THAI CHICKEN AND CORN SOUP

Thai Chicken and Corn Soup image

This would have to be one of the best soups I have ever tasted, and definately the best chicken and corn soup. It has more flavour than Chinese versions, with the addition of chilli, coriander, ham, and of course sesame oil. I actually use about half the amount of chilli, which still gives it enough flavour without being too spicy for my children.

Provided by micro_ang

Categories     One Dish Meal

Time 35m

Yield 6 serving(s)

Number Of Ingredients 13

2 teaspoons sesame oil
1 chili pepper, diced (or 3-4 teaspoons of preserved chili from a jar)
1 teaspoon fresh ginger, crushed (or can used preserved)
2 bunches shallots, sliced
2 liters chicken stock
2 (420 g) cans creamed corn
3 tablespoons cornflour
4 tablespoons water
2 tablespoons fresh coriander leaves (I use more)
2 egg whites
2 tablespoons water
1 whole bbq chicken, shredded (remove bones, skin, fatty sections)
5 -6 slices ham, chopped

Steps:

  • Heat a large stock pot and add sesame oil.
  • Add chilli, ginger and shallots.
  • Cook, stirring for 1-2 minutes.
  • Add stock and creamed corn then bring to boil.
  • Lower the heat, then mix cornflour and 4 tablespoons of water and add to soup along with coriander. Stir until soup thickens.
  • Simmer for 1 minute.
  • While simmering beat the egg whites and water with a fork, and add to soup in thin stream, stirring constantly.
  • Add chicken and ham, gently reheat and season to taste.
  • Simmer for 5 minutes, stirring occasionally, serve.

RED THAI CURRY CHICKEN SOUP

Red Thai Curry Chicken Soup image

Use boneless, skinless chicken breasts or thighs to make this easy and flavorful soup. Fresh lime juice and plenty of fresh herbs help temper the heat of the curry.

Provided by Food Network Kitchen

Categories     main-dish

Time 50m

Yield 6 servings

Number Of Ingredients 17

2 tablespoons vegetable oil
3 cloves garlic, chopped
One 2-inch piece fresh ginger, peeled and thinly sliced
6 tablespoons Thai red curry paste
8 cups low-sodium chicken broth
One 13.5-ounce can coconut milk
3 tablespoons fish sauce
One 4-inch piece lemongrass, lightly bruised
Kosher salt
Pinch of sugar
2 pounds boneless skinless chicken breast or thighs, thinly sliced
3 ounces dried rice vermicelli noodles
1 small red onion, thinly sliced
1/3 cup cilantro leaves
1 bunch scallions, white and light green parts only, thinly sliced
1/3 cup torn Thai basil leaves
Juice of 1 lime

Steps:

  • Heat the oil in a large pot over medium heat. When it shimmers, add the garlic, ginger, and Thai red curry paste and cook, stirring constantly, until dark red and very fragrant, about 5 minutes. Add the chicken broth, coconut milk, fish sauce, lemongrass, 1 teaspoon salt and a pinch of sugar. Bring the mixture to a boil, then reduce the heat to a simmer and cook, uncovered, until the lemongrass and ginger are tender, about 15 minutes. Discard the lemongrass.
  • Meanwhile, put the noodles in a medium bowl and cover with hot water. Let stand for 10 minutes, then drain and set aside. Toss together the red onion, cilantro, scallions and Thai basil in a medium bowl and set aside.
  • Stir the chicken into the broth and simmer over low heat until tender, 5 minutes for chicken breast and about 15 minutes for chicken thighs. Increase the heat to high and stir in the noodles. Bring the soup to a boil, then immediately remove from the heat. Stir in the lime juice. Serve the soup in bowls topped with the reserved onion and herb mixture.

CHICKEN & SWEETCORN SOUP

Chicken & sweetcorn soup image

Make a stock from roast dinner leftovers to create this chicken and sweetcorn soup. The bone broth adds important minerals and it's low in fat and calories

Provided by Sara Buenfeld

Categories     Dinner, Lunch, Soup, Starter

Time 2h25m

Number Of Ingredients 11

1 chicken carcass
4 thin slices fresh ginger, plus 1 tbsp finely grated
2 onions, quartered
3 garlic cloves, finely grated
2 tsp apple cider vinegar
325g can sweetcorn
3 spring onions, whites thinly sliced, greens sliced at an angle
100g cooked chicken, shredded
2 tsp tamari
2 eggs, beaten
few drops sesame oil, to serve (optional)

Steps:

  • Boil a large kettle of water. Break the carcass into a big non-stick pan and add the ginger slices, onion and two-thirds of the garlic. Cook, stirring, for about 2 mins - the meat will stick to the base of the pan, but this will add to the flavour. Pour in 1.5 litres of boiling water, stir in the vinegar, then cover and simmer for 2 hrs.
  • Put a large sieve over a bowl and pour through the contents of the pan. Measure the liquid in the bowl - you want around 450ml. If you have too much, return to the pan and boil with the lid off to reduce it. Transfer the onion from the sieve to a bowl with three-quarters of the sweetcorn. Blitz until smooth with a hand blender.
  • Return the broth to the pan, and tip in the puréed corn, remaining sweetcorn and garlic, the grated ginger, the whites of the spring onions and the chicken. Simmer for 5 mins, then stir in the tamari. Turn off the heat, and quickly drizzle in the egg, stirring a little to create egg threads. Season with pepper, then ladle into the bowls. Top with the spring onion greens and a few drops of sesame oil, if using.

CHICKEN, SWEETCORN & NOODLE SOUP

Chicken, sweetcorn & noodle soup image

This superhealthy bowl can be made ahead and frozen, ready to be defrosted and used when you need it most

Provided by Good Food team

Categories     Lunch, Main course, Soup

Time 1h45m

Number Of Ingredients 14

2 large carrots , chopped
2 large leeks , trimmed and finely sliced
2 corn on the cobs, corn kernels cut off
200g vermicelli noodles
small bunch parsley , finely chopped
2 onions , quartered
1 leek , cut into chunks
2 carrots , thickly sliced
2 bay leaves
6 black peppercorns
parsley stalks
4 celery sticks, roughly chopped
2 tbsp low-sodium vegetable bouillon or 1 vegetable stock cube
1.3kg chicken

Steps:

  • Put all the stock ingredients and the chicken in a very large saucepan, then cover everything with about 3 litres cold water. Bring to the boil, then lower to a simmer and cook for 1 hr-1½ hrs, until the chicken is cooked through. Skim off any froth every 20 mins or so. Remove the chicken to a plate to cool. Strain the stock through a sieve, skimming off as much fat as you can.
  • Rinse out the pan and put the stock back in, then simmer on a high heat until reduced a little - you need about 2 litres in total. Add the carrots and leeks, then simmer for 10 mins.
  • Meanwhile, shred the meat from the chicken, discarding the skin and bones. Add to the pan with the sweetcorn. Add the vermicelli noodles, unless you want to freeze the soup, and simmer for about 7 mins more, until the corn and pasta is cooked. Ladle into bowls, sprinkled with the parsley. To freeze, allow the soup to cool completely before freezing (see tip), and when you're ready to eat, allow the soup to defrost before bringing it back to a gentle simmer in a pan. Add the noodles and simmer until cooked.

THAI CHICKEN AND SWEET POTATO SOUP

Thai chicken and sweet potato soup image

A smooth and and spicy chicken soup with a vibrant colour that's packed full of Asian aromatics

Provided by Caroline Hire - Food writer

Categories     Dinner, Soup

Time 35m

Yield Serves 2 as a main or 4 as a starter

Number Of Ingredients 15

1 tsp olive or rapeseed oil
2 garlic cloves, chopped
1 red chilli, deseeded and chopped
2cm chunk root ginger, chopped
1 stalk lemongrass, bashed
1 x 25g pack coriander, leaves and stalks chopped separately
2 tbsp red Thai curry paste
750ml chicken stock (made with 2 stock cubes)
1 small can (160ml) coconut cream
500g sweet potato, peeled and roughly chopped
2 skinless chicken breasts, sliced
1 lime, juice only
1 tsp sugar
½ tsp fish sauce
crusty bread, to serve (optional)

Steps:

  • Heat the oil in a large saucepan. Add the garlic, chilli, ginger, lemongrass, coriander stalks and curry paste and cook for 2 - 3 minutes until the aromas are released.
  • Add the chicken stock, coconut cream and sweet potatoes and cook for 15 minutes or until the potatoes are soft. Remove the lemongrass and discard. Carefully transfer to a blender and blitz until smooth. If freezing, for best results freeze at this point, otherwise as an easier option freeze complete recipe.
  • Return to the saucepan, add the chicken and cook gently for 5 - 10 minutes or until the chicken is cooked through. Stir through the lime juice, sugar and fish sauce, scatter with the coriander leaves and serve.
