2 tablespoons extra-virgin olive oil
2 ounces deli-sliced hot capicola or coppa ham, chopped
1/2 red onion, chopped
5 cloves garlic (4 minced, 1 whole)
2 carrots, halved lengthwise and thinly sliced
2 stalks celery, thinly sliced
1 15-ounce can no-salt-added cannellini beans
1 15-ounce can no-salt-added petite diced tomatoes
2 tablespoons grated parmesan cheese, plus 1 small pieceparmesan rind
Kosher salt and freshly ground pepper
4 thick slices whole-grain bread
1 small head escarole, chopped

Steps:

  • Heat 1 tablespoon olive oil in a large heavy-bottomed pot over medium-high heat. Add the capicola, red onion and minced garlic. Cook, stirring, until the onion softens, about 2 minutes. Add the carrots and celery. Cook, stirring, until slightly softened, about 5 minutes. Add the beans, tomatoes, 2 cups water, the parmesan rind, 1/2 teaspoon salt and a few grinds of pepper. Bring to a simmer, then cover and cook until the vegetables are tender, 15 to 20 minutes. Remove the parmesan rind.
  • Meanwhile, lightly toast the bread; rub both sides with the whole garlic clove and sprinkle with grated parmesan. Stir the escarole into the soup and cook, stirring occasionally, until wilted, about 5 minutes. Top each serving of soup with a piece of toast. Drizzle with the remaining 1 tablespoon olive oil.

2 teaspoons dried oregano leaves
1 teaspoon ground cumin (optional)

1/2 teaspoon garlic salt
12 regular-size tortilla chips, coarsely crushed
1 1/4 cup uncooked small to medium-size pasta (such as wheels, shells, macaroni)

Steps:

  • Pour gravy mix into wide-mouth pint jar. In small bowl, stir together chili powder, oregano, cumin, onion and garlic salt. Pour into jar to make second layer. Add layers of tortilla chips and pasta to fill jar. Seal with lid. Attach gift tag with preparation instructions and decorate jar as desired. Gift Tag: Brown 1/2 pound ground beef in a large saucepan or Dutch oven. Add contents of jar and 7 cups water; heat to boiling. Stir in 1 can (15 oz size) corn with red and green bell peppers and 1 can (16 oz size) chopped tomatoes. Reduce heat; cover and simmer for 20 to 25 minutes or until pasta is tender, stirring occasionally. Serve with additional crushed tortilla chips and shredded Monterey Jack cheese, if desired. 1 (1 ounce) package ranch dressing mix

Steps:

  • In a large pot over medium heat, cook beef until brown. Stir in onion and cook a few minutes more. Drain.
  • Stir in pinto beans, corn, diced tomatoes with green chiles, serrano peppers, taco seasoning and ranch dressing mix. Fill the pot with water to come within two inches of the top. Bring to a boil for 30 minutes, stirring occasionally, then reduce heat and simmer 30 minutes more.

1/2 pound dried great northern beans
1 can (49-1/2 ounces) reduced-sodium chicken broth
1-1/2 cups cubed fully cooked lean ham
1 medium onion, chopped
2 celery ribs with leaves, chopped
2 medium carrots, sliced
3 garlic cloves, minced
1/8 teaspoon ground ginger
2 green onions, sliced

Steps:

  • Place beans in a large saucepan or Dutch over; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour., Drain and rinse beans, discarding liquid. Return beans to pan. Add broth and ham; bring to a boil. Reduce heat; cover and simmer for 1 hour. 1 (15 1/2 ounce) can black-eyed peas, drained or 1 1/2 cups cooked black-eyed peas

1/4 cup barbecue sauce

Steps:

  • In a soup pot, combine the onions and garlic with the oil and salt.
  • Cover and cook on medium heat for 8-10 minutes, or until the onions are soft and translucent, stirring occasionally.
  • Add the celery, bell peppers, chile, oregano, thyme, cumin, and black pepper and saute for 10 minutes, stirring often.
  • Add the water and tomatoes, cover and simmer until the vegies are tender, 10-15 minutes.

6 drops bottled hot pepper sauce

Steps:

  • Gather the ingredients.
  • In a 2-quart bean pot or casserole, cover pinto beans with 6 cups of water; soak overnight.
  • Drain the water from the beans. Cover the beans with 6 cups of fresh water; add salt pork, onion, and garlic to the beans.

3 can(s) ro-tel tomatoes with green chilies
1 can(s) hominy, yellow or white, or whole kernel corn, undrained
1 pkg taco seasoning

1 medium onion, chopped

Steps:

  • 1. Brown ground beef with onion and drain off fat. Mix all other ingredients and put in slow cooker until it is heated. Add beef mixture to slow cooker mixture. Stir occasionally. Make some cornbread muffins, break up in bowl and ladle over and enjoy.
