Steps:
- Combine sauce ingredients in a small pan over medium heat.
- Bring the sauce to a boil; boil gently for one minute.
- Divide into 2 portions for use on chicken and pizza; set aside.
- To make Thai chicken: Cook the chicken in olive oil over med-high heat, stirring, until just cooked; 5 to 6 minutes do not overcook.
- Set aside in refrigerator until chilled through.
- Once chilled, coat the chicken with 1/4 cup sauce.
- Set aside in refrigerator.
- To make the pizza: Use a large spoon to spread 1/4 cup sauce evenly over pizza dough within the rim.
- Cover sauce with 3/4 cup cheese.
- Distribute half the chicken pieces over the cheese followed by half the green onions, bean sprouts, and carrots, respectively.
- Sprinkle an additional 1/4cup cheese over the toppings and top the pizza with 1 TBSP chopped peanuts.
- Transfer the pizza to oven; bake until crisp and golden and the cheese is bubbly, 9 to 10 minute.
- When cooked through, remove pizza from oven.
- Sprinkle 1TBSP chopped cilantro over the hot cheesy surface.
- Repeat with remaining ingredients for a second pizza.

- Peanut Sauce: In food processor or blender, combine peanut butter, vinegar, soy sauce, oil, red pepper flakes, ginger, honey and sesame oil. Add enough water to thin to a smooth sauce spreading consistency. Set aside.
- Assemble: Spread peanut sauce over the surface of pizza crust.
- Scatter chicken pieces over top and sprinkle with green onions, carrot and cheese.
- Bake for 7-12 minutes or until crust is cooked and cheese is bubbly. Remove from oven and garnish with fresh cilantro.

- Place chicken in a 4- or 5-qt. slow cooker. In a small bowl, mix sugar, soy sauce, vinegar, garlic, ginger and pepper; pour over chicken. Cook, covered, on low 4-5 hours or until chicken is tender., Preheat oven to 450°. Remove chicken from slow cooker; discard cooking juices. Shred chicken with 2 forks; transfer to large bowl. An easy version of the California Pizza Kitchen favorite. I like to use the Italian pizza crust (Boboli) because it is quick, but you could also adapt it to use your own favorite pizza crust. A good one I like here on Zaar is Recipe #8497 posted by Steve Sickenberger.

- In food processor or blender, combine peanut butter, vinegar, soy sauce, chili oil, ginger, honey and sesame oil.
- Set aside.
- Season chicken to taste with salt and cayenne pepper (use sparingly).
- Saute in olive oil until done (about 6-8 minutes).
- Cut chicken into bite sized pieces and coat with 2 tablespoons of the peanut sauce.
- Spread peanut sauce over the surface of the Italian pizza crust.
- Scatter chicken pieces over top and sprinkle with sesame seeds and green onions.
- Sprinkle with 1/2 cup of mozzarella cheese and 1/2 cup of the Monterey jack cheese.
- Bake, uncovered in 400°F oven for 12 minutes.
- Remove from oven and sprinkle with shredded carrot and cilantro.

- To make Spicy Peanut Sauce: Combine sauce ingredients in a small pan over medium heat. Bring the sauce to a boil. Boil gently for one minute. Divide into 2 portions for use on chicken and pizza. Set aside.
- To make Thai Chicken: Cook the chicken in olive oil over medium-high heat, stirring, until just cooked, 5 to 6 minutes. Do not overcook. Set aside in the refrigerator until chilled through. Once chilled, coat the chicken with 1/4 cup Spicy Peanut Sauce. Set aside in the refrigerator.
- To make the pizza: Place the pizza stone in the center of the oven and preheat to 500 degrees for 1 hour before cooking the pizzas. Use a large spoon to spread 1/4 cup spicy peanut sauce evenly over the surface of the prepared dough within the rim. Cover the sauce with 3/4 cup shredded mozzarella. Distribute half the chicken pieces evenly over the cheese followed by half the green onions, bean sprouts, and carrots, respectively. Sprinkle an additional 1/4 cup mozzarella over the other toppings and top the pizza with 1 tablespoon chopped roasted peanuts. Transfer the pizza to the oven. Bake until the crust is crisp and golden and the cheese at the center is bubbly, 9 to 10 minutes. When cooked through, carefully remove the pizza from the oven. Sprinkle 1 tablespoon chopped fresh cilantro over the hot, cheesy surface. Slice and serve. Repeat with remaining ingredients for a second pizza. (The 2 pizzas may be prepared simultaneously if you are careful in placing the pizzas at opposite corners of your pizza stone.)
THAI CHICKEN PIZZA
Steps:
- Preheat the oven to 425°F. Form the pizza crust on a pizza pan or cookie sheet. Top it with duck or plum sauce, spreading it around like you would pizza sauce. Sprinkle the pizza with some red pepper flakes, then top it with the cheese and bell peppers. Bake until golden and bubbly, 15 to 17 minutes.
- In a small bowl, combine the vegetable oil, tamari, and peanut butter with the hot sauce and grill seasoning. Use the microwave to loosen up the peanut butter if it is too cold to blend into sauce; 10 seconds ought to do it. Coat the chicken evenly with the mixture and let it stand for 10 minutes. Preheat a grill pan or nonstick skillet over medium-high heat. Cook the chicken cutlets for 2 to 3 minutes on each side, or until firm. Slice the chicken into very thin strips.
- While the chicken cooks, mix the honey and vinegar in a medium bowl. Add the cucumber and turn to coat in the dressing.
- When the pizza comes out of the oven, top it with the chicken, scallions, sprouts, and cilantro. Drain the cucumbers and scatter them over the pizza. Garnish the pizza with peanuts, cut it into 8 wedges, and serve.

- If you use a 13.7-ounce tube of refrigerator pizza dough you'll get one rectangular pizza; if you prefer to stretch your own into a circle, use up to a 1-pound ball of fresh dough.
