These Steak Fajitas are tender, juicy, and packed with flavor. They are made in just minutes in a hot skillet. The Steak Fajitas, peppers, and onions can be eaten in tortillas, on a salad, or with rice and beans.

2 lbs skirt steak
2 tbsp fajita seasoning
2 tbsp vegetable oil (divided)
1 green bell pepper (sliced)
1 red bell pepper (sliced)
1 sweet yellow onion (sliced)
1 tbsp butter
3 cloves garlic (pressed)
1/2 lime (juiced)

Steps:

  • Cut the steak into 1/2-1 inch strips. Toss with the fajita seasoning and 1 tbsp of the oil, and place in a zip top bag or container to marinate while finishing prep.
  • Cut the peppers and onions into thin strips.
  • Heat the remaining 1 tbsp oil over high heat in a large skillet. Once hot, carefully place the peppers and onions in the skillet, cooking for 3-4 minutes, stirring occasionally. Remove the peppers and set aside.
  • Then place the steak in a single layer in the hot skillet. Let cook (without stirring) for 2-3 minutes. Then flip the meat to the other side and cook for 1 minute.Stir the butter, garlic, and lime juice in and cook for 1 additional minute. Then remove from heat and stir in the onions and peppers.
  • Garnish with fresh cilantro and serve hot. Enjoy!

1 lb fajita *beef skirt*
9 large yellow *valley* lemons
cracked pepper

Steps:

  • 1. Wash hands and prepare a clean space/cutting board and knife for this first. Make sure to turn your grill on a head of time. Trim the fat off, leave as much or as little as you like. Cut against the grain into strips. If strips are too long, simply cut in half.
  • 2. Halve lemons, and remove seeds. In a separate large bowl, squeeze lemons and add fajitas. Add as much salt as you like, but add plenty of cracked pepper. Soak fajitas in salt, pepper, and lemon mixture for 10 minutes. After grill is hot, place fajitas. Let them cook with their natural juices, cook at desired temp. If you like them medium, cook them 5 min on each side. But preferably well done. Enjoy!

3 fresh jalapeño peppers, stems and seeds removed
1 small onion, quartered
¼ cup fresh cilantro
¾ cup beer, pale ale or lager
½ cup Italian salad dressing (see Tips)
⅓ cup lime juice
1 tablespoon Worcestershire sauce
1 ½ teaspoons garlic powder
1 teaspoon salt
½ teaspoon ground cumin
1 bay leaf
1 pound skirt steak (see Tips)
1 tablespoon canola oil
3 New Mexican green chiles or poblano peppers (see Tips), seeded and cut into 1/2-inch strips
1 medium onion, halved and cut into 1/2-inch-wide strips
⅛ teaspoon salt
8 6-inch flour tortillas, heated

Steps:

  • To marinate steak: Place jalapenos, quartered onion and cilantro in a blender or food processor and blend until finely chopped. Add beer, salad dressing, lime juice, Worcestershire sauce, garlic powder, 1 teaspoon salt and cumin and puree until smooth. Stir in bay leaf. Place steak in a gallon-size sealable plastic bag and pour the marinade over it. Close and refrigerate, turning occasionally, for at least 8 hours and up to 24 hours.
  • To grill steak: Preheat grill to medium-high.
  • Remove the steak from the marinade and place on the grill. (Discard marinade.) Grill 3 to 4 minutes per side for medium. Remove the steak to a clean cutting board and let rest for 5 minutes.
  • To prepare vegetables: Meanwhile, heat oil in a large skillet over high heat until shimmering. Add chiles and onion strips, sprinkle with 1/8 teaspoon salt and cook, stirring, until blackened in spots and just softened, 4 to 6 minutes.
  • Holding your knife at a 45-degree angle to the steak, very thinly slice across the grain--this helps keep the fajita tender. Serve the steak and vegetables on a platter with the tortillas so everyone can make their own fajitas at the table.

1 (16 ounce) bottle Italian salad dressing
1 (12 ounce) mexican beer (such as Corona)
2 lbs skirt steaks, trimmed of ALL fat
2 tablespoons Worcestershire sauce (optional)
1/4 cup pickled jalapeno pepper, with juice (optional)
1 tablespoon onion powder (optional)
2 tablespoons minced garlic (optional)
4 tablespoons lime juice (optional)

Steps:

  • Combine all ingredients in a heavy duty sealable freezer bag and freeze. (Or store in the refrigerator overnight).
  • When desired, remove from freezer and thaw in the fridge or a sink full of cold water.
  • Grill for 10-15 minutes or until medium (pink in the center).
  • Cut fajitas AGAINST THE GRAIN and serve with warmed tortillas, shredded cheese, lettuce, pico de gallo (#159078), sour cream, guacamole or your favorite toppings.
  • To cut fajitas against the grain, lay out on cutting board horizontally. The grain is running vertically. Cut the steak vertically into managable sized slabs and then slice horizontally (opposite the grain). The fajitas will be tender and soft.

2 cans pineapple juice (2 cups total)
1 15oz. bottle low sodium soy sauce
3 limes, juiced
5 garlic cloves, pressed or smashed
3 T. fresh cilantro, chopped fine (optional-for beauty)
2-4 lbs. steak fajita meat (such as skirt steak, flank steak, tri-tip, sirloin, etc.)

Steps:

  • Place your fajita meat in a glass casserole dish with a lid.
  • Pour the pineapple juice, soy sauce, juice of the limes, and minced garlic onto the meat. Stir well and adjust with tongs. Sprinkle cilantro on if using.

Texas fajitas feature a combination of steak, chicken breast, and shrimp along with all the other classic flavors. The perfect meal when you are feeding people who want different options or you can't decide what you feel like eating!

2 Tablespoons olive oil
Fajita seasoning
1 lb. flank steak (or steak of choice- tenderized and cut into strips)
1 lb. bones chicken breast- cut into strips
½ lb cooked large shrimp-shelled and tails removed
2 bell peppers- sliced
1 large onion- cut into half moons
3 cloves garlic- minced
Tortilla shells (shredded cheese, sour cream, and guacamole for topping)

Steps:

  • Tenderize steak and cut steak and chicken into strips. Season the steak, chicken, and shrimp generously with fajita seasoning and about ½ teaspoon salt each.
  • Warm olive oil in a large skillet over medium- high heat and cook chicken until cooked through. Remove to a large bowl and cover with aluminum foil.
  • Discard any extra liquid (or keep off to the side to add later) then add steak and brown about 3 minutes per side and cook until you get desired doneness (well done= 160 degrees F, medium well= 150 degrees F, Medium= 140 degrees F and so on). Add steak into the same bowl with the chicken and cover with foil.
  • Add another 2 Tablespoons of olive oil into the pan and add bell peppers and onions, and garlic. Sauté until the vegetables are soft.
  • Add in the shrimp and toss until they are warmed through. About 2-3 minutes.
  • Add the steak and chicken back into the skillet and toss until everything is mixed well.
  • Serve on warm tortillas with your favorite toppings.

  • Pull the fajita meat from the marinade and lay flat on a cookie sheet while you heat your grill, or begin your charcoal.
  • When the grill is as hot as it can be, or the charcoal has turned gray, place the meat down in the middle of the hottest part of the grill. Close the chamber or place the lid on the grill. If you're using charcoal, make sure you vent the lid so that the air will feed the coals.
  • Sear the meat 5-7 minutes on one side and then check it. If it's not seared continue to cook it on one side until you can get at least a decent sear on the first side. Cut the skirt steak in half and place into a large zip-loc bag. Pour the lime juice and oil into the bag. Add onions and garlic to both sides of the bag and between the skirt steak. Seal the bag and mush things around so that the ingredients are fairly evenly distributed throughout. Put the bag into a glass dish to prevent leaks and turn the bag over every few hours. Best if marinated over night - two days. Let the fajita meat come to temperature for 30 minutes before cooking.
  • Slice the bell peppers and place into a bowl large enough to accommodate them and the onions from the marinade, but not the crushed garlic. Pour a little oil over the onions and peppers and toss to coat.
  • Preheat the grill to high. Remove the skirt steak from the fajita marinade and dry with paper towels or they won't brown on the grill. Rub a little oil on both sides and salt and pepper liberally. Grill the steak to your liking. If it is not as brown as you like, put it in a very hot iron skillet to brown. Let the meat rest 10-15 minutes before slicing.
  • While the fajitas rest, preheat an iron skillet until very hot. Add the onions in a single layer and let cook until browned and charred. Turn over with tongs and cook the other side. Remove to a serving plate and add the next round of vegetables, making sure not to crowd the pan. Continue until all of the vegetables are done. This process will produce a little bit of smoke.

  • Peel off the fatty membrane from the steak if it has been left by the butcher. Put the meat (whole) in a plastic bag and pour the marinade over top. Squish it around ensuring the meat is all covered. (If doing multiple type meats, put each meat in a separate plastic bag.)
