Number Of Ingredients 10

Teriyaki marinade:
2 tablespoons reduced-sodium soy sauce
1 tablespoon light olive oil
1 teaspoon dark sesame oil
1 tablespoon honey or maple syrup
2 teaspoons rice vinegar or white wine vinegar
1/2 teaspoon grated fresh ginger or a good pinch of ground ginger
2 teaspoons hoisin sauce, optional
One 16-ounce tub extra-firm tofu
1 or 2 scallions, thinly sliced, optional

Steps:

  • 1. Combine all the ingredients for the marinade in a small bowl and stir together.
  • 2. Cut the tofu into 1/2-inch-thick slices. Blot well between clean tea towels or several layers of paper towels, then cut each slice through the thickness again to make 1/4-inch-thick slices. Blot briefly again.
  • 3. Cut each slice into 2 squares, then each square on the diagonal into 2 triangles. Place in a shallow pan and drizzle with the marinade. Gently turn the tofu pieces over so that both sides are coated with marinade. Let stand for 10 minutes or so.
  • 4. Heat a wide nonstick skillet. Transfer the tofu and marinade into the skillet. Cook over medium-high heat, stirring gently and frequently, until the tofu is nicely browned on most sides.
  • Scatter scallions over the tofu if desired, and serve at once.

This is one of the tastiest ways I have ever prepared tofu. It's a great and flavorful vegetarian dish hailing from Mollie Katzen's "The Enchanted Broccoli Forest." Mollie says: "I like to blanch the tofu triangles in simmering water for about 10 minutes ahead of time to really firm them up. Then I drain them thoroughly and proceed with the recipe. This step is optional, and can be done up to several days ahead of time. If youÕre not going to use the pre-cooked tofu within a few hours of boiling it, store it in a tightly covered container in the refrigerator."

1 1/2 lbs very firm tofu
6 tablespoons canola oil
1/2 cup dry sherry
1/4 cup soy sauce
1 3/4 cups water
1/4 cup cider vinegar, plus
1 teaspoon cider vinegar
3 tablespoons honey or 3 tablespoons sugar
8 large garlic cloves, minced
1 tablespoon dry mustard
4 tablespoons cornstarch
3 cups chopped onions (1-inch chunks)
1 medium yellow bell pepper, in strips
1 medium red bell pepper, in strips
1 1/2 teaspoons salt
black pepper
crushed red pepper flakes
6 scallions, minced (include greens as well as whites)

Steps:

  • Cut the tofu into triangles about 1/2 inch thick and about 2 1/2 inches on the long side.
  • Heat 4 tablespoons of the oil in a wok or skillet over medium heat. When the oil is hot enough to bounce a bread crumb, add the tofu pieces and fry them on each side for a few minutesÐ until lightly crisp. Remove the tofu and drain on paper towels. (You may have to fry the tofu in batches.).
  • In a medium-sized saucepan, combine the sherry, soy sauce, water, vinegar, honey or sugar, garlic, and dry mustard. Place the saucepan over medium heat and heat until just before the boiling point, then remove from heat Place the cornstarch in a small bowl and pour in a little of the hot liquid, whisking until it dissolves. Return this mixture to the saucepan, whisking as you pour. Set aside, leaving the whisk in there (youÕll need it again).
  • Heat the wok or skillet again. Add the remaining tablespoon or two of oil and the onion, and cook the onion over high heat for about 2 minutes. Add the bell peppers, salt, and black and red pepper to taste, and cook for only 1 to 2 minutes longer. Gently stir in the tofu triangles.
  • Whisk the sauce (from step 3) to recombine, and quickly pour it into the wok. Stir and cook over medium-high heat for about 5 to 8 minutes, or until the sauce is thick and everything is coated. Toss in the scallions at the very end, and serve hot, over rice.

1 cup onion, minced
2 cloves garlic, minced
1 teaspoon fresh ginger, peeled & minced
1 cup carrot, grated
1 cup daikon radish, diced 1/2 " cubes
1 tablespoon lite olive oil (or other veggie oil)
1 cup bell pepper, diced (red & green)
1 1/2 cups teriyaki sauce, ready prepared,thick style
1 cup snow peas, sliced on the diagonal
1 cup bean sprouts
2 tablespoons cilantro or 2 tablespoons regular parsley, chopped

Steps:

  • Saute the garlic, onion,ginger,carrot& daikon in the olive oil about 5 minutes.
  • Add peppers& tofu saute 3 minutes.
  • Add Teriyaki sauce, snow peas, bean sprouts& cilantro.
  • Stir, cover,& simmer for 1 minute.
  • Serve with rice or noodles.

Grilling the veggies and tofu adds so much flavor to this vegetarian dish. I recommend using a grill topper or pan to make grilling the vegetables easier. For a lower carb option, serve over cauliflower rice.

1 (16 ounce) package extra firm tofu, drained and pressed
⅔ cup teriyaki sauce, divided
1 large red bell pepper
2 small zucchini
½ fresh pineapple, peeled and cored
1 large onion
¼ cup olive oil
salt and ground black pepper to taste
2 cups hot cooked rice
1 tablespoon sesame seeds

Steps:

  • Slice tofu into 4 thick slices. Marinate in 1/3 cup of teriyaki sauce while you prepare the vegetables.
  • Cut bell pepper into 4 wedges; remove core and seeds. Cut ends off zucchini, then cut each zucchini in half lengthwise. Slice pineapple into 4 wedges. Cut onion into quarters. Place vegetables and pineapple onto a large platter. Brush with olive oil and season vegetables with salt and pepper.
  • Preheat an outdoor grill for medium-high heat and lightly oil grate.
  • Grill onions for 4 minutes, turning halfway through. Add bell pepper, zucchini, and pineapple to the grill and continue grilling, turning occasionally, until done to your liking, 8 to 10 minutes. Remove to a platter as each item finishes cooking, and cut into bite-sized pieces when cool enough to handle.
  • Remove tofu from the marinade. Lightly oil the grate and grill 2 to 3 minutes per side.
  • Divide hot rice between 4 bowls. Top with grilled vegetables, pineapple, and tofu. Drizzle with remaining 1/3 cup teriyaki sauce. Sprinkle with sesame seeds and serve.
