4 skinless chicken breast halves, with ribs
2 skinless chicken thighs, with bones
1/2 teaspoon salt, plus 1 teaspoon
1/2 teaspoon freshly ground black pepper, plus 1 teaspoon
1/4 cup olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
3 ounces prosciutto, chopped
2 cloves garlic, chopped
1 (15-ounce) can diced tomatoes
1/2 cup white wine
1 tablespoon fresh thyme leaves
1 teaspoon fresh oregano leaves
1/2 cup chicken stock
2 tablespoons capers
1/4 cup chopped fresh flat-leaf parsley leaves

Steps:

  • Season the chicken with 1/2 teaspoon salt and 1/2 teaspoon pepper. In a heavy, large skillet, heat the olive oil over medium heat. When the oil is hot, cook the chicken until browned on both sides. Remove from the pan and set aside.
  • Keeping the same pan over medium heat, add the peppers and prosciutto and cook until the peppers have browned and the prosciutto is crisp, about 5 minutes. Add the garlic and cook for 1 minute. Add the tomatoes, wine, and herbs. Using a wooden spoon, scrape the browned bits off the bottom of the pan. Return the chicken to the pan, add the stock, and bring the mixture to a boil. Reduce the heat and simmer, covered, until the chicken is cooked through, about 20 to 30 minutes.
  • If serving immediately, add the capers and the parsley. Stir to combine and serve. If making ahead of time, transfer the chicken and sauce to a storage container, cool, and refrigerate. The next day, reheat the chicken to a simmer over medium heat. Stir in the capers and the parsley and serve.

1/2 cup romano cheese (freshly grated)
1/2 cup plain dried breadcrumbs
1 large egg
1 cup marinara sauce
2 lbs ground chicken

Steps:

  • Preheat oven to 400°F.
  • Line 13x9-inch metal baking pan with foil. Spray foil with nonstick cooking spray.
  • In large bowl, stir Romano, bread crumbs, egg, 1/2 cup marinara sauce, and 1/2 teaspoon salt. Add chicken and mix just until combined.
  • Spoon chicken mixture into center of prepared pan; shape into 9x5-inch loaf, pressing firmly. Spread remaining 1/2 cup marinara over top.
  • Bake meatloaf 1 hour and 5 to 10 minutes or until temperature on instant-read thermometer inserted in center of meatloaf reaches 165° F (temperature will rise to 170°F upon standing). Let meatloaf stand 10 minutes for easier slicing.

1 lb ground chicken
1/2 cup fine breadcrumbs
1 large egg white
1 medium carrot
1 small onion
1/4 cup ketchup
1/2 teaspoon minced garlic
1 teaspoon Worcestershire sauce
1/4 teaspoon celery seed
1 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees.
  • Combine chicken and bread crumbs in large bowl.
  • Set aside.
  • Cut the carrot& onion into chunks and add to blender.
  • Add the remaining 7 ingredients to the blender.
  • Process in blender until carrot is very fine.
  • Pour blender mixture over meat mixture.
  • Mix very well using your hands.
  • Form mixture into a loaf and place in lightly greased 9" X 13" pan.
  • Cover with foil and bake for one hour.
  • Remove foil& continue baking for 15-30 minutes, until loaf is cooked through.

ITALIAN CHICKEN MEATLOAF

1 pound ground chicken
1 large egg
½ cup parmesan cheese (, grated)
1 cup panko breadcrumbs
1 small onion (, diced)
3 garlic cloves (, minced)
2 tablespoons fresh parsley (, chopped)
1 tablespoon Italian seasoning
1 teaspoon coarse kosher salt
½ teaspoon black pepper
15 ounces tomato sauce (store-bought or homemade)

Steps:

  • Preheat the oven to 375°F. Spritz a baking dish with nonstick baking spray and set aside.
  • Place the ground chicken in a large bowl. Add the egg, parmesan cheese, panko breadcrumbs, onion and garlic on top of the meat. Season with parsley, Italian seasoning, salt and pepper.
  • Use your hands to mix the ingredients together until combined. This might take a few minutes and effort since you want to make sure that the ingredients are well-dispersed in the meat.
  • Place the meat mixture into the prepared baking dish and form into a loaf. Mine was 6 ½" (L) x 3 3/4 " (W) x 1 ¼" (H). The taller your meatloaf is, the longer it will take to bake.
  • Pour the tomato sauce on top of the meatloaf, and sprinkle additional cheese on it.
  • Bake for 55-60 minutes, or until the meatloaf is cooked through. The meatloaf's internal temperature should reach 165°F at the thickest spot.
  • Once out of the oven, let rest for 5-10 minutes before slicing and serving with your favorite sides.

3 tablespoons ketchup
1 tablespoon hot sauce
Nonstick cooking spray, for spraying the loaf pan
3 tablespoons unsalted butter
3 stalks celery, small diced (about 1 cup), celery leaves reserved for garnish
1/2 medium onion, small diced (about 1 cup)
3 tablespoons hot sauce
1 1/2 pounds ground chicken, 50/50 light and dark
1 cup blue cheese crumbles
1 1/2 teaspoons kosher salt
2 teaspoons coarsely ground black pepper
2 large eggs
2 1/4 cups panko breadcrumbs
1/4 cup grated Parmesan

Steps:

  • For the sauce: Whisk together the ketchup and hot sauce in a small bowl and set aside.
  • For the meatloaf: Preheat the oven to 350 degrees F. Grease a 9-by-5-by-3-inch loaf pan with cooking spray and set aside.
  • Melt the butter in a medium saute pan over medium-high heat. Once melted, saute the celery and onion until softened, 3 to 5 minutes. Transfer the mixture, with the drippings, to a large bowl. Add the hot sauce to the bowl and stir to combine. Add the chicken, blue cheese, salt, pepper, eggs and 1 1/2 cups of the panko and mix until well combined.
  • Press the mixture into the prepared loaf pan, pressing more in the center of the loaf to create a divot. This will allow the meatloaf to bake evenly and not create a mound after it is baked. Spread the sauce over the top of the meatloaf. Mix the Parmesan with 1/2 cup of the panko and sprinkle the mixture on top of the sauce. Bake until the center is set and the top is golden brown, 45 minutes to an hour. Let rest about 15 minutes before cutting to serve.
  • Meanwhile, toast the remaining 1/4 cup panko in a dry pan until lightly golden and set aside.
  • Garnish the meatloaf slices with the toasted panko and chopped celery leaves.

1/2 cup seasoned bread crumbs
2 tablespoons dried parsley (or oregano or your favorite dried spice)
1/4 cup fresh romano cheese or 1/4 cup parmesan cheese, shredded
1/4 cup butter, melted

Steps:

  • Preheat oven to 400 degrees.
  • Combine bread crumbs, parsley and cheese.
  • Brush chicken with butter, then roll in crumb mixture.
  • Place meaty side up in ungreased, shallow baking pan.
  • Sprinkle remaining crumb mixture on top.
  • Bake, uncovered, for 40 minutes or until chicken is no longer pink.
  • Cover the chicken with foil if the crumbs begin to get too brown.
