1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
1/2 cup chopped onion
3 tablespoons butter
1 to 2 garlic cloves, minced
1 cup hot water
2 teaspoons chicken bouillon granules
1/2 to 1 teaspoon ground cumin
2 cups half-and-half cream
2 cups shredded Monterey Jack cheese
1 can (14-3/4 ounces) cream-style corn
1 can (4 ounces) chopped green chiles, undrained
1/4 to 1 teaspoon hot pepper sauce
1 medium tomato, chopped
Optional: Minced fresh cilantro and fried tortilla strips

Steps:

  • In a Dutch oven, brown chicken and onion in butter until chicken is no longer pink. Add garlic; cook 1 minute longer. Add the water, bouillon and cumin; bring to a boil. Reduce heat; cover and simmer for 5 minutes. , Stir in the cream, cheese, corn, chiles and hot pepper sauce. Cook and stir over low heat until cheese is melted; add tomato. If desired, top with cilantro and tortilla strips.

This simplified scratch-made soup is a spicy (but not too spicy) step beyond basic chicken soup. Made with chili powder, cumin, green chiles, corn and tomatoes, there's plenty of flavor to go around. Add rice toward the end of cooking to keep the texture just right, and when it's good and hot, serve with crunchy tortilla chips and a helping of shredded Mexican cheese blend for a hearty, satisfying meal in a bowl.

1 package (20 oz) boneless skinless chicken thighs, cut in 3/4-inch pieces
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup chopped onion
2 cloves garlic, finely chopped
1 carton (32 oz) Progresso™ chicken broth
1 can (14.5 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 cup uncooked long-grain white rice or converted white rice (3 oz)
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 cup frozen whole kernel corn
Shredded Mexican cheese blend, tortilla strips and chopped fresh cilantro leaves, if desired

Steps:

  • In 5-quart Dutch oven, melt butter over medium-high heat; season chicken with salt and pepper. Cook chicken in melted butter 6 to 8 minutes, stirring once, until chicken is browned on outside. Using slotted spoon, transfer to bowl; cover and keep warm.
  • Add onion and garlic to butter and drippings in Dutch oven; cook over medium-high heat 30 to 60 seconds, stirring frequently, until softened.
  • Stir in chicken broth, tomatoes, chili powder and cumin; heat to boiling. Stir in rice, chiles, frozen corn and the browned chicken; return to boiling. Reduce heat; simmer uncovered 23 to 28 minutes, stirring occasionally, until rice is tender.
  • Serve soup topped with remaining ingredients.

1 can (8 ounces) tomato sauce

1/2 cup diced onions
1/2 cup diced green bell peppers
1 tablespoon minced garlic
Vegetable oil
1 pound chicken breasts, boiled and shredded
1 package taco seasoning mix
1 (8-ounce) jar salsa
1 (14-ounce) can kernel corn
1 (14-ounce) can hominy
1 (16-ounce) can ranch style beans
2 (4-ounce) cans tomato paste
2 (14-ounce) cans chicken broth
1 (8-ounce) package cream cheese

Steps:

  • Saute onions, green bell peppers, and garlic in a small amount of vegetable oil. Add chicken, taco seasoning mix, salsa, vegetables, beans, tomato paste, and chicken broth. Adjust liquid to your liking. Bring to a slow simmer and simmer for 20 minutes. Place cream cheese in a separate bowl. Using a measuring cup, take some of the hot liquid from the soup and pour over cream cheese to melt and then add back to the soup. Simmer on low for another 10 minutes. Serve with tortilla chips and grated Monterey jack cheese.
  • Also, great on the second day over rice.

Half of foundation soup base
1/4 cup long grain rice
2 cups cooked or 1 can (16 ounces) black beans, drained
1 teaspoon each toasted ground cumin and chili powder
1 pound boneless skinless chicken breast, cut into bite sized pieces
Salt and crushed red pepper
Juice of 2 fresh limes
1/2 cup chopped fresh cilantro
Sour cream, optional

Steps:

  • Bring base to a simmer, add the rice, cover and cook 10 minutes. Add the beans, toasted spices and chicken and cook, covered for 10 minutes more. Season to taste with salt and pepper; add more water or stock if thick or simmer down if too thin. Remove from heat, stir in lime juice and cilantro. Garnish with sour cream.

I'm neither Texan nor Mexican and I can't claim this to be a real Tex-Mex dish, but it definitely has that taste to it. I had black bean soup in mind when I was experimenting and came up with this. Enjoy!

1 tablespoon olive oil
1 small onion, finely chopped
2 garlic cloves, minced
2 celery ribs, finely chopped
1/4 red bell pepper, chopped
2 cups chicken broth
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can red beans, drained and rinsed
1/2 teaspoon cumin
salt, to taste
1 1/2 tablespoons cornstarch, plus 1 1/2 tablespoons cold water
6 teaspoons herdez chipotle salsa (to taste)

Steps:

  • In a soup pot, cook onion, celery, and red bell pepper until softened. Add garlic for last minute so it doesn't burn.
  • Add chicken broth and bring to a simmer. Simmer for 10 minutes.
  • Add cumin and half of the beans and heat through. At this point you may wish to mash or puree the mixture in the pot a bit.
  • Add the rest of the beans and heat through.
  • Dissolve the cornstarch in the water and add to the pot. Heat until slightly thickened.
  • Add Herdez Chipotle Salsa. You may want to start with two teaspoons and add more according to how spicy you like your food. I like 6 teaspoons.
  • Salt to taste.
  • You may want to serve this soup with cheddar cheese and sour cream on top. Enjoy!

1 onion, chopped
1 cup(s) carrots, finely chopped

3 1/2 cup(s) low-sodium chicken broth
1 cup(s) diced tomatoes (can use rotel tomatoes and green chilies if you prefer spicy)

Steps:

  • Heat oil in a dutch oven over medium-high heat and saute onion and carrots for approx. 5 minutes or until onions have softened and are translucent.
  • Add garlic and corn; cook until corn kernels just begin to brown - stirring as needed.
  • Add chicken broth and bring to a boil - reduce heat to a simmer and add tomatoes and chicken. Season to taste.
  • Ladle soup into bowls and garnish with crumbled cotija cheese and cilantro leaves. Serve with lime wedges on the side.

This roasted corn soup is very similar to soups seen in Mexican restaurants. The soup can be blended and used as an enchilada sauce for chicken enchiladas.

1 (16 ounce) package frozen whole kernel corn
2 cups chopped onions (2 large)
1 1/2 cups coarsely chopped sweet red peppers
2 garlic cloves
1 tablespoon cooking oil
4 (14 ounce) cans chicken broth
1/2 teaspoon dried thyme, crushed
1/8-1/4 teaspoon cayenne pepper
1/3 cup all-purpose flour
1/2 cup half-and-half or 1/2 cup light cream
2 chicken breasts, chopped

Steps:

  • Grill chicken breast and chop in to small bite size pieces.
  • Thaw frozen corn and pat dry with paper towels. Line a 15x10x1-inch baking pan with foil; lightly grease the foil.
  • Spread corn in prepared pan. Bake in a 450 degree F oven for 10 minutes; stir. Bake about 10 minutes more until golden brown, stirring once or twice. Remove from oven; set aside.
  • In a 4-quart Dutch oven cook onion, sweet pepper and garlic in hot oil over medium heat for 3 to 4 minutes or until nearly tender. Add the roasted corn, 3 cans of the chicken broth, thyme, and cayenne pepper. Bring to boiling; reduce heat. Simmer, uncovered, for 15 minutes.
  • In a large screw-top jar combine remaining 1 can chicken broth and the flour. Cover and shake well; stir into soup. Cook and stir until slightly thickened and bubbly. Cook and stir for 1 minute more. Stir in half-and-half; heat through.
  • Add chopped chicken and heat through.
  • To serve, ladle soup into bowls.
  • If enchilada sauce is need for chicken enchiladas, blend the ingredients.

Cooking spray
1 bag (12 oz) frozen corn, thawed
1/4 cup chopped red onion
2 plum (Roma) tomatoes, seeded, diced
1/3 cup diced green bell pepper
2 tablespoons chopped fresh cilantro
2 tablespoons lime juice (1 lime)
1/2 jalapeño chile, finely chopped, if desired

Steps:

  • Heat gas or charcoal grill. In small bowl, mix 1 1/2 teaspoons of the chili powder, the cumin, salt and garlic powder. Spray chicken with cooking spray; sprinkle seasoning mixture evenly over both sides of chicken. Set aside.
  • Spray sheet of heavy-duty foil with cooking spray; place corn in center of foil. Turn up edges of foil; place on grill over medium heat. Cover grill; cook 10 minutes, stirring once, until corn begins to brown. Remove corn from grill to medium bowl; set aside.
  • Place chicken on grill. Cover grill; cook 12 to 15 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (at least 165°F). Remove chicken to plate; cover to keep warm. Add onion, tomatoes, bell pepper, cilantro, lime juice, chile and remaining 1/2 teaspoon chili powder to corn; toss to combine. Serve with chicken.
