- Directions: Rinse and sort beans. Put six cups of water in large pot, cover, and bring to a boil. While water is heating, start step three. Add butter or oil to a heavy pot over medium-high heat. Add peppers, celery, and onions. Cook until onions are translucent, about 5-7 minutes. Add garlic, cumin, oregano, chili powder, and salt, reduce the heat to medium, and cook for another 3-4 minutes, stirring frequently. Add beans and boiling water to vegetable and seasoning mixture. Reduce the heat to low, cover, and simmer for 1 1/2 - 2 hours, or until beans reach desired tenderness. Add vinegar, stir, taste for seasoning, and adjust to your liking. Serving Suggestions: sour cream, sliced avocado, salsa, chopped cilantro, diced green onions, shredded cheese, corn tortillas or chips.
TEX-MEX BEAN SOUP
I'm neither Texan nor Mexican and I can't claim this to be a real Tex-Mex dish, but it definitely has that taste to it. I had black bean soup in mind when I was experimenting and came up with this. Enjoy!

Steps:
- In a soup pot, cook onion, celery, and red bell pepper until softened. Add garlic for last minute so it doesn't burn.
- Add chicken broth and bring to a simmer. Simmer for 10 minutes.
- Add cumin and half of the beans and heat through. At this point you may wish to mash or puree the mixture in the pot a bit.
- Add the rest of the beans and heat through.
- Dissolve the cornstarch in the water and add to the pot. Heat until slightly thickened.
- Add Herdez Chipotle Salsa. You may want to start with two teaspoons and add more according to how spicy you like your food. I like 6 teaspoons.
- Salt to taste.
- You may want to serve this soup with cheddar cheese and sour cream on top. Enjoy!

TEX-MEX BLACK BEAN BURGERS

- Chop the stir-fry mix into 1/2-inch pieces. Heat 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the vegetables, brown rice and a big pinch of salt. Cook, stirring, until the vegetables are softened, about 5 minutes. Stir in the chile powder, cumin, black beans, 3/4 teaspoon salt and a few grinds of pepper. Cook until the beans are hot and the skillet is dry, about 2 minutes.
- Transfer the mixture to a food processor; reserve the skillet. Pulse 5 to 6 times, until the mixture holds together but is still chunky. Scrape into a large bowl and stir in the breadcrumbs and chipotle mayonnaise. Shape into 4 patties, about 4 inches wide. Place the patties on a plate, cover with plastic wrap and freeze to firm up, about 15 minutes. Meanwhile, split and toast the rolls.
- Wipe out the reserved skillet, add the remaining 2 tablespoons olive oil and heat over medium-high heat. Add the patties and cook until heated through and a crust forms, about 2 minutes per side. Season with salt.
- Serve the patties on the rolls with lettuce, avocado, tomato, pickled jalapenos and chipotle mayonnaise. Serve with chips.

TEX-MEX BEAN SOUP WITH RICE

- Heat the olive oil in a large pot over medium heat. Add the onion and cook, stirring occasionally, until slightly softened, about 5 minutes. Add the garlic, cumin, 1/4 teaspoon salt and a few grinds of pepper; cook until lightly toasted, about 1 minute. Add the tomatoes, black beans, pinto beans and 6 cups water. Bring to a boil, then reduce the heat to medium and stir. Simmer until slightly thickened, about 15 minutes.
- Remove 1/2 cup of the bean mixture to a bowl using a slotted spoon; mash with a fork, then return to the pot along with the rice and 1/4 cup cilantro. Cook until the soup thickens, about 5 more minutes. Season with salt and pepper. Warm the tortillas in a dry skillet or wrap in damp paper towels and microwave; wrap in foil to keep warm.
- Top each serving of soup with the cheese and the remaining 1/4 cup cilantro. Serve with the warm tortillas.
TEX-MEX BEAN SALAD

TEX-MEX BLACK BEAN DIP
This dip is awesome served fresh warm or at room temp. It's also good the next day refrigerated. I think the recipe may have come from Southern Living or Cooking Light. It's not pretty to look at, but one taste and they will come back for more.

- Mash the beans in a bowl, set aside.
- Heat oil in a medium nonstick skillet over medium heat.
- Add onion and garlic.
- Saute 4 minutes or until tender.
- Add beans, tomato and next 3 ingredients.
- Cook 5 minutes or until thickened, stirring constantly.
- Remove from heat.
- Add cheese and remaining ingredients, stirring until cheese melts.
- Serve warm or at room temperature with regular or fat free corn or flour tortilla chips.

- Tip the tomatoes, spring onion whites, spices and brown sauce into a saucepan. Bring to a simmer and bubble for 10 mins.
- Stir in the beans with some seasoning and heat through for 5 mins. Meanwhile, toast the bread, then chunkily dice half the avocado and mix with a squeeze of lemon or lime juice.
- Squash the remaining avocado over one of the pieces of toast, and sandwich with the other. Sit on a plate and top with the hot chilli beans, followed by the diced avocado and a dollop of cooling yogurt. Scatter with the spring onion greens and tuck in.
