1 1/2 teaspoons chipotles in adobo sauce (recommended: La Victoria)
3/4 cup mayonnaise (recommended: Best Foods)
1 1/2 pounds lean ground beef
2 tablespoons Tex-Mex chili seasoning (recommended: McCormick's)
2 teaspoons chipotles in adobo sauce (recommended: La Victoria)
1/4 cup beer of choice
Salt and pepper
2 slices pepper Jack cheese (recommended: Tillamook)
Hamburger buns, toasted
Lettuce, tomatoes, onions
Sliced avocado, optional

Steps:

  • For the chipotle mayonnaise: Remove peppers from can (you may want to use rubber gloves if sensitive to peppers). Carefully split open and scrape out seeds. Finely chop peppers; set aside.
  • In a small bowl, stir together 1 1/2 teaspoons chopped chipotle peppers and mayonnaise; set aside covered in refrigerator until ready to use.
  • For the burgers: In a mixing bowl, stir to combine ground beef, chili seasoning, 2 teaspoons chopped chipotles, and beer. Wet your hands to prevent sticking and shape into 4 patties slightly larger than the buns; set aside covered in refrigerator if not cooking immediately.
  • Set up grill for direct cooking over high heat. Brush and oil grill before cooking.
  • Season burgers with salt and pepper and place on hot oiled grill. Cook 4 to 5 minutes per side for medium. Place cheese slices on burgers 2 to 3 minutes before burgers are done.
  • Serve hot on toasted bun with lettuce, tomato, onion, sliced avocado, if desired, and a dollop of chipotle mayonnaise.
  • INDOOR: Follow instructions for preparing burgers. Preheat broiler. Place burgers on wire rack over foil-lined baking sheet or broiler pan. Broil 6 inches from heat source for 4 to 5 minutes per side for medium. Place cheese slices on burger 1 to 2 minutes before done. Serve hot on toasted bun with lettuce, tomato, onion, sliced avocado (if desired), and a dollop of chipotle mayonnaise.

2 tablespoons cider or white wine vinegar
1 tablespoon Worcestershire sauce
12 slices bacon, 4 slices finely chopped
A drizzle of EVOO - Extra Virgin Olive Oil
1/2 small onion, chopped
2 jalapeño peppers, chopped
4 cloves garlic, chopped
1 1/2 pounds ground beef
1/2 tablespoon cumin, half a scant palmful
1/2 tablespoon ground coriander, half a palmful
1 tablespoon smoked sweet paprika, a scant palmful
1 teaspoon Mexican oregano
4 slices smoked or sharp cheddar
4 slices Pepper Jack cheese
4 crusty burger rolls, split and toasted
Lettuce and red onions, for topping

Steps:

  • Preparation Place ketchup ingredients in a small pot and simmer 20 minutes over low heat to thicken. Heat oven to 375ºF and bake 8 slices of bacon on slotted pan to crisp. Heat a drizzle of EVOO in a skillet, add chopped bacon and cook to crisp. Remove to a paper towel-lined plate to drain, leaving 2 tablespoons drippings in the pan. Cook onions, jalapeños and garlic in the drippings to soften, 7-8 minutes. Let cool. Place meat in bowl, add chopped bacon, cooled onions and jalapeños, cumin, coriander, paprika, oregano, salt and pepper. Form 4 patties and cook in the skillet over medium-high heat 8-12 minutes, turning once, for medium to well-done. Melt 1 slice of each cheese over each burger during the last minute or 2. Place burgers on buns, top with bacon slices, lettuce, onions and chipotle ketchup.

4 slices bacon, chopped (to be cooked in the frying pan)
olive oil, for drizzling
1 small yellow onion, chopped
2 jalapeno chiles, chopped
4 garlic cloves, chopped
1 1/2 lbs ground beef
1 tablespoon sweet smoked paprika
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1 tablespoon oregano, preferably mexican
salt and pepper
4 slices smoked cheddar cheeseor sharp cheddar cheese
4 slices monterey jack cheese or 4 slices monterey jack pepper cheese
4 crusty burger rolls, split and toasted
lettuce leaf, and red onion slices for serving
1 cup tomato sauce
3 tablespoons pureed chipotle chiles in adobo
2 tablespoons light brown sugar
2 tablespoons vinegar
1 tablespoon Worcestershire sauce

Steps:

  • To Make The Chipotle Ketchup: In a saucepan, combine all of the ingredients. Simmer over low heat until thickened, about 20 minutes. (Store in the refrigerator for up to 1 week.)
  • Preheat the oven to 400 degrees . Place the 8 whole slices of bacon on a broiler pan. Bake in the oven until crisp, about 15 minutes.
  • In a skillet, heat a drizzle of the olive oil over medium-high heat. Add the chopped bacon and cook until crisp, about 5 minutes. Transfer to paper towels to drain, leaving 2 tablespoons of the bacon fat in the pan. Add the yellow onion, jalapenno and garlic to the pan and cook until softened, 7 to 8 minutes. Let cool.
  • In a bowl, combine the beef, chopped bacon, onion mixture, paprika, cumin, coriander and oregano; season with salt and pepper. Form into 4 patties (making them thinner at the centers and thicker at the edges for even cooking). Add to the skillet and cook over medium-high heat, turning once, for 8 minutes for medium doneness. Add 1 slice of each cheese on top during the last minute or two of cooking.
  • Layer each roll bottom with a burger, 2 bacon slices, lettuce, red onion, Chipotle Ketchup and a roll top.

1 tablespoon olive oil
28 ounces can whole tomatoes
1/2 cup apple cider vinegar
1/4 cup brown sugar
1 teaspoon molasses
1/2 teaspoon cinnamon

1 teaspoon celery seed
3 chipotle peppers in adobo seasoning
salt, to taste

Steps:

  • On medium low heat, cook the diced onion in the olive oil in a medium-sized pot just until the onions start to brown a bit on the ends.
  • Add the tomatoes and their juice to the pot, crushing the tomatoes with the back of a spoon.
  • Stir in the rest of the ingredients, bring to a boil and then simmer for an hour, stirring occasionally.

But not for long! We can finally take back the bad rap of crumbly turkey burgers everywhere with these moist and juicy Tex-Mex-inspired patties, all thanks to a humble can of creamed corn. On the flavor front, we've got spices, herbs, veggies, cheese, and a chipotle mayo, so there's no chance this formerly blank canvas is going to be a bland burger.

1/2 cup mayonnaise
2 teaspoons sauce from canned chipotles in adobo sauce
2 teaspoons fresh lime juice
1/2 teaspoon kosher salt
1 pound lean ground turkey
1/4 cup canned creamed corn (see Cook's Note)
1/4 cup breadcrumbs
1 large egg
1/4 cup minced onion
2 tablespoons chopped fresh cilantro
1 1/2 teaspoons ground cumin
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
Cooking spray
4 slices Monterey Jack cheese
4 brioche hamburger buns
Lettuce, tomato, and avocado, for topping

Steps:

  • Make the mayo: In a large bowl, whisk together the mayonnaise, adobo sauce, lime juice, and salt. Cover and refrigerate for up to 2 days.
  • Make the burgers: In a large bowl, combine the ground turkey, creamed corn, breadcrumbs, egg, onion, cilantro, cumin, salt, and pepper. Using your hands, mix together the ingredients just until combined. Shape the mixture into four patties.
  • Heat a large skillet over medium heat, then coat the skillet with cooking spray. Add the patties and cook for 5 minutes on one side, then flip them and cook until they are no longer pink and have reached an internal temperature of 165 degrees F, an additional 10 minutes. Top each burger with a slice of cheese.
  • Spread a portion of the chipotle mayo on the bottom half of each bun. Top the mayo with a burger, then add lettuce, tomato, avocado, and the top half of the bun and serve.

12 slices good-quality smokey bacon, 4 slices finely chopped and 8 left whole
1 1/4 lbs 80% lean ground beef
3 -4 tablespoons grated onions
2 garlic cloves, finely chopped
2 tablespoons pureed chipotle chiles in adobo
2 tablespoons Worcestershire sauce
salt
pepper
extra virgin olive oil
3 tablespoons butter
2 tablespoons flour
1 cup milk
1 1/2 cups shredded cheddar cheese
1 (14 ounce) can diced tomatoes with green chilies, well drained
4 soft burger rolls, split
crisp yellow corn chips
chopped onion, tomatoes, cilantro, and pickled jalapenos

Steps:

  • Arrange the 8 whole bacon slices on a broiler pan and bake at 375 degrees until crisp, 10-12 minutes.
  • Meanwhile, preheat a cast-iron skillet or griddle over medium-high heat. Combine the beef, chopped bacon, grated onion, garlic, chiopotle puree and Worcestershire sauce; season with s&p. Form into 4 patties (thinner at the center) drizzle with oil.
  • Grill the burgers for 5 minutes on each side for medium.
  • Make the queso sauce in a medium sauce pan, melt the butter over medium heat. Whisk in the flour for 1 minute then whisk in the milk. Stir in the cheese to melt. Stir in the tomatoes. Place the burgers on the bun bottoms and top with the queso sauce, criss-crossed bacon strips, corn chips, and remaining toppings and bun tops.
  • Serve extra sauce on the side.
