Steps:
- Dissolve yeast in water and set aside.
- Sift all dry ingredients and cut in shortening.
- Add buttermilk and yeast and mix well.
- Pour onto floured board and knead.
- Then roll out to 1/4 or 1/2 inch thickness and cut.
- Put into greased baking pan and let rise to double size (about 1 1/2 hours).
- Bake at 400 degres for 15 minutes.
- This dough will keep in a refrigerator for a week if covered tightly.
- After cutting the biscuits out, they can be frozen on the pan and then placed in a plastic bag.
- They will not stick together.
- Take out as many as necessary and let them rise from one to two hours.
- Then bake.

TEXAS ANGEL BISCUITS - OAMC - DROP OR ROLL OUT
Great flaky biscuits that go great with gravy, soups, stews etc... Just mix them up, toss 'em in the fridge and take out what you need when you are ready. No need to wait for them to rise. These biscuits are really easy and really good! Recipe from Burton's Cotton Gin Cookbook as posted by Miss Boehnemann whose family is KNOWN for their cooking.

Steps:
- Dissolve yeast in warm water. Mix all dry ingredients (cut in shortening here) and combine with liquids.
- Place in refrigerator until ready to use. Stores up to two weeks.
- When ready to make: Take out the amount you want to use and leave the rest in the refrigerator.
- Roll out and shape into biscuits on a lightly floured surface or drop by the spoonful onto a lightly greased baking sheet. (Add some more flour here if needed).
- Bake at 375 for about 20 minutes or until browned on top.
- Serve warm.
- Amount of servings depends on the size of your biscuits. I usually get about 4 dozen from this.

YEAST BISCUITS
These biscuits work every time and are really good for making ham biscuits or other 'sandwiches'. They hold up well and yet are tender with a wonderful flavor. Prep time includes rest time.

Steps:
- Dissolve yeast in water, set aside.
- Mix dry ingredients in order given; cut in shortening until the size of small Lima beans.
- Stir in buttermilk and yeast mixture.
- Cover bowl with towel and let sit until ready to use. (At least 1 hour, but it is fine if it sits for a couple hours.) Dough will be very sticky.
- Scrape out onto well floured board.
- Flip over and knead lightly (4-6 times).
- Roll out and cut with biscuit cutter.
- Place on greased pan and let raise slightly (10-30 minutes).
- Bake at 400 F until light brown, 10-12 minutes.

I found this recipe in one of my cooking light magazines. These biscuits are easy to make and they have a great taste. I used 3 C. white flour and 2 C. wheat flour and vegetable oil instead of the shortening and they turned out perfect!!

Steps:
- Dissolve the yeast in 1/2 cup warm water in a small bowl, let stand for 5 minutes.
- Combine flour, sugar, baking powder, baking soda, and salt in a large bowl.
- Cut in shortening with a pastry blender or two knives until mixture resembles coarse meal.
- Add yeast mixture and buttermilk to flour mixture; stir until just moist.
- Cover and chill 1 hour.
- Preheat oven to 450 degrees.
- Turn the dough out onto a heavily floured surface; knead lightly 5 times.
- Roll dough to a 1/2-inch thickness; cut with a 2 1/2-inch biscuit cutter.
- Place biscuits on a baking sheet coated with cooking spray.
- Brush melted butter over the biscuit tops.
