Steps:
- Heat 1 tablespoon olive oil in a large heavy-bottomed pot over medium-high heat. Add the capicola, red onion and minced garlic. Cook, stirring, until the onion softens, about 2 minutes. Add the carrots and celery. Cook, stirring, until slightly softened, about 5 minutes. Add the beans, tomatoes, 2 cups water, the parmesan rind, 1/2 teaspoon salt and a few grinds of pepper. Bring to a simmer, then cover and cook until the vegetables are tender, 15 to 20 minutes. Remove the parmesan rind.
- Meanwhile, lightly toast the bread; rub both sides with the whole garlic clove and sprinkle with grated parmesan. Stir the escarole into the soup and cook, stirring occasionally, until wilted, about 5 minutes. Top each serving of soup with a piece of toast. Drizzle with the remaining 1 tablespoon olive oil.

- Pour gravy mix into wide-mouth pint jar. In small bowl, stir together chili powder, oregano, cumin, onion and garlic salt. Pour into jar to make second layer. Add layers of tortilla chips and pasta to fill jar. Seal with lid. Attach gift tag with preparation instructions and decorate jar as desired. Gift Tag: Brown 1/2 pound ground beef in a large saucepan or Dutch oven. Add contents of jar and 7 cups water; heat to boiling. Stir in 1 can (15 oz size) corn with red and green bell peppers and 1 can (16 oz size) chopped tomatoes. Reduce heat; cover and simmer for 20 to 25 minutes or until pasta is tender, stirring occasionally. Serve with additional crushed tortilla chips and shredded Monterey Jack cheese, if desired. Makes 8 servings.

- Place beans in a large saucepan or Dutch over; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour., Drain and rinse beans, discarding liquid. Return beans to pan. Add broth and ham; bring to a boil. Reduce heat; cover and simmer for 1 hour. - In a soup pot, combine the onions and garlic with the oil and salt.
- Cover and cook on medium heat for 8-10 minutes, or until the onions are soft and translucent, stirring occasionally.
- Add the celery, bell peppers, chile, oregano, thyme, cumin, and black pepper and saute for 10 minutes, stirring often.
- Add the water and tomatoes, cover and simmer until the vegies are tender, 10-15 minutes.
- Add the black-eyed peas, your choice of beans, and the barbecue sauce.

TEXAS STYLE BEANS RECIPE WITH PINTO BEANS

- Gather the ingredients.
- In a 2-quart bean pot or casserole, cover pinto beans with 6 cups of water; soak overnight.
- Drain the water from the beans. Cover the beans with 6 cups of fresh water; add salt pork, onion, and garlic to the beans.
- Bring the beans to a simmer and cover. Cook on medium-low heat, covered, for 2 hours.
- Stir in salt, pepper, tomatoes, green pepper, sugar, and hot pepper sauce.
- Cover and simmer on low heat for 3 hours more.
- Serve beans with cornbread wedges or hot cooked rice.

- 1. Brown ground beef with onion and drain off fat. Mix all other ingredients and put in slow cooker until it is heated. Add beef mixture to slow cooker mixture. Stir occasionally. Make some cornbread muffins, break up in bowl and ladle over and enjoy.

- Frito® Pie. I think the only place in the world you can get real Frito® Pie is in Texas! Maybe you don't even know what it is! You could be living in Cincinnati, for instance, and think you have some real chili.
- Enchiladas and State Fair Corn Dogs. I really had two choices here that I couldn't decide on. Tex-Mex food is really good, and homemade enchiladas are an excellent choice for the ninth best Texas food.
- Pecan Pie! I hear cute little cup cakes may be on their way out as a fad food and that pies are going to be the next big thing in bakery treats! Well, you don't have to go far to find the very best pie ever invented, the Texas Pecan Pie!
