TEXAS RANCH GUMBO

Texas Ranch Gumbo image

This was a most favorite recipe 40 years ago...my family loved it! I just found the hand-written recipe tonight. I always doubled the ingredients because my family loved it so much. If you double it, you will need a large pot to cook this in. I always used a black iron dutch oven (pot). It will serve 8 - 10.

AUTHENTIC NEW ORLEANS STYLE GUMBO

Authentic New Orleans Style Gumbo image

This Authentic New Orleans Gumbo is made with a dark roux, vegetables, chicken, sausage, and shrimp, and served over rice.

Provided by Lauren Allen

Categories     Main Course     Soup

Time 1h20m

Number Of Ingredients 14

1 heaping cup all-purpose flour
2/3 cup oil ((vegetable or canola oil))
1 bunch celery (, diced, leaves and all)
1 green bell pepper (, diced)
1 large yellow onion (, diced)
1 bunch green onion (, finely chopped)
1 bunch fresh parsley leaves (, finely chopped)
2-3 cloves garlic
1-2 Tablespoons cajun seasoning (*)
6-8 cups Chicken broth (*)
12 ounce package andouille sausages (, sliced into 'coins' (substitute Polska Kielbasa if you can't find a good Andouille))
Meat from 1 Rotisserie Chicken*
2 cups Shrimps (, pre cooked)
cooked white rice (for serving)

Steps:

  • Make the Roux*: In a large, heavy bottom stock pot combine flour and oil. Cook on medium-low heat, stirring constantly for 30-45 minutes. This part takes patience--when it's finished it should be as dark as chocolate and have a soft, "cookie dough" like consistency. Be careful not to let it burn! Feel free to add a little more flour or oil as needed to reach this consistency.
  • Brown the sausage. In a separate skillet on medium-high heat place the sausage slices in one layer in the pan. Brown them well on one side (2-3 minutes) and then use a fork to flip each over onto the other side to brown. Remove to a plate.
  • Cook the vegetables in broth. Add 1/2 cup of the chicken broth to the hot skillet that had the sausage to deglaze the pan. Pour the broth and drippings into your large soup pot.
  • Add remaining 5 1/2 cups of chicken broth. Add veggies, parsley, and roux to the pot and stir well.
  • Bring to a boil over medium heat and boil for 5-7 minutes, or until the vegetables are slightly tender. (Skim off any foam that may rise to the top of the pot.) Stir in cajun seasoning, to taste.
  • Add meat. Add chicken, sausage, and shrimp.
  • Taste and serve. At this point taste it and add more seasonings to your liking--salt, pepper, chicken bullion paste, garlic, more Joe's stuff or more chicken broth--until you reach the perfect flavor. Serve warm over rice. (Tastes even better the next day!)

Provided by Joanna_Allene

Categories     One Dish Meal

Time 4h

Yield 12 12 quarts, 12-14 serving(s)

Number Of Ingredients 17

3 lbs cubed cooked chicken (boiled)
1 (49 ounce) can chicken broth
1 (26 ounce) carton chicken stock
2 (28 ounce) cans petite diced tomatoes
2 (16 ounce) cans black beans
1 (4 ounce) can diced green chilies
1 large white onion, diced
3 -4 garlic cloves, diced
2 tablespoons olive oil
1 (1 1/4 ounce) packet ranch dip mix
3 cups cooked white rice
1 large limes or 2 small limes
diced fresh cilantro
sour cream (garnish)
shredded Mexican blend cheese (garnish)
avocado (garnish)
corn tortilla strips (garnish)

Steps:

  • Cilantro Lime Rice: Prepare enough white rice to yield 3 cups cooked rice. Zest 1 large (or 2 small) limes over cooked rice. Add the juice of the lime/limes. Add in diced cilantro. Mix together thoroughly and cover, let sit for 1 hour to set.
  • Boil 3lbs of chicken. Let cool, then cube. Set aside.
  • In a skillet, sweat diced onion and garlic in olive oil over low heat until they are translucent and have a soft texture. Set aside.
  • Dump both cans black beans into colander and rinse. Set aside.
  • In large cooking pot, combine chicken broth, chicken stock, petit diced tomatoes, black beans, green chilies, cubed chicken, onions and garlic, and packet of ranch dip mix. After the rice has set, add it to the pot. Cook over medium heat, stirring occasionally, for one hour, or until soup is desired temperature.
  • Serve garnished with sour cream, shredded Mexican cheese, diced avocado, and tortilla strips.

  • To make your roux, in a large cast-iron skillet, mix the flour and the oil or grease. Place in an oven set at 350°F and let it cook for 2 hours (or until your desired color), stirring every 20 minutes.
  • While the roux is cooking, make the chicken and broth. First, season the chicken parts with the salt, black pepper and Cayenne. Place the chicken parts in a large pot with the quartered onions, whole garlic, quartered celery, bay leaves. Cover with water. Bring to a boil then turn the heat down to low and simmer for 1 hour.
  • After an hour, remove the chicken from the pot. When cool enough to handle, remove the fat and pick the meat off the bones and cut into pieces. Meanwhile, when the broth is cool enough to handle, strain the broth, discarding the vegetables. You should have about 8 quarts.
  • Clean the pot, then add 1 tablespoon of canola oil. Add the diced onions, celery, and bell pepper, and while stirring occasionally, cook for 10 minutes or until fragrant. Throw in the minced garlic and cook for 30 more seconds. Now stir in the roux and cook it with the vegetables for 5 minutes, stirring every so often. Add the chicken meat and sausage and cook for 15 minutes, stirring occasionally. If things start to get sticky, pour in some water.
