Boozy Chocolate Liqueur Cake (So Easy) image

This boozy chocolate liqueur cake is the definition of decadence. Your new favorite chocolate cake recipe for special occasions!

5 eggs
1 cup sugar
3/4 cup flour
3 tbsp cacao powder
1 1/2 cup semi-sweet chocolate chips
1 cup unsalted butter (softened at room temperature)
10 oz sweetened condensed milk
2 cup heavy whipping cream (very cold)
1 cup heaving whipping cream (for soaking)
1/2 cup Irish cream liqueur (for soaking)
3 tbsp cacao powder (for decorating )
1 shaved chocolate bar (for decorating)

Steps:

  • Using a hand or stand mixer, beat the eggs and sugar together until it's three times in volume.
  • Next, sift the flour and cacao powder together. Using a spatula, fold in the flour mixture by thirds (be extra careful not to overmix).
  • Place batter into 9-inch round pan. Bake at 350°F for 30 minute. To check the doneness, insert a toothpick into the center of the cake. If it comes out clean, it's ready.
  • Allow the cake to completely cool and slice it into three or four evenly-sized layers.
  • To make the soaking cream, whisk the heavy whipping cream and liqueur together. Use a spoon or squirt bottle to saturate each layer with the soaking cream.
  • Melt the semi-sweet chocolate chips in the microwave, stirring them every 10-15 seconds until silky smooth. Using a stand or hand mixer, whip the melted chocolate, softened butter, and condensed milk together until well-combined.
  • In a separate bowl, beat the very cold heavy whipping cream until it reaches soft peaks. Fold in the chocolatey butter mixture.
  • To assemble the cake, place a cake layer on a plate. Spread on a layer of cake cream. Repeat until your run out of cake layers.
  • Using the remaining cream, decorate the outside of the cake.
  • Dust sides of the cake with the cacao powder and shaved chocolate. Enjoy!

4 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
1 1/2 cups all purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon coarse kosher salt
1/4 teaspoon baking soda
1/2 cup whole milk
1/2 cup plain whole-milk yogurt
1 1/2 cups (packed) golden brown sugar
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
2 teaspoons dried lavender blossoms,* finely ground in spice mill
4 large eggs
Buttercream frosting
8 ounces bittersweet or semisweet chocolate, chopped
1/2 cup unsweetened cocoa powder
7 tablespoons (or more) water
1 1/2 cups (3 sticks) unsalted butter, room temperature
4 cups powdered sugar, divided
1 tablespoon grated orange peel
2 teaspoons vanilla extract
1/2 teaspoon coarse kosher salt
1 tablespoon Grand Marnier or other orange liqueur
Chocolate curls

Steps:

  • For cake:
  • Position rack in center of oven and preheat to 325°F. Butter and flour two 9-inch-diameter cake pans with 1 1/2-inch-high sides. Line bottoms of pans with parchment paper rounds. Stir chocolate in top of double boiler set over simmering water until smooth. Remove from over water. Cool to barely lukewarm.
  • Sift flour and next 4 ingredients into medium bowl. Whisk milk and yogurt to blend in small bowl. Using electric mixer, beat brown sugar, butter, and lavender in large bowl until smooth. Beat in eggs, 1 at a time. Beat in melted chocolate until smooth. Mix in dry ingredients alternately with milk mixture in 3 additions each. Divide batter between prepared pans.
  • Bake cakes until tester inserted into centers comes out clean, about 30 minutes. Cool cakes in pans on racks 15 minutes. Turn cakes out onto racks; remove parchment and cool completely.
  • For buttercream frosting:
  • Stir 8 ounces chocolate in top of double boiler set over simmering water until smooth. Cool until barely lukewarm but still pourable. Mix cocoa powder and 7 tablespoons water in heavy small saucepan. Stir over medium-low heat until smooth and thick but still pourable, adding more water by teaspoonfuls if necessary. Cool.
  • Beat butter, 1/3 cup powdered sugar, and orange peel in large bowl to blend. Add melted chocolate, vanilla, and salt; beat until smooth. Beat in cocoa mixture. Gradually add remaining 3 2/3 cups powdered sugar and beat until frosting is smooth. Mix in Grand Marnier.
  • Place 1 cake layer on platter. Spread 1 1/2 cups frosting over top of cake. Top with second cake layer. Spread remaining frosting over top and sides of cake, swirling decoratively. Mound chocolate curls in center of cake. (Can be made 1 day ahead. Cover with cake dome and refrigerate. Let cake stand at room temperature 2 hours before serving.)
  • *Dried lavender blossoms are available at natural foods stores and at some specialty foods stores and farmers' markets.

2 cups confectioners' sugar, sifted
1 cup cocoa powder, sifted
1/3 cup Godiva original chocolate liqueur
2 cups flour, sifted
1 teaspoon baking soda
1/4 teaspoon salt
6 ounces unsalted butter
1 1/3 cups granulated sugar
3 large eggs
3 ounces unsweetened chocolate, melted
1 cup buttermilk
1 cup Godiva original chocolate liqueur, divided
to taste chocolate, shaved (optional)

Steps:

  • For the buttercream: cream butter until smooth.
  • Sift the sugar and cocoa powder over the butter, add 1/3 cup of Godiva liqueur and slowly mix until smooth.
  • For the cake: sift together the flour, baking soda and salt; set aside.
  • Cream the butter and sugar and add the eggs one at a time beating after each addition.
  • On low speed, stir in the chocolate and gradually add the reserved sifted ingredients in three additions, alternating with the buttermilk and 1/2 of the liqueur, beat until smooth.
  • Divide the batter among 3 greased and floured 9" cake pans.
  • Bake in a preheated oven 375: for 25 minutes or until a toothpick inserted in center comes out clean.
  • Remove from oven and cool in pans for 10 minutes, then invert onto rack to cool completely.
  • Chill the layers in the freezer for about 30 minutes until firm.
  • To assemble the cake: remove the cake layers from the freezer and brush with the remaining liqueur before spreading 3/4 cup of the buttercream between each layer.
  • Spread the remaining buttercream over the top and sides of the cake which has been placed on a serving plate.
  • Serve immediately or refrigerate. If not serving immediately and have it stored in the refrigerator, remove the cake 1 hour prior to serving.
  • Garnish with chocolate curls if using.
