This is the basically the same recipe as my Recipe#135656 OAMC BBQ Sauce but in this one I give you instructions and ingredients for a much smaller quantity, 6 cups (1 1/2 quarts) instead of gallons! lol There have been so many arguments started over whose has the best sauce- but we all know Mama's is best! lol

2 tablespoons butter
1 small onion, chopped
4 cups ketchup (32 oz)
2 cups tomato sauce (16 oz)
1/2 teaspoon salt
1/2 teaspoon seasoning salt
1 teaspoon pepper
2 garlic cloves, chopped
4 1/2 teaspoons sugar
1 1/2 teaspoons chili powder
1 tablespoon Worcestershire sauce
1 tablespoon lemon juice (I use fresh)
1 jalapeno, finely chopped- adjust to taste

Steps:

  • Saute onion in butter until clear.
  • Add garlic and sauté for 1 minute.
  • Add all other ingredients and simmer for at least 30 minutes. *I throw the lemon in after I have squeezed the juice out and remove before serving.
  • Taste and adjust seasoning as desired.

1 tablespoon butter
1 small onion, chopped
2 garlic cloves, minced
1 cup ketchup
1/4 cup packed brown sugar
1/4 cup lemon juice
2 tablespoons apple cider vinegar
2 tablespoons tomato paste
1 tablespoon yellow mustard
1 tablespoon Worcestershire sauce
2 teaspoons chili powder

Steps:

  • In a large saucepan, heat butter over medium heat. Add onion; cook and stir 2-3 minutes or until tender. Add garlic; cook 1 minute longer. Stir in remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, 15-20 minutes to allow flavors to blend.

The Real Texas BBQ sauce recipe consists of traditional variations of the same basic recipe, mostly served at home, or at local, low-key restaurants, the same way they once were served to locals in ranches and saloons.

1 cup ketchup or pureed tomatoes. If using tomato paste, use ½ cup paste and ¼ cup water.
1 cup Worcestershire sauce
1 cup coffee grounds (I use Moca Java)
2 cups chopped (white) onions
6 cloves minced garlic
¼ cup red hot chili peppers, chopped
1/2 cup brown sugar
1/2 cup cider vinegar
3 TBSP chili powder and 3 TBSP pepper flakes
2 teaspoons salt

Steps:

  • First, mix the ground coffee, chili peppers, pepper flakes, salt, and sugar, and blend well.
  • Separately, mix the tomato paste with the other wet ingredients which are vinegar, Worcestershire sauce, garlic and onions.
  • Combine the dry and wet ingredients in a sauce pan, and simmer for about 20 minutes on low heat.
  • Puree all the ingredients together, and then go back and simmer the mix again.
  • Allow for the sauce to thicken, or serve at room temperature.

Steps:

  • Combine the beef stock, ketchup, onion, bacon drippings, 1/4 teaspoon salt and 1/2 to 1 teaspoon pepper in a medium pot. Bring to a boil, then reduce the heat to medium low and simmer until the onion is tender, about 10 minutes. Remove from the heat and set aside to let the flavors develop, at least 1 hour. Reheat the sauce before serving.

Sweet and Spicy BBQ Sauce (Texas Style) image

4 slices bacon, chopped
1/2 cup finely diced onions
2 cloves garlic, minced
One 6-ounce can tomato paste
1 cup beef stock
1/2 cup loosely packed brown sugar
1/4 cup apple cider vinegar
1 teaspoon ground cumin
1/2 to 1 teaspoon cayenne pepper
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • In a medium pot, cook the bacon over medium-low heat until crispy, 8 to 10 minutes. Remove to a plate lined with a paper towel to drain, then eat the bacon as a snack.
  • Add the onions to the pot with the bacon grease and cook over medium-low heat until the onions start to caramelize, 6 to 8 minutes. Add the garlic and cook another 2 minutes. Add the tomato paste and cook, stirring occasionally, another 3 minutes. Whisk in the stock, sugar, vinegar, cumin, cayenne, salt and pepper and bring to a simmer. Cook until thickened, 15 to 20 minutes.
  • Let cool to room temperature before using. This sauce is great on brisket or beef ribs.

100g dark muscovado sugar
1 tbsp Worcestershire sauce
1 tsp smoked paprika
juice ½ orange
2 tsp liquid smoke (optional, we used Stubb's Hickory Liquid Smoke, available from Waitrose)
1 garlic clove , crushed
15g butter

Steps:

  • Combine the ingredients in a saucepan, then season. Bring to the boil and bubble for 3-4 mins until the sugar and salt have dissolved and the sauce is glossy. Remove from the heat, transfer to a jar, and leave to cool. Will keep in the fridge for up to 2 weeks.

  • Put all ingredients, except cilantro and chives, and cook on low to medium heat for two hours, stirring every 10 minutes. Add cilantro and chives when ready to use.

Ok, in TEXAS we do NOT cook with sauce! It is only used as a condiment to top anything we want or to dip things in. There have been so many arguments started over whose is best- but we all know Mama's is best! This makes a bucket load so use the tool to change the number of servings or freeze, can or give away the rest. "Samantha in UK states that this is not safe to can as it has butter in it. I have never had a problem but please be aware of that info. If you are concerned please try substituting with ButterBuds / Molly McButter type butter substitute or do not can. Freezing is another option as well " If you do decide to can this use a Boiling Water Bath, process half-pints and pints for 20 minutes at 0-1000 feet in elevation, 25 minutes for more elevation.

1/2 teaspoon cumin seeds
1/3 cup neutral tasting oil, such as safflower
2 onions, diced (about 5 cups)
8 cloves garlic, minced
Coarse salt and freshly ground pepper
2 teaspoons chile powder
1/3 cup unsulfured molasses
3/4 cup packed dark-brown sugar
2 cans (28 ounce) crushed tomatoes, plus 2 1/2 cups reserved juice
1 1/2 cups cider vinegar
3 tablespoons white vinegar, plus more to taste
2 tablespoons Worcestershire sauce

Steps:

  • Heat a dry skillet over medium-high until hot. Add coriander and cumin seeds and cook, swirling pan occasionally, until fragrant and toasted, about 1 minute. Let cool, then grind in a spice grinder or mortar and pestle.
  • Heat oil in a large pot over medium heat. Add onions and saute until translucent and tender, stirring occasionally, about 10 minutes. Add garlic, 1 teaspoon salt, 1/2 teaspoon pepper, spices, molasses, and brown sugar; stir to combine. Cook, stirring frequently, 3 minutes. Add tomatoes, reserved juice, and cider vinegar and bring to a simmer. Reduce heat to medium-low and simmer gently, stirring occasionally, until mixture is thick and dark, about 1 hour.
  • Let cool slightly then puree sauce in a blender. Add white vinegar and Worcestershire; puree until smooth. Season to taste with additional salt, pepper, and white vinegar. Sauce can be refrigerated up to 3 days in an airtight container; let cool completely before storing, and reheat over medium before serving.

My Favorite Texas BBQ Sauce image

This is a sweet and tangy BBQ sauce recipe perfect for brisket or ribs or anything. I have tried quite a few and this is by far the best I've made. Hope you like it. Original recipe found in Celebrating Barbecue by Dotty Griffith. For better flavor you can sub 1/4 cup pan drippings from bbq for the butter.
