up each edge to form a parcel and cook for 12-15 mins.
  • Meanwhile, cook the rice following pack instructions. Remove the parcel from the oven, leave to sit for 1-2 mins, then cut open and add the rest of the coriander. Serve with the rice.

3/4 cup KRAFT Zesty Italian Dressing, divided
1 lb. boneless skinless chicken breasts, cut into thin strips
2 Tbsp. crunchy peanut butter
2 Tbsp. honey
2 Tbsp. lite soy sauce
1/2 tsp. crushed red pepper
1/2 lb. thin spaghetti, cooked
1 pkg. (8 oz.) fresh sugar snap peas, rinsed

Steps:

  • Pour 1/4 cup dressing over chicken in medium bowl; mix lightly. Refrigerate 1 hour to marinate.
  • Meanwhile, whisk remaining dressing with peanut butter, honey, soy sauce and crushed pepper until blended. Reserve for later use.
  • Cook spaghetti as directed on package, omitting salt. While spaghetti is cooking, remove chicken from marinade; discard marinade. Cook and stir chicken in large nonstick skillet on medium heat 5 min. or until chicken is no longer pink. Add peas; cook and stir 3 min. or until chicken is done. Remove skillet from heat.
  • Drain spaghetti. Add to chicken mixture along with the reserved dressing mixture; mix lightly.

Steps:

  • Heat oil in a medium pot over medium. Cook curry paste, ginger, and lime zest, stirring, until heated through, about 1 minute. Add onion and salt and cook, stirring, until onion is soft, about 3 minutes. Add bell pepper and stir to combine. Add chicken stock and bring to a boil, then reduce heat to low and simmer until pepper is crisp-tender, about 3 minutes. 2 tablespoons vegetable oil

Steps:

  • Preheat the oven to 200 degrees F. Heat a large skillet over medium-high heat. Season the chicken with salt and pepper. Add 1 tablespoon oil to the skillet. Dredge 2 chicken cutlets in flour, shake off any excess and place in the skillet. Cook until golden, about 1 1/2 minutes per side; transfer to a baking dish. Repeat with the remaining 1 tablespoon oil and the other 2 chicken cutlets. Cover the dish loosely with foil; place in the oven while you prepare the vegetables.
  • Add the butter to the hot skillet, then add the scallions and mushrooms; cook, stirring occasionally, until the mushrooms brown, about 4 minutes. 1 cup long-grain white rice
1 pound skinless, boneless chicken breasts, diced
1 tablespoon plus 1 teaspoon cornstarch
2 tablespoons plus 2 teaspoons low-sodium soy sauce
1/4 cup hoisin sauce
1 tablespoon rice vinegar
1 tablespoon sugar
2 teaspoons finely grated fresh ginger
2 cloves garlic, grated
2 tablespoons vegetable oil
8 ounces sugar snap peas, trimmed
1/2 cup roasted unsalted cashews

Steps:

  • Cook the rice as the label directs. Set aside off the heat, 5 minutes, then fluff with a fork.
  • Meanwhile, toss the chicken with 1 tablespoon cornstarch and 2 teaspoons soy sauce in a large bowl; set aside 5 minutes. Stir together the hoisin sauce, remaining 2 tablespoons soy sauce, the vinegar, sugar, ginger, garlic, remaining 1 teaspoon cornstarch and 1 tablespoon water in a separate bowl until smooth; set aside.
  • Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the chicken in a single layer and cook, stirring once or twice, until golden and almost fully cooked through, 5 minutes. Transfer to a plate, leaving any drippings behind. Add the snap peas to the skillet and cook until bright green, 1 to 2 minutes. Stir in the cashews to lightly toast, about 1 minute.
  • Return the chicken to the skillet and pour in the hoisin sauce mixture. Cook, stirring, until the sauce thickens slightly and coats the chicken and vegetables, 1 to 2 minutes.
  • Divide the rice among plates or shallow bowls. Top with the chicken mixture and sauce.

100g sugar snap peas
1 tbsp oil
2 spring onions , finely chopped
2 garlic cloves , crushed
1 tsp grated ginger
3 x chicken breasts, cut into chunks
1-1 ½ tbsp Thai curry paste (we used Thai Taste)
400ml can coconut milk
2 limes , juice of one, other quartered
50g frozen peas
3 nests egg noodles
handful chopped coriander , to serve

Steps:

  • Blanch the sugar snap peas in a bowl of boiling water for 2 mins, then drain. Heat the oil in a large frying pan. Add the spring onions, garlic, ginger and chicken. Gently fry for 2-3 mins. Stir in the curry paste and cook for 1 minute more. Add the coconut milk to the pan, along with a splash of water, the lime juice, peas and sugar snap peas. Gently bubble for around 5 mins until the chicken is cooked through.
  • Meanwhile, cook the noodles according to the pack instructions. Drain. Stir the noodles through the sauce, scatter with coriander and serve with a wedge of lime for squeezing over.

2 tbsp vegetable oil , plus 1 tsp
3 skinless chicken breasts , cut into long strips
½ tsp Chinese five-spice powder
2 tbsp plain flour
thumb-sized piece ginger , shredded
250g sugar snap pea
2 spring onions , sliced
3 lemons , 2 zested and juiced, the other thinly sliced
1 tbsp soy sauce
2 tbsp liquid chicken stock
2 tbsp clear honey
2 tsp cornflour , dissolved in 1 tbsp water

Steps:

  • In a small bowl, mix together all the sauce ingredients except the lemon slices, then set aside.
  • Heat a wok with the 2 tbsp oil. Season the chicken and sprinkle with the five-spice and flour. Shake off the excess, brown in batches, then remove from the pan. Add the remaining 1 tsp oil and the ginger, and sizzle for 1 min. Add the sugar snap peas and the chicken. Toss for a few mins, then add the sauce and lemon slices. Keep tossing for 2-3 mins or until the chicken is cooked through and the sauce is thick. Serve with the spring onions sprinkled over.

Forget buying a jar of ready-made sauce and make an aromatic Thai green curry from scratch. This recipe makes more curry paste than needed, but you can freeze the rest for next time

1 tbsp vegetable oil
2-3 tbsp green curry paste (see below)
200g chicken thighs, skinned, de-boned and cut into chunks
400g can coconut milk
2 Thai aubergines
50g pea aubergines
2 baby corn, sliced at an angle
50g sugar snap peas
2-4 tbsp fish sauce
2-4 tsp sugar or palm sugar
2 lime leaves, stems removed
¼ bunch of Thai basil
1 red chilli, sliced
2 garlic cloves, finely chopped
8 green chillies, finely sliced
5g fresh turmeric root
1 lemongrass stalk, bruised and finely chopped
25g galangal, finely chopped
2 stalks coriander root, finely chopped
2 lime leaves, roughly chopped
4 Thai shallots, peeled and thinly sliced
10g ginger, finely chopped (optional)
½ tsp shrimp paste

Steps:

  • To make the curry paste, gradually combine all the ingredients, except the shrimp paste, using a pestle and mortar. Add the ingredients one at a time and pound vigorously after each to form a rough paste. Add the shrimp paste and continue to pound together until you have a smooth paste. The paste is ready when you can no longer identify any of the ingredients. Will keep in an airtight container in the fridge for 3-5 days or in the freezer for up to three months.
  • To make the curry, heat the oil in a saucepan over a low heat. Add the green curry paste and stir until fragrant - you won't need all the paste. Increase the heat to medium and add in the chicken pieces, coating with the paste. When the chicken has browned, spoon in half the coconut milk, avoiding adding any of the water at the bottom of the tin - this will split the curry. Stir continuously for 10 mins or until the chicken is fully cooked and the sauce is simmering.
  • Pour in the remaining coconut milk, discarding the water, and turn the heat up to bring to the boil, then return the heat to medium. Add the Thai and pea aubergines with the baby corn and sugar snap peas and simmer, stirring occasionally, for about 10 mins or until the flavours combine, the sauce thickens slightly and vegetables are tender.
  • Gradually add the fish sauce and palm sugar, stirring and tasting after each addition until you are happy. Add the lime leaves and most of the Thai basil, then cook for a further 5 mins to let their flavours infuse. To serve, pour the curry into individual serving dishes and scatter over the sliced chilli and the remaining Thai basil leaves.

3 tablespoons olive oil
3/4 lb sugar snap pea, trimmed of stem ends and strings
1/3 cup flour
1 lb boneless skinless chicken breast, trimmed of fat
1/4 teaspoon salt, plus more to taste
1/4 teaspoon fresh ground black pepper, plus more to taste
14 1/2 ounces low sodium chicken broth
3 cloves garlic, minced
1/4 cup fresh parsley, chopped
1 lemon, juice of
1 tablespoon freshly grated lemon, zest of

Steps:

  • In a nonstick skillet, heat 1/3 of oil over high heat.
  • Add peas and stir fry until bright green, 2-3 minutes.
  • Remove from pan and set aside in bowl.
  • Place flour in shallow pan.
  • Cut chicken into 1x2 inch strips or bite size pieces (strictly preference here), season with salt and pepper and dredge in flour, shaking off excess.
  • Discard leftover flour.
  • In same skillet, heat remaining oil over high heat.
  • Add chicken and cook, stirring, until lightly browned, about 4 minutes.
  • Transfer chicken to bowl with peas.
  • Add chicken broth and garlic to skillet and cook until reduced by half, about 5-7 minutes.
  • Reduce heat to medium and return chicken and peas to skillet.
  • Cook until just heated through.
  • Add parsley, juice and zest.
  • Adjust seasoning with salt and pepper.
  • Substitution Suggestions: I use a bag of frozen sugar snaps, or a bag of frozen stir fry veggies.
  • Any of your favorite veggies would do.
  • This also goes well with rice.

1/8 teaspoon crushed red pepper flakes

4 tablespoons soy sauce
1/2 cup brown sugar
1/2 cup white wine vinegar
1 teaspoon fish sauce or 1 teaspoon anchovy paste (optional)
1 cup sugar snap pea (mangetout)

Steps:

  • combine the gingerrot, garlic and red pepper flakes in a cup and set aside.
  • Mix flour with salt and pepper to taste and dredge chicken pieces in this.
  • Heat the olive oil in a large skillet.
  • Saute the chicken until browned on both sides and cooked through.
  • Remove the chicken and put in a warm dish, set aside in low oven to keep warm.
  • Add the ginger-garlic mixture to the skillet and saute until lightly browned.
  • Add the soy sauce, brown sugar, vinegar and fish sauce (if using).
  • Bring the mixture to a boil.
  • Reduce the heat and simmer, stirring frequently, until the sauce reduces and thickens.
  • Pour the sauce over the chicken pieces in the warm serving dish and keep warm until ready to serve.
  • Trim and shred the sugar snap peas diagonally.
  • Just prior to serving sprinkle the top of the chicken with the shredded snap peas.
