TEX-MEX TURKEY BURGERS WITH AVOCADO MAYONNAISE

Steps:
- Combine the turkey, garlic, paprika, 3/4 teaspoon salt and a few grinds of pepper in a medium bowl; mix with your hands until just combined. Form into four 1/2-inch-thick patties; set aside.
- Combine 1/2 avocado, the mayonnaise, lime juice and 1/4 teaspoon salt in a medium bowl; mash until smooth. Thinly slice the remaining 1/2 avocado and season with salt and pepper. Set aside for topping.
- Heat the vegetable oil in a large nonstick skillet over medium-high heat (or preheat a grill to medium high and oil the grates). Add the burgers and cook until browned, 3 to 4 minutes per side. Top each burger with a slice of cheese; cover and cook until the cheese melts, about 30 seconds.
- Meanwhile, split and toast the buns; spread the avocado mayonnaise on the cut sides. Serve the burgers on the buns with lettuce, the sliced avocado and tortilla chips.

- Prepare the guacamole by stirring together mashed avocado and lime juice, and adding salt to taste. Set aside.
- Stir together the spices for the Tex-Mex Seasoning. Divide in half.
- Stir together mayo (or sour cream) and half of Tex-Mex Seasoning. Set aside.
- In a large bowl combine ground turkey and remaining half of the Tex-Mex Seasoning. Mix well by hand, then form into 4 equal-sized patties.
- Grill burger patties for about 6 minutes on each side over medium heat til browned and cooked through.
- Top each patty with a slice of cheese, cover the grill and allow the cheese to get melty (about 1-2 minutes).
- Assemble turkey burgers by slathering mayo sauce on the bottom bun, then top with the turkey burger patty, followed by a big dollop of guacamole, some shredded lettuce, and the top of the bun. Serve and enjoy!

TEX-MEX TURKEY BURGERS

- 1. Place a box grater on 2 sheets of paper towels. Grate the zucchini on the large holes of the grater. Roll in the paper towels to squeeze out as much liquid as possible. Transfer to a large bowl and mix in the scallions, turkey, egg, chili powder, and salt until well combined. Form into 4 burger patties the same diameter as your buns.
- 2. Heat the oil in a large skillet over medium heat. Add the burgers and cook until browned on the bottoms, about 7 minutes. Carefully flip and cook until cooked through, about 8 minutes. Place a slice of cheese on top of each burger, then transfer to the bottom buns. Top with the salsa and the top burger buns.
- 3. Once the stovetop is cool, wipe up any oil splatters or meat juices that may have spilled on the counter with Clorox® Disinfecting Wipes*. Rinse hands once complete.
- *Use as directed. For surfaces that may come in contact with food, a potable water rinse is required.

- 1. Mix turkey, chips, scallions, cilantro, 1/2 cup water, egg, garlic, chili powder, cumin and salt in a large bowl until very well blended. Shape into 6 burgers.
- 2. Heat oil in a large nonstick skillet over medium heat. Fry burgers 12 to 15 minutes, turning occasionally, until no longer pink at center and internal temperature registers 165F on a meat thermometer inserted from side to middle.
- 3. Serve on buns with lettuce. Top with salsa and sour cream.

Sizzling with flavour! This Tex-Mex Burger has a lot of taste appeal and the visual isn't half-bad, either. Your mouth will explode with the flavours of spicy-hot Tex-Mex cuisine, tempered with a guacamole dressing. Members of the Kitchen Tourists suggested ingredients suitable for this delectable treat and so: Ed&Theresa - avocado; Muffin Goddess - lime; MA HIKER - hot sauce; fluffernutter - chipotle in adobo; Melody Ashcraft - tomato; Mandy from Oz - scallions; Laffer - cilantro; ms.susan - chili powder; TansGram - monterey jack cheese; and I provided the pickled jalapeno rings as per Recipe #170474. I'm sure you'll agree that these ingredients all came together sublimely to make the best burger ever. I would also like to thank Rita L, without whom this burger would just not have been possible. If Rita hadn't sent me a tin of chipotle in adobo last Fall, and if I hadn't frozen what I hadn't used then, this burger would just not have been possible! THANK YOU RITA!!! Steps:
- Halve, pit and peel avocado.
- Mash ¼ of avocado with a fork; add mayonnaise, lemon juice, hot sauce and salt to taste; mash with back of fork until smooth.
- Stir in tomato, chipotle, scallion, cilantro, and remaining avocado, cut into ¼ inch cubes and fold together gently but thoroughly. Cover surface with plastic wrap and refrigerate until ready to use.
- Mix chili powder, cumin, oregano and salt into beef. Handling beef as little as possible, divide it into quarters; shape each quarter into a patty.
- Heat a well-seasoned, ridged, cast-iron pan over moderately-high heat (or grill on bbq) until hot and cook the hamburgers 5 ½ minutes per side for rare.
- Top with cheese slices and cook, covered, for 1 minute, to melt cheese.
- Transfer to a plate and let stand, tented loosely with foil, for 3 minutes, to finish cooking.
- Transfer to hamburger buns; top with guacamole dressing, sliced, pickled jalapeno rings (to taste) and lettuce.
TURKEY BURGER WITH SPINACH AND MUSHROOMS
If you plan on putting these on a grill, you should place them in the freezer for about an hour or so. They are very soft. I've also made these into little meatball appetizers and served my cucumber yogurt dressing (below) as a dip - Delicious!

- Microwave spinach with a little water to soften, drain well and cool.
- In a large bowl, mix ingredients from spinach to ground pepper. Add ground turkey, mix lightly with your hands - but don't over mix.
- Cover and place bowl into refrigerator for about an hour, to blend flavors.
- Remove and make turkey patties.
- Heat a griddle or large skillet on medium heat.
- Spray with a cooking spray.
- Place turkey patties on griddle and cook for 3-5 minutes on each side.
- If turkey patties begin to stick, add a little more cooking spray. Be careful not to overcook.
- When patties are done - serve them on your favorite wheat bun with lettuce, tomato and cucumber yogurt dressing (below).
- Enjoy!
- Cucumber and yogurt dressing. - 2/3 cup nonfat plain yogurt (I prefer a Greek yogurt), 1/2 cup English cucumber - peeled and chopped, 2 tablespoons sliced green onion, 2 tablespoons 1% milk, 2 tablespoons fresh lime juice, 1 tablespoons light mayonnaise, 3/4 teaspoons kosher salt, 2 lg. cloves minced garlic, Pinch sugar (splenda). Combine all ingredients and chill 24 hours for flavors to blend.

- Place the mushrooms, zucchini, onion, and red bell pepper in the bowl of a food processor and process until the vegetables are finely chopped.
- Place the vegetables, ground meat, and taco seasoning mix in a medium-sized bowl and mix thoroughly.
- Shape the mixture into six 4-inch patties.
- Grill the burgers over medium coals or cook under a broiler for about 6 minutes on each side, until the internal temperature of the patties reaches 165 degrees (160 degrees for ground beef) and the meat is no longer pink inside.
- (To retain moisture, avoid pressing down on the patties as they cook.).

On the flavor front, we've got spices, herbs, veggies, cheese, and a chipotle mayo, so there's no chance this formerly blank canvas is going to be a bland burger.

- Make the mayo: In a large bowl, whisk together the mayonnaise, adobo sauce, lime juice, and salt. Cover and refrigerate for up to 2 days.
- Make the burgers: In a large bowl, combine the ground turkey, creamed corn, breadcrumbs, egg, onion, cilantro, cumin, salt, and pepper. Using your hands, mix together the ingredients just until combined. Shape the mixture into four patties.

- Burgers:.
- Preheat broiler or grill to medium high.
- Using wooden spoon, mix together the ground beef, jalapeno, 1/4 cup of the salsa and salt and pepper in large bowl until the ingredients are well combined.
- Form into 4 patties.
- Broil or grill, flipping once until cooked through, about 4-5 minutes each side.
- Place tortillas in microwave,and cook on high for about 20 seconds.
- Arrange burger on warm totilla and top with avacodo slices, shredded cheese and salsa.
- Wrap like burrito.

- Mix all ingredients in small glass bowl.
- Can be used immediately if using for the burgers, if using as dip, let sit in fridge for at least 1 hour.
