Classic Thai beef salad recipe is made with grilled beef steak, cucumber, tomato and fresh mint and cilantro herbs. Perfect for low-carb and gluten-free diet.

3/4 lb beef tenderloin, rib-eye, sirloin, or striploin (room temperature)
1 tbsp soy sauce
dashes pepper
2 small cucumber (seeded and sliced)
4 oz cherry tomato (cut in half)
1 shallot (sliced)
1/4 cup mint (loosely packed and torn)
1/4 cup cilantro (loosely packed and torn)
1 1/2 tbsp fish sauce
1 tbsp palm sugar (or light brown sugar)
2 tbsp fresh lime juice
1 fresh red chili (finely minced)

Steps:

  • Season your beef steak with soy sauce and pepper. Let it sit for 15 minutes.
  • Grill your steak over a very hot grill to get the grill marks. Cook to your desired done-ness. Let the steak rest for 5 minutes, then slice thinly across the grain.
  • For the salad dressing, mix together the fish sauce, sugar, lime juice and chili in a small bowl. Taste and adjust sweetness, saltiness and tartness according to your taste.
  • In a large mixing bowl, combine beef, cucumber, tomato, shallot, and herbs. Drizzle about 3 tbsp of dressing and toss together. Taste and add more dressing if needed.

1/2 cup hot water
2 tablespoons vinegar- white or rice wine
1 red onion (divided, see instructions)

3 garlic cloves, rough chopped
4 tablespoons lemongrass, finely minced
1 teaspoon chili flakes, more to taste
16 ounces ground chicken, turkey, beef, lamb,
1/2 teaspoon salt
1/2 teaspoon pepper
--
2 cups cucumber, sliced or diced
2-3 radishes, sliced (or watermelon radish)
3 scallions, thinly sliced
1 tablespoon fresh chili, finely minced (optional, or sub jalapeno, Thai red chili)
1/2 cup chopped cilantro
1/2 cup chopped mint
1/2 cup chopped basil (Thai basil elevates)
2 tablespoons fish sauce
4-5 tablespoons lime juice
1 teaspoon brown sugar, maple, or honey
finely chopped fresh chili- optional!
Serve with lettuce wraps or jasmine rice or both!

Steps:

  • Dice half the onion (you'll need 1 cup diced) and thinly slice 1/4 of the onion ( 1/4- 1/2 cup).
  • Place the sliced onions in a bowl, cover with 1/2 cup hot boiling water and 2 tablespoons vinegar, place in the fridge.
  • Heat oil in a large skillet over medium heat. Add 1 cup diced red onion, saute 3-4 minutes, add garlic, lemongrass and chili flakes. Saute until fragrant, 2-3 minutes. Add the ground meat, breaking it apart with a metal spatula. Season the meat with the salt and pepper and continue cooking until all the liquid releases and evaporates about 10 minutes. Drain the fat from the meat, using a fine-mesh strainer.
  • While the ground meat is cooking, prep the remaining ingredients. Place the cucumber, radish, scallions, mint, basil, cilantro, fresh chili (optional) in a bowl. Add the drained meat and the strained pickled onions. Add the fish sauce, lime juice and sugar. Taste, adjust salt, lime and heat. I'll usually add more chili flakes. or finely diced fresh chilies.
  • Serve with lettuce wraps and/or cooked rice. Serve warm or chilled. ( If chilling, make doubly sure to strain all the fat from the meat -it will harden in the fridge.)

1 cucumber and 1 mooli, ends trimmed, halved widthways and spiralized into thin noodles, then patted fry and any long strands cut in half
1 rump steak (200-250g)
2 tsp groundnut oil or sunflower oil
100g beansprouts
small pack coriander , leaves picked
1 garlic clove , crushed
1 tbsp fish sauce
1 tbsp soft brown sugar
1/2 lime , zested and juiced
1 red chilli , finely chopped (deseeded if you like)

Steps:

  • Mix all the dressing ingredients, stirring until the sugar has dissolved. In a large bowl, toss the cucumber and mooli with half the dressing.
  • Rub the steak with the oil and season on both sides. Heat a frying pan until it is searing hot. Fry the steak for 2-3 mins each side for medium rare. Transfer to a plate to rest.
  • To assemble the salad, pile the vegetables onto plates and mix with the beansprouts and coriander. Top with the steak and remaining dressing.

1/2 to 1 tsp birds eye or Thai Chilli (, very finely sliced (Note 1))
2 garlic cloves
1 tbsp cilantro/coriander stems (, finely chopped)
2 tsp sugar
2 tbsp fish sauce
3 tbsp lime juice
1 tbsp grape seed oil ((or canola or vegetable oil))
7 - 8 oz / 200 - 250 g good quality beef steak - sirloin (, at room temperature (Note 2))
1/2 tbsp oil ((vegetable, peanut or canola oil))
Salt and pepper
2 cups mixed lettuce leaves
1/4 cup cherry tomatoes (, halved)
1/4 small red onion ((spanish onion), very finely sliced)
1/2 cucumber (, cut horizontally then cut into slices (about 1/3 cup))
1/4 cup cilantro/coriander leaves (, lightly packed)
1/4 cup mint leaves (, lightly packed)
1 tbsp peanuts (, roughly chopped)
Extra cilantro/coriander and mint leaves

Steps:

  • Place the birds eye chili, garlic, cilantro stems and a small pinch of salt into a mortar and pestle. Grind until a smooth paste forms.
  • Add the remaining Dressing ingredients. Adjust sugar, lime juice and fish sauce to taste. Set aside.
  • Alternative: Finely mince garlic, coriander and chilli. Use side of knife to smear into paste on cutting board, then shake in jar with remaining ingredients.
  • Preheat a skillet over high heat until screaming hot and smoking.
  • Drizzle the beef with 1/2 tbsp of oil on both sides, then sprinkle with a good pinch of salt and pepper. Cook the beef to your liking (Note 2).
  • Cook times: for steak 2cm / 4/5" thick, 2 min on each side for medium rare (until internal temp is 52°C/125°F) OR 2 1/2 min each side for medium (internal temp 57°C/135°F).
  • Remove the beef from the skillet onto a plate. Loosely tent with foil and set aside for 10 minutes to rest.
  • Place lettuce in a bowl, drizzle with 1 tbsp Dressing and toss.
  • Slice the beef thinly against the grain (Note 2) and place in a bowl with the remaining Salad ingredients. Dress with most remaining Dressing and toss gently.
  • Pile dressed lettuce onto plate(s), pile over beef and other salad ingredients.
  • Sprinkle with peanuts and garnish with extra cilantro/coriander and mint leaves if using, drizzle with remaining Dressing. Serve immediately!

1 pound top-round London broil or flank steak, about 1 to 1 1/2-inches thick
3 tablespoons lime juice, divided
3 tablespoons low-sodium soy sauce
3 tablespoons canola oil
2 tablespoon brown sugar
1 teaspoon minced garlic
1 1/2 teaspoons minced ginger
1 1/4 teaspoons red curry paste or chili-garlic sauce
1/2 head red-leaf lettuce, torn (about 6 cups)
3 shallots, thinly sliced (about 1/2 cup), divided, for garnish
1/2 cup cilantro leaves, rinsed and dried
1 cup basil leaves, sliced into ribbons

Steps:

  • Rinse and pat the meat dry. Place in a sealable plastic bag or small glass dish. In a medium bowl combine 1 tablespoon of the lime juice, soy sauce, canola oil, brown sugar, garlic, ginger and red curry paste. Pour half the mixture into the bag with the meat. Add the remaining 2 tablespoons lime juice to the bag. Seal tightly, and marinate meat in refrigerator at least 4 hours or overnight, turning occasionally. Reserve the rest of the mixture refrigerated, to dress the salad.
  • Spray grill or grill pan with cooking spray and preheat. Grill steak until medium-rare, about 5 minutes per side, depending on desired doneness. Let rest until room temperature then slice thinly against the grain.
  • Combine lettuce, sliced shallot, cilantro, basil and beef in a salad bowl, reserving a few shallots for garnish. Add the reserved dressing and toss to coat. Divide salad among 4 plates and garnish with reserved sliced shallots.

2 tablespoons oyster sauce
1 1/2 teaspoons freshly ground black pepper
2 tablespoons fish sauce
2 tablespoons palm sugar or brown sugar
1 pound flap beef, at room temperature
Butter or oil, for cooking
7 whole fresh Thai chiles or jalapeno chiles (to taste)
1 clove fresh garlic
3 tablespoons fresh lime juice
1 teaspoon shrimp paste
1 scallion, cut on the bias into 1 1/2-inch-long pieces
1/2 cucumber, thinly sliced
1/2 white onion, thinly sliced
1 medium ripe tomato, sliced
3 to 4 stems fresh cilantro
1/2 head iceberg lettuce, thinly sliced

Steps:

  • In a small bowl, combine the oyster sauce, black pepper, 1 tablespoon fish sauce and 1 tablespoon sugar. Place the beef in a large bowl and rub with the mixture. Allow the beef to marinate for a couple minutes.
  • Add butter or oil to a pan and place the pan over high heat. Cook the meat until the surface begins to caramelize, 4 minutes per side for medium-rare. Continue cooking until the meat reaches the desired doneness. Let the meat rest on a cutting board.
  • Meanwhile, crush the chiles and garlic with a mortar and pestle. Then, in a large bowl, combine the crushed garlic and chiles, lime juice, shrimp paste, remaining tablespoon sugar and remaining tablespoon fish sauce and mix until well combined. Thinly slice the cooled beef and toss with the dressing. Add the scallions, cucumbers and onions and toss to combine. Add the tomatoes, tossing carefully so they don't smash. Arrange the salad on a large plate, then top with the cilantro and serve with the lettuce either on the side or placed directly under the beef.

1/2 cup soy sauce
1/2 cups brown sugar
1 cup chopped ginger
1 tablespoons chopped garlic
1 cups rice wine vinegar
12 ounces strip steak
6 cups shredded savoy cabbage
1 cup shredded purple cabbage
2 green onions, chopped
1 cup chopped cilantro
2 tablespoons black sesame seeds
1 cup deep fried won ton strips

Steps:

  • Preheat oven to 400 degrees F.
  • In a small bowl, combine the soy sauce, brown sugar, ginger, garlic, and vinegar. Set aside at room temperature.
  • Generously brush the meat with some of the dressing and place on a baking sheet. Roast meat for about 30 minutes. Remove from oven and cool.
  • When the meat is cool, cut into 1/4-inch strips. In a large bowl, combine the savoy and purple cabbage. Add the green onion and cilantro. Add the beef and enough dressing to thoroughly moisten. Add 1 1/2 tablespoon of the sesame seeds and toss again. Put on a plate. Top with remaining sesame seeds and the fried won tons.

Rocket (arugula)
Sliced scallions

300g rump steak , trimmed of fat
2 tsp groundnut oil
juice 1 lime
1 red chilli , deseeded and sliced (bird's-eye chillies work well)
1 tbsp light brown soft sugar
85g bag baby leaf salad
140g beansprouts
140g red grapes , halved
steamed rice , to serve (optional)

Steps:

  • Rub the steak with 1 tsp oil and season. Fry in a hot pan for 2-2½ mins each side (depending on thickness), for medium rare. Transfer to a plate, cover loosely with foil and rest for 5 mins.
  • Make the dressing by mixing the lime juice, chilli, sugar and remaining oil in a bowl. Set aside until the sugar dissolves.
  • Divide the salad leaves, beansprouts and grapes between 2 serving bowls. Thinly slice the steak and add the juices to the dressing. Drizzle this over the salads, toss with the sliced beef and serve immediately with rice, if you like.

2 teaspoons minced peeled fresh ginger
1 garlic clove, minced
1 lb boneless sirloin steak, cut diagonally across grain into thin slices
1 1/2 tablespoons fresh lime juice
1 tablespoon fish sauce
2 teaspoons sugar
cooking spray
2 cups sliced radishes
1/4 cup chopped fresh cilantro
2 tablespoons chopped of fresh mint
1 serrano chili, seeded and finely chopped

  • Combine chile paste, ginger, and garlic in a large zip-top plastic bag; add steak, tossing to coat. Marinate in refrigerator 30 minutes, turning once.

  • Heat a large nonstick skillet coated with cooking spray over medium-high heat. Remove steak from bag; discard marinade.

  • Pour lime juice mixture over beef mixture, tossing to coat. Spoon about 1/3 cup salad into each lettuce leaf, and serve immediately.
