BEEF KABOBS
Tasty, boldly flavored beef kabobs are seasoned with chili powder, garlic, and cumin.

Steps:
- If using wooden skewers, soak them in water for 30 minutes. I prefer to use metal skewers.
- Place the beef cubes in a large bowl. Add the remaining ingredients and use your hands or a large spoon to mix well.
- Thread the seasoned beef cubes on the skewers and place them on a large rimmed broiler-safe baking sheet. You can line the baking sheet with foil for easier cleanup.
- Heat your broiler on high (450-500 degrees F).
- When the broiler is hot, broil the kabobs, directly under the heating element (4 inches below), until cooked to your liking. I broil them for 3 minutes on each side. Serve immediately.

- Heat greased grill to medium heat.
- Microwave peppers and onions in microwaveable bowl on HIGH 3 to 4 min. or until crisp-tender, stirring after 2 min.
- Toss meat with 1/4 cup barbecue sauce. Thread onto 4 skewers alternately with peppers, onions and mushrooms.
- Grill 8 to 10 min. or until meat is medium doneness (160ºF), turning and brushing with remaining barbecue sauce after 5 min.

MOM'S BEEF SHISH KABOBS
My Mom has cooked this recipe for as long as I remember. Now that I live on my own, I can't wait to go back home over the holidays to have this excellent dish. Mom would probably be upset that I gave it away, but it is so delicious that I think everyone should have a chance to experience it. Technically shish kabobs use lamb, so these should be called beef kabobs, but this is the family recipe and what we call it.

- Whisk the vegetable oil, soy sauce, lemon juice, mustard, Worcestershire sauce, garlic, black pepper, and salt together in a bowl; pour into a resealable plastic bag. Add the beef, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator 8 hours or overnight.
- Add the mushrooms to the bag, coat with the marinade, squeeze out excess air, and reseal the bag; marinate in the refrigerator another 8 hours.
- Preheat an outdoor grill for high heat, and lightly oil the grate.
- Remove the beef and mushrooms from the marinade, shaking off any excess liquid. Pour the marinade into a small saucepan and bring to a boil over high heat. Reduce heat to medium-low, and simmer for 10 minutes; set aside for basting.
- Thread pieces of green bell pepper, beef, red bell pepper, mushroom, and onion onto metal skewers, repeating until all ingredients are skewered.
- Cook the skewers on the preheated grill, turning frequently and brushing generously with the reserved marinade until nicely browned on all sides and the meat is no longer pink in the center, about 15 minutes.

- In a small bowl, whisk the first five ingredients. Place half of marinade in a large resealable plastic bag. Add beef; seal bag and turn to coat. Refrigerate 8 hours or overnight. Cover and refrigerate remaining marinade., Drain beef, discarding marinade in bag. Wrap bacon around beef cubes. On four metal or soaked wooden skewers, alternately thread beef and vegetables., Grill, covered, over medium heat 10-15 minutes or until beef reaches desired doneness and vegetables are tender, turning occasionally and basting frequently with reserved marinade.

BEST EVER SAUCY BEEF KABOBS
This is a five-star recipe that combines the great taste of grilled beef kabobs with a delicious tomato sauce baste. I always double the sauce to top the beef and veggies over rice. A mouth-watering meal.

- In a saucepan over low heat, mix the tomato juice, butter, onion, ketchup, mustard, salt, paprika, pepper, garlic, Worcestershire sauce, and hot sauce. Simmer for 30 minutes, remove from heat, and allow to cool.
- Preheat grill for medium heat.
- Thread the sirloin cubes, mushrooms, cherry tomatoes, onion quarters, and green pepper pieces onto skewers, alternating as desired. Drizzle some of the sauce over the kabobs.
- Oil the grill grate. Arrange kabobs on the grill. Grill 10 minutes, or until meat is cooked through, occasionally turning kabobs. Baste with sauce during the last 5 minutes.

- Choose the Best Beef Cut for Kabobs. After years of trial and error, I’ve found that the various cuts of Sirloin are the best for kabobs. Relatively tender, without a need for extensive marinating, Sirloin (from top to tip) is lean and fits into a balanced diet — plus, it’s budget-friendly .
- To Marinate Or Not. Sirloin doesn’t require marinade to break down muscle fibers for tenderness. But, if you’d like to impart a distinctive flavor, pour a marinade (bottled brands are fine) on your beef cubes for about 15 to 45 minutes prior to grilling (discard marinade after use).
- Co-mingle Consistently. Allowing beef and produce to co-exist on the same skewer is perfectly fine, and it also looks beautiful. Keep beef chunks, and similar-density vegetables and fruits cut into approximate 3/4-inch to 1 1/2-inch pieces for even cooking.
- Separate Strategically. If you have distinctly smaller or larger ingredients or produce that is extremely delicate (like tomatoes), these should be skewered separately and removed from the heat earlier.
- Give Space. Human nature directs us to cram all we can fit onto a single skewer. But, by leaving a small amount of space between each ingredient (1/4-inch), heat can better circulate and cook food evenly.
- How Hot, How Long. Grill kabobs over direct heat of approximately 400°F. Kabobs with 3/4-inch cubes require approximately 8 to 10 minutes of total time on the grill, flipping halfway through.
- Make It A Party. Create a skewering station and ask guests to each bring a bowl full of their favorite produce prepped into bite-sized pieces. You can also provide popular veggies such as mushrooms, colorful peppers, squash, tomatoes, and onions or experiment with Romaine lettuce, asparagus, brussels sprouts and more!
