BROILED TUNA TERIYAKI
Found on the Robert's Food Center website -- this wonderfully simple recipe gives a fabulous flavor to Ahi. Broil, or use your bbq grill. Ahi is easy to prepare, and use all the various grades with this marinade for a quick and tasty main dish. Prep time does not include 1/2 hour chill time.

Steps:
- Using a zip-lock plastic bag, combine all ingredients except fish; shake to combine.
- Place tuna steaks in bag with marinade; chill for at least 30 minutes.
- Broil or grill until done-- brushing with marinade (medium-well done is 4 minutes per side for 3/4 to 1 inch steaks).
TERIYAKI TUNA WITH WASABI MAYONNAISE AND PICKLED GINGER
A lovely, fresh recipe with asian flavours - perfect for cooking on the barbecue. Prep time includes marinating time.

Steps:
- Mix the teriyaki marinade, five spice powder and ginger.
- Place tuna slices into a non-metallic dish.
- Pour over the marinade.
- Cover with plastic wrap and leave to marinade for 10 minutes.
- In a large non-stick pan (or use your barbecue) heat the oil.
- Fry the tuna over fairly high heat for 1-2 minutes each side (or until cooked to how you like them).
- Mix together the mayonnaise and wasabi paste.
- Serve the tuna with some of the wasabi mayonnaise and place some pickled ginger on top.
- Very yummy with plain, boiled rice and stir-fried chinese greens.
HERB CRUSTED SEARED TUNA WITH WASABI MAYONNAISE, GINGER CONFIT ON ENDIVE
Steps:
- Have tuna sliced as thick as possible cutting against the grain into 1 1/2-inch rectangular pieces. Rub the fish with olive oil and roll in thyme, peppercorns, salt, and pepper. On a very hot grill sear the fish on each side for 30 seconds to 1 minute depending upon the desired doneness. Set aside and slice into 1-inch thick pieces.
- For wasabi mayonnaise, start with 1 tablespoon of wasabi powder mixed with mayonnaise and add more, if desired, to taste.
- Slice ginger into very thin sticks about 1-inch long. Place ginger, sugar, water and lemon juice into heavy saucepan and reduce to thick syrup. Be careful not to boil past medium ball state.
- On individual washed white endive leaves place fish. Garnish with wasabi mayonnaise that has been put in a squeeze bottle and finish with a few pieces of ginger confit.
GINGER TUNA WITH A WASABI DRIZZLE AND KUMARA GINGER FRITTERS
This dish came together by accident and it was absolutely delicious, I have been experimenting again lately combining new ingredients and flavours. Tuna is always yummy and it is such a healthy meal. The Kumara (sweet potato) fritters were oh so yummy, the recipe below makes between 16 and 20 fritters depending on how big you dollop the mixture into the pan. It is the right amount if your making this for 6 but I was only making this for 4 so I had fritters left over, instead of throwing them out, I saved them and they were still great the next day. As they were already cooked I just heated a pan first, then added them and just cooked for a few minutes to re-warm it made for a great lunch.

- In a large bowl combine oil, ginger, chilie and lemongrass, add tuna. Cover and refrigerate at least 30 Min's or until required.
- Drain tuna over a small bowl, reserve marinade.
- Either BBQ tuna or as it is winter where I am, I placed tuna on a wire rack in an oven proof dish and cooked under the grill about 4 inches from the heat, for about 3-4 minutes a side.
- Wasabi Drizzle.
- Combine wine, sugar and vinegar in a pan, heat until liquid just comes to the boil, turn down and simmer, uncovered, until reduced by half, cool slightly, stir in wasabi and sour cream.
- Kumara Ginger Fritters.
- Heat oil in a pan, add onion, zucchini and ginger, cook until onion softens, stir in chili sauce.
- Combine onion mixture, kumara, coriander, egg, flour and seeds in a large bowl.
- Heat oil for frying, add mixture in 1 tablespoon lots to oil, cook until browned on both sides and cooked through, drain on absorbent paper.
- Chili Coriander Yogurt.
- Combine all the ingredients in a bowl, mix well.
- To Serve: Place tuna on a plate and drizzle with wasabi sauce, arrange some salad greens on the plate top with fritters and dollop yogurt on the top of each fritter. I served 3 fritters per person but serve as many as you like.

GRILLED TERIYAKI TUNA
I found this at another site and love it! Here is the original description. "Yellowfin tuna is always delicious when grilled. This is great at a tailgate party, or at your Saturday afternoon summer barbecue. You can add a little cayenne pepper or minced fresh ginger to the marinade to give it a little extra kick."

- In a large resealable plastic bag, combine the teriyaki sauce, oil, garlic, and pepper. Place the tuna fillets in the bag. Seal the bag with as little air in it as possible. Give the mix a good shake, to ensure the tuna fillets are well coated. Marinate for 30 minutes in the refrigerator.
- Meanwhile, preheat an outdoor grill for high heat, and lightly oil grate.
- Remove tuna from marinade, and place on grill. For rare tuna, grill for 3 to 5 minutes on each side. For medium, grill 5 to 8 minutes per side. For well done, grill for 8 to 10 minutes per side.
GINGER MARINATED TUNA WITH WASABI BUTTER
If you are expecting the sinus-clearing heat of the wasabi you will be disappointed. The orange mellows out the flavor and leaves a sweet heat. This recipe is from Cuisine at Home.

Steps:
- For the butter, mix all ingredients together in a small bowl; cover and refrigerate until ready to serve.
- For the marinade, place all ingredients in blender jar and blend until ingredients are coarsely chopped and blended.
- Wash the tuna steaks under water, pat dry and place in shallow container.
- Pour prepared marinade over tuna and allow to marinate for 30 minutes.
- Preheat grill to medium-high.
- Remove the tuna from marinade, spray lightly with non-stick cooking spray to prevent from sticking to grill.
- Place the steaks on preheated grill and grill until your desired degree of doneness, turning once.
- Top each cooked steak with 1/2 to 1 teaspoon wasabi butter and serve with additional butter on the side.
- Please note that the cook time reflects the 30 minute marinade time.
