ROCK SHRIMP BURGERS WITH WASABI MAYO

- Heat your grill.
- For the Wasabi Mayo: Mix all the ingredients together. Taste and adjust the seasoning. Cover and refrigerate until ready to use.
- For the Rock Shrimp Burgers: process half the shrimp with the egg. Coarsely chop the remaining shrimp and put it into a bowl. Add the processed shrimp and the parsley, bread crumbs, and salt and pepper to taste. Divide the mixture into 4 portions and form them into patties. Grill them on medium heat until cooked through, about 3 to 4 minutes per side. (You can also fry them in a skillet with a little oil.)
- To serve: place a burger onto a bun. Top with a slice of tomato and some Wasabi Mayo. Cover with the bun top and serve.
- For mini-burgers: Prepare the buns by cutting out smaller buns with a 1 1/2-inch diameter ring mold or biscuit cutter. Take a heaping tablespoon of the burger mixture and form it into a small patty. Continue with the remaining mixture until all the burgers are formed. Grill them over medium heat until browned and cooked through, about 3 to 4 minutes per side. Place a shrimp burger onto a mini-bun. Top with a slice of cherry tomato and some Wasabi Mayo. Cover with the bun top and secure them with a toothpick.
JAPANESE BURGERS WITH WASABI KETCHUP

- Prepare the wasabi ketchup: Whisk together the ketchup, soy sauce and wasabi paste.
- Make the burgers: Prepare a grill for medium heat. In a large mixing bowl, combine the bread crumbs and milk and let rest 2 to 3 minutes. Add the sirloin, pork, onion, soy sauce, salt and pepper. Knead the meat until it becomes sticky and binds together; divide into 4 parts.
- Lightly dab your hands with sesame oil. Using your palms, roll each part of the meat into a ball, then pat the ball flat, shifting it from hand to hand, to form a 1/2-inch-thick patty. Make a shallow indentation across the center of the patty with the side of your hand, to keep it from puffing while it grills.
- Grill the burgers, flipping twice, until browned and cooked through, with no pink in the middle, about 10 minutes. (Alternatively, they may be broiled or sautéed.) Let rest for 2 minutes. Serve on buns, topped with some wasabi ketchup.

- Wrap a sushi rolling mat completely in plastic wrap and set aside.
- Bring water and rice to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes. Transfer rice to a bowl and cut in rice vinegar using a rice paddle or wooden spoon. Season with 1 teaspoon sugar and 1 teaspoon salt, or to taste. Allow to cool to room temperature, about 30 minutes.
- Combine crab meat with mayonnaise in a small bowl.
- Place a sheet of nori on a flat work surface. Spread a thin layer of rice on top of the nori. Place the nori, rice side down, on the prepared rolling mat. Place 2 to 3 avocado slices on top of the nori in one layer. Top with 2 to 3 tablespoons of the crab mixture. Spoon 1 to 2 teaspoons tobiko lengthwise on one side of the avocado-crab mixture, and 2 cucumber strips on the other side. Using the mat as a guide, carefully roll the California roll into a tight log. Remove the rolling mat. Top roll with more tobiko, cover with plastic wrap, and gently press the tobiko into the top of the roll. Remove the plastic and cut roll into 6 even pieces using a wet knife. Repeat with remaining sheets of nori and filling. Serve garnished with pickled ginger, soy sauce, and wasabi paste

- In a bowl, beat eggs, stir in 1/3 cup of the bread crumbs, onions salt, pepper, mix in the imitation crabmeat.
- Shape into 4 1/2 nch thick patties, sprinkle remaining bread crumbs in a shallow dish, dip patties into crumbs, turning and patting to coat.

- Heat grill.
- Mayonnaise: Stir water into the wasabi powder in a small bowl and let stand for 5 minutes. Stir in mayonnaise.
- Burgers: Using your hands, gently mix turkey with scallions, soy sauce, mirin, sesame oil and 1 teaspoon of the salt in a large bowl. Divide turkey mixture into 6 equal portions, then into balls by gently tossing from hand to hand. Shape into 6 loosely packed 1-in. thick patties. Press the center of each patty so it is slightly thinner than the edges. Brush with oil and season the outside with salt and black pepper to taste.
- Grill burgers, turning once, until cooked through, about 14 minutes total. Set burgers aside to rest while grilling the buns until lightly toasted. Season the avocado and tomato with salt to taste. Serve the burgers on the buns with the wasabi mayonnaise, avocado, tomato, sprouts and pickled ginger.

this recipe was in AARP adapted from Sara Moulton's Weeknight Meals. We tried it and found it delicious!! In fact so much so, we had a 32lb hen turkey in the freezer, cut her up and ground the meat so we can use for this recipe and others. It's an easy recipe to make and very good for you. - mix together turkey, scallions, bell pepper (I used a small), egg white (I used 2 whole eggs), cilantro, 2 T soy sauce, ginger, 1/2 t sesame oil, salt and pepper. Shape into 6 patties about 1/2 inch thick.
- Heat 2 T veg. oil in skillet until hot, reduce heat to medium; add turkey burgers and cook 5 min on each side or until cooked thru, adding more oil as needed.

BLT BURGERS WITH GARLICKY MAYONNAISE
We love burgers, plain or fancy. This recipe from Food and Wine is a nice alternative to an ordinary burger, suitable for serving to guests. You can make the mayo hotter or milder depending on your taste by using more or less of the chipotle. We liked it just the way it is. I did change the amount of bacon and ground beef, the original recipe called for 1/2 pound burgers and this version makes up 4 1/4 pound burgers.

- Cook the bacon until crisp, drain on paper towels then crumble.
- In a mini food processor, pulse the sun-dried tomatoes with the garlic, Chipotle and vinegar until finely chopped.
- Add the mayonnaise and puree until smooth.
- Add the bacon, season with salt and pepper and pulse just until combined.
- Form the meat into 4 patties and brush lightly with olive oil.
- Season with salt and pepper and grill until desired doneness.

- Dice salmon and run through a food processor just until almost ground, but not completely. You don't want to over process it.
