- In a large heavy pot (such as a cast iron Dutch oven), heat the fat or oil over high heat. Add the meat and sear, stirring, until no longer pink. Lower the heat to medium-high. Add the onions, jalapenos, garlic, chiles, and chili powder, and cook, stirring constantly, until the onions are wilted and start to color, 4 to 5 minutes. Add the cumin, oregano, salt, and pepper, and cook until fragrant, about 20 seconds. Add the tomatoes and cook, stirring, for 1 minute. Add the beer and tequila and cook, stirring, to deglaze the pan. Add the chipotles and adobo sauce and 4 cups of the stock, stir well, and bring to a boil. Reduce the heat and simmer partially covered, stirring occasionally, until the meat is very tender, 2 to 3 hours, adding the remaining cup of stock as needed if the chili becomes too dry or thick. When the meat is tender and the chili is ready, add the masa harina 1 teaspoon at a time to thicken to desired consistency, stirring well and cooking after the addition of each before adding more.
- Remove from the heat and correct the seasoning, to taste. Skim any fat from the surface.
- Ladle into bowls and garnish each with cilantro, chopped onions, and a dollop of sour cream. Serve with hot cornbread.
TEXAS CHILI

Steps:
- Remove the stems and some of the seeds from the ancho, arbol and guajillo chiles; then tear the chiles into large pieces. In a large saute pan over medium-high heat, toast the chiles until they start to change color, about 2 minutes. Add 1 cup hot water to just cover the chiles; turn off the heat, cover the pan, and let steam for 15 minutes. Transfer the chiles and liquid to a blender and puree until smooth. Pour into a bowl and set aside.
- In a large Dutch oven over medium-high heat, add the olive oil, onions, peppers, Fresno chiles and Anaheim peppers. Cook until the onions are translucent, 6 to 7 minutes. Remove from the pan and set aside on a baking sheet or in a bowl.
- Sprinkle the beef chuck and ground beef with salt and pepper, then add to the Dutch oven. Cook until well browned, 7 to 8 minutes. Add the garlic, cumin, oregano, cayenne and cinnamon; saute until fragrant, about 2 more minutes. Add the sauteed vegetables, beef stock and the chile puree, stirring to combine. Bring to a boil and reduce to a very low simmer. Simmer until the beef is very tender and the liquid has reduced, about 2 hours. Stir in the beer and paprika, then add the masa harina to tighten sauce. Stir over low heat for 10 to 12 minutes, breaking up some of the beef so it gets worked into the sauce slightly. Add salt and pepper to taste. Remove from the heat, cover and keep warm.
- Serve generous portions of chili in bowls, drizzled with Cheddar Beer Cheese Sauce and garnished with sour cream, scallions, red onion and crackers.

Cook over low heat, while continuing to whisk, for 7 to 8 minutes. Remove from the heat, cover, and keep warm until ready to serve.

TEXAS BEEF CHILI WITH POBLANOS AND BEER

- In a 12 inch skillet, heat 2 Tbs. of olive oil over med-high heat. Add the onions and saute until starting to brown. Add poblanos, reduce to medium heat until poblanos are soft. Add garlic, 1 tsp salt and saute for 5 min. Meanwhile, heat 1 Tbs olive oil in Dutch oven over med high heat. Sear beef cubes until browned and crusty on two sides. Work in batches. Transfer beef to a bowl. When all the beef is seared and set aside, add onions and pepper to the pan, along with bay leaves, chile powders, cumin, and cloves and cook, stirring 15 - 30 seconds. Slowly add beer while scraping the pan bottom with wooden spoon. Simmer until the beer is reduced by about half and the mixture has thickened 5-7 min. Add beef. Bring to simmer and then reduce heat to med low heat. Simmer for 3 hours stirring occasionally. Discard bay leaves and cinnamon sticks.
RED BEEF CHILI
Bobby Flay brings his signature heat to this chili with layers of rich, spicy flavors. The onions and chiles are sauteed in reduced beer and chocolate, and maple syrup is stirred in at the end for sweetness. A dollop of toasted cumin crema on top adds a cool, creamy finish to this red-hot dish.

- Heat 2 tablespoons of the oil in a large Dutch oven over high heat. Sprinkle the beef with salt and pepper and add one-third of the meat to the pan and saute until browned on all sides. Repeat with the oil and meat, draining any excess liquid from the pan between the batches. Return the meat to the pan, sprinkle with the cumin and stir well. Deglaze the pan with the beer and bring to a boil. Cook until the beer is almost completely reduced. Remove the meat from the pan and set aside.
- In the same pan, add the remaining 1 tablespoon oil to the same pan and then add the onions and cook on medium heat until soft. Add the garlic and cook for 2 minutes. Add the habanero, Thai bird, jalapeno and poblano peppers and cook until soft, about 5 minutes. Add the ancho chile pepper, cascabel chile powder, chipotle pepper puree, pasilla chile powder and New Mexican chile powder, and cook an additional 2 minutes. Add the chicken stock and tomatoes, bring to a boil and cook until slightly thickened, 15 to 20 minutes.
- Puree with an immersion blender. Add the beef back to the pan, reduce the heat to medium, cover and simmer until the chili is thick and the beef is tender, about 1 hour 15 minutes. If the chili has too much liquid, continue to cook uncovered to thicken, about 15 minutes. Remove from the heat, add in the chocolate and maple syrup and stir until the chocolate is melted and combined and adjust seasonings. Serve with Toasted Cumin Crema.
- Place the cumin in a small saute pan over medium heat. Toast until lightly golden brown. Place in a small bowl. Stir in the crema and season with salt and pepper. Place in a squeeze bottle for serving.
TEXAS BEEF CHILI WITH POBLANOS AND BEER

- In a 12-inch skillet, heat 2 Tablespoons oil over medium-high heat. Add the onions and saute until softened, translucent and starting to brown, 8 to 10 minutes. Add the poblanos or green bell peppers, reduce heat to medium and cook, stirring occasionally until the poblanos soften, another 8 to 10 minutes. If the pan seems a little dry, add a little more olive oil. Add the garlic and 1 teaspoon salt and saute for another 5 minutes. Set aside.
- Meanwhile, heat the remaining 1 tablespoon olive oil in a large, heavy Dutch oven over medium-high heat. Sear the beef cubes until browned and crusty on two sides, working in batches to avoid crowding the pan. Transfer to a bowl. Again, if the pan seems dry, add a little oil.
- Once the beef is seared and set aside, add the onions and peppers to the pan, along with the bay leaves, cinnamon sticks chile powders, cumin and cloves and cook, stirring until the spices coat the vegetables and are fragrant, 15 to 30 seconds. Slowly add the beer while scraping the pan bottom with a wooden spoon to dissolve the coating of spices. Simmer until the beer is reduced by half and the mixture has thickened slightly, 5 to 7 minutes. Add the beef, along with any accumulated juices, and the beef broth. Bring to a simmer and then reduce heat to medium low. Simmer, partially covered for 3 hours, stirring occasionally. Discard the cinnamon sticks and the bay leaves.
- If not serving immediately, chill overnight. The next day, skim any fat from the top before reheating.
- To serve, heat the chili gently. Using a slotted spoon, transfer about 2 cups of the beef cubes to a plate and using two forks, shred the meat and return to the pot. Taste and adjust salt if necessary. Heat the beans in a bowl in the microwave. Arrange the beans, chopped red onion, tomatoes, cilantro and sour cream in small bowls to serve as garnishes with the chili.

- Using a mortar and pestle or a spice grinder, finely grind the cumin seeds.
- Transfer to a bowl, add the chili powder, paprika, and oregano, and mix well; set aside.
- Season the beef with salt and pepper.
- In a large, heavy pot, heat 2 T oil over med-high heat.
- Working in batches, sear the beef, turning occasionally, until browned, about 5 minutes.
- Transfer to a plate.
- Add the remaining 1 T oil to the pot.
- Add the onion, jalapeno, bell pepper, and garlic and reduce heat to medium.
- Cover and cook, stirring occasionally, until the onion softens, about 5 minutes.
- Uncover, add the spice mixture, and stir well for 30 seconds.
- Stir in the beer and broth.
- Return the beef to the pot, cover and reduce heat to low.
- Simmer until the beef is fork-tender, 1 ½-2 hours.
- Remove the chili from the heat and let stand for 5 minutes.
- Skim any fat from the surface.
- Bring the chili to a simmer over medium heat.
- Transfer about ½ cup of the cooking liquid to a small bowl and whisk in the cornmeal.
- Stir into the chili and cook until lightly thickened, about 1 minute.
- Season with salt and pepper.
- Spoon the chili into bowls and serve, garnished with cheese, red onions, sour cream or jalapenos, if desired.

- PASTE: Combine the ingredients for the paste in a small bowl and slowly stir in 1/2 cup of hot water. Mix and set this aside for now.
- SEAR THE MEAT: Season the meat with a generous pinch of salt and pepper. Heat a large chili pot over medium-high heat. Add 1 tablespoon of oil to the pot and add a few pieces of meat at a time. Sear the meat on all sides, about 2-3 minutes and remove it to a plate. Repeat the process until all the meat is seared. You may need a little more oil than what's listed just depends on how well marbled the meat is.
- CHILI: If you need it, add another drizzle of oil to the pan along with the chopped onions and the poblanos. Use a wooden spoon to help scrape any brown bits left behind by the meat and cook for 5 minutes. Then, add the garlic and jalapeños and continue to cook for another 1-2 minutes or until fragrant. Add the prepared chili paste to the pot and stir it in so that it coats everything nicely. Allow the paste to cook for 1 minute before adding the brown sugar, Worcestershire, beef broth, tomato sauce, 1 cup water and ½ teaspoon salt. Use the wooden spoon to scrape the bottom so that none of the chili paste is sticking.
- COOK: Add the seared meat and allow the chili to come to a boil before lowering the heat to low and allowing it to cook for 2 ½ - 3 ½ hours. Set aside 1 cup of water and add in a ¼ cup every time you stir the chili if it's thickened. Stir the chili every 30-45 minutes to make sure it's not sticking. You may not need all of the water if you're going bean-free, with beans you generally need a little more. I like to add the beans around the 2-hour mark so that they have a chance to cook for at least half an hour before serving. Serve topped with all your favorite chili toppings!
