Thank Oklahoma for this easy, bright and tangy salad. It's made with one of the state's staple crops, black-eyed peas -- or cowpeas as some in the "Sooner State" like to say. With bursts of corn, tomato and pepper, it's a salad that can be served cold or at room temperature, making it perfect for a picnic or tailgate party.

3 tablespoons cider vinegar
2 tablespoons finely chopped pickled jalapeno plus 1 tablespoon brine
1 teaspoon honey
Kosher salt and freshly ground black pepper
5 tablespoons extra-virgin olive oil
One 15-ounce can black-eyed peas, rinsed and drained
One 15-ounce can black beans, rinsed and drained
1 cup frozen corn, thawed
1/2 cup roughly chopped fresh cilantro
4 scallions, chopped
2 plum tomatoes, seeded and chopped
1 red bell pepper, stemmed, seeded and chopped
Tortilla chips, for serving

Steps:

  • Whisk together the vinegar, pickled jalapeno brine, honey, 1/2 teaspoon salt and several grinds of pepper in a large bowl. Whisk in the oil to make a smooth dressing.
  • Add the black-eyed peas, black beans, corn, cilantro, pickled jalapeno, scallions, tomatoes and bell pepper. Toss to coat in the dressing. Season to taste with additional salt and pepper. Cover and refrigerate at least 1 hour to blend the flavors before serving. Serve with tortilla chips for scooping.

Jalapeno provides a kick, but you can remove the seeds or omit it altogether for less heat.

3/4 cup apple cider vinegar
1/2 cup vegetable oil
1 tablespoon water
1/2 cup sugar
1 teaspoon kosher salt
1 teaspoon freshly ground pepper
One 15-ounce can black-eyed peas, rinsed and drained
One 15-ounce can black beans, rinsed and drained
One 15-ounce can corn, drained
1/2 cup finely chopped red onion
1 green bell pepper, finely chopped
1 red bell pepper, finely chopped
1/4 cup finely diced jalapeno (remove seeds for less heat)
Tortilla chips, for serving

Steps:

  • Combine the vinegar, oil, water, sugar, salt and pepper in a medium saucepan over medium-low heat. Whisk together and simmer for 3 minutes then remove from the heat. Set aside to cool.
  • Meanwhile, combine the black-eyed peas, black beans and corn in a large bowl. Add the onion, bell peppers and jalapeno, then pour in the dressing and stir until well combined.
  • Serve the Texas caviar immediately with tortilla chips or cover and refrigerate for up to 24 hours.

2 (15 ounce) cans black beans, rinsed and drained
2 (15 ounce) cans pinto beans, rinsed and drained
2 (15 ounce) cans white corn, rinsed and drained
1 (4 ounce) can chopped green chiles, undrained
1 jalapeno chile pepper, seeded and finely chopped
1 red bell pepper - cored, seeded and finely chopped
1 green bell pepper - cored, seeded and finely chopped
1 small red onion, finely chopped
1 bunch cilantro leaves, finely chopped
½ cup rice vinegar
½ cup olive oil
⅓ cup white sugar
½ teaspoon garlic powder

Steps:

  • Mix the black beans, pinto beans, white corn, green chiles, jalapeno pepper, red and green bell peppers, red onion, and cilantro together in a large bowl.
  • To make the dressing, stir the rice vinegar, olive oil, sugar, and garlic powder together in a pan. Bring to a boil, then remove from heat, and cool. Pour dressing over bean mixture, and toss to mix evenly.

This dip/salsa is fresh, delicious and nutritious. Everyone loves it, except my SIL who has an strange bean phobia. It's one of my most requested recipes.

2 cans Rotel tomatoes & chilies, mild,original or hot,your choice,drained well
2 cans black-eyed peas, drained and rinsed
2 -3 large green peppers, diced small
2 cups sweet onions, diced small
1 bunch cilantro, finely chopped
1 (8 ounce) bottle kraft zesty Italian dressing
your favorite tortilla chips, for dipping

Steps:

  • Place all ingredients in a large bowl and mix well.
  • Cover and place in refrigerator to marinate for a minimum of 2 hours.
  • It's best made the day before, but my DH has been know to eat a big bowl full right away.

Cowboy caviar is a wonderful appetizer on its own, which I often serve with tortilla chips in place of salsa. But when combined in a cheesy quesadilla ... it's next level!

1/4 cup olive oil, plus more for the grill
2 to 3 ears fresh corn, husked
One 15-ounce can black beans, rinsed and drained
2 to 3 avocados, diced
1 bunch cilantro, chopped
2 Roma tomatoes, chopped or 1/2 container cherry tomatoes, quartered
2/3 cup chopped scallions
1/4 cup fresh lime juice
2 cloves garlic, minced
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
4 large flour tortillas (burrito-size)
Safflower oil or other neutral oil with a high smoke point, for frying
2 cups freshly grated pepper jack cheese

Steps:

  • For the cowboy caviar: Preheat a grill pan over high heat or prepare a grill for high heat and oil the grill grates. Place the corn on the grill pan or grill and cook, turning, until charred in spots, about 8 minutes. Transfer to a cutting board.
  • When the corn is cool enough to handle, cut off the kernels and put in a medium bowl. Add the black beans, avocado, cilantro, tomatoes and scallions.
  • Put the lime juice, olive oil, garlic and cumin in a small bowl. Season with salt and whisk together. Pour the dressing over the vegetable mixture and gently toss until coated. Allow to sit for 30 minutes.
  • For quesadillas: Lay the tortillas on a work surface. Brush one side of each tortilla with oil. Flip and top one side of each tortilla in this order: 1/4 cup cheese, a healthy helping of cowboy caviar and 1/4 cup cheese. Fold the tortillas over the filling and gently press.
  • Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat. Working in two batches, cook the quesadillas until the cheese melts and the tortilla is lightly browned, about 2 minutes per side.
  • Cut into wedges and serve with more cowboy caviar. Enjoy!

1 red onion
1 jalapeno
1 green pepper
1 red pepper

1 cup Splenda sugar substitute
3/4 cup apple cider vinegar
1 teaspoon black pepper
3 garlic cloves

Steps:

  • Chop up all the peppers,onion and cilantro.
  • Put the oil, black pepper, splenda & apple cider vinegar in a saucepan. Bring to a boil and simmer until the splenda dissolves. Cool.
  • Mix together all the other ingredients and pour cooled oil over.
  • Refrigerate overnight.
  • Serve with tostito scoops.

Last night I told her I couldn't leave Rexburg without her salsa recipe so here it is. The recipe makes enough to feed our entire church, so you could cut the recipe in half or thirds.

14 roma tomatoes
2 bunches green onions
1 bunch cilantro
1 yellow pepper
1 orange bell pepper

1 jalapeno (finely chopped, to your taste)
2 (14 ounce) cans black olives (chopped)
4 garlic cloves (minced)
1 (24 ounce) bottle Italian salad dressing (drain off oil)
3 (14 ounce) cans white shoepeg corn (no substitutes)
2 tablespoons white vinegar
2 tablespoons cavendars all purpose Greek seasoning
2 tablespoons sugar

Steps:

  • Chop tomatoes, peppers, and olives into very small pieces.

1 yellow bell pepper
1 orange bell pepper
1 red bell pepper
2 jalapeno peppers
1 (15 ounce) can black-eyed peas
1 (15 ounce) can black beans
1 (11 ounce) can white shoepeg corn
1 (16 ounce) bottle Italian dressing
4 roma tomatoes
1 bunch cilantro

Steps:

  • Remove membranes and seeds from peppers.
  • Dice peppers and place in a large plastic bowl (jalapenos should be finely chopped).
  • Drain and rinse the black beans, blackeye peas, and shoepeg corn and add to peppers.
  • Add italian dressing and stir well.
  • Cover and marinate in refrigerator for 8 hours.
  • Drain.
  • Dice roma tomatoes and cilantro and stir into mixture.
  • Serve with tortilla chips.

3 cups black-eyed peas, pre-cooked or 2 (15 ounce) cans black-eyed peas, drained
1 medium onion, finely chopped
2 (4 1/4 ounce) cans chopped black olives
2 medium tomatoes, diced
2 jalapeno peppers, stems and seeds removed
2 tablespoons red wine vinegar
1 tablespoon olive oil
1 clove garlic
1 lime, juice of
1 avocado, chopped

Steps:

  • Place peas in a colander and rinse off juice.
  • Drain well.
  • Combine black-eyed peas with next 3 ingredients in a medium size mixing bowl.
  • Place jalapeno peppers, vinegar, oil, garlic clove, lime juice and avocado into blender and combine until smooth.
  • Add avocado mixture to pea mixture and combine well.
  • Add salt to taste.
  • Chill for a minimum of 2 hours.
  • Serve with tortilla chips or corn chips.
