3 tablespoons vegetarian teriyaki sauce
2 green onions, chopped
1 tablespoon sherry
1 teaspoon minced garlic
1 teaspoon Sriracha sauce
½ teaspoon ginger paste
5 tablespoons cornstarch
1 (14 ounce) package extra-firm tofu, pressed and cut into slices
2 tablespoons olive oil

Steps:

  • Whisk teriyaki sauce, green onions, sherry, garlic, Sriracha sauce, and ginger paste together until smooth. Set aside.
  • Place cornstarch in a gallon-sized plastic zip-top bag. Drop tofu slices into the bag, seal, and gently shake until all the tofu is coated.
  • Heat olive oil in a large skillet over medium-high heat. Cook tofu for 5 minutes. Flip with tongs and cook until browned on the second side, about 5 minutes more. Transfer the tofu to a plate and wipe the skillet clean.
  • Pour reserved sauce into the skillet and cook until slightly thickened, about 2 minutes. Remove from heat. Return the tofu to the skillet and toss to combine. Transfer the tofu to serving plates and spoon sauce on top just before serving.

1 pack of 16oz firm tofu, drained well⁣⁣⁣⁣⁣⁣
¼ cup chopped celery⁣⁣
¼ cup chopped broccoli stem/jicama/water chestnut⁣⁣
1 small carrot, chopped⁣⁣⁣⁣⁣⁣
2.5 tablespoons starch⁣⁣
1-2 teaspoons salt (start with 1 first)
a pinch of white pepper⁣⁣⁣⁣⁣⁣
oil⁣⁣
your favorite grain & blanched broccoli⁣⁣
1 teaspoon minced garlic⁣⁣
1 teaspoon minced ginger⁣⁣
2 tablespoons soy sauce⁣⁣
2 tablespoons mirin
1.5 tablespoons organic brown sugar/maple syrup⁣⁣
¼ cup hot water⁣⁣
(adjust sweetness/saltiness to your preference)⁣⁣

Steps:

  • Mash tofu in a bowl, if it's too wet, use a paper towel to absorb moisture. Add in chopped veggies, starch, salt & white pepper to tofu & mix until well combined. Take about 1 tablespoon of the mixture & mold it into a small ball. ⁣⁣
  • In a heated non-stick pan, drizzle a thin layer of oil covering the pan & pan-fry tofu balls until golden brown. Drain excess oil on a paper towel, set aside.⁣⁣
  • ⁣⁣To make the teriyaki sauce, heat 1 teaspoon oil in a pan, sauté ginger & garlic until fragrant. Add in all liquid, syrup/sugar & cook until sauce starts to thicken (you can store this in a jar for later use too). Turn off the heat, toss tofu balls with the sauce. Serve warm with blanched broccoli & rice for a delicious meal.⁣⁣

7 ounces firm tofu, cut into cubes
2 ounces almonds
1 ounce pumpkin seeds
2 tablespoons ground flaxseed
1 tablespoon low-sodium soy sauce
1 tablespoon toasted sesame oil
2 cloves garlic, chopped
One 1-inch piece peeled fresh ginger, chopped
4 sundried tomatoes
2 ounces sesame seeds
2 tablespoons finely grated fresh ginger
1 tablespoon toasted sesame oil
2 cloves garlic, finely minced
3 tablespoons low-sodium soy sauce
1 tablespoon mirin
1 tablespoon light brown sugar
1 teaspoon rice vinegar
1 teaspoon cornstarch mixed with 1 tablespoon water
2 tablespoons finely chopped cilantro
1 scallion, thinly sliced

Steps:

  • Preheat the oven to 350 degrees F.
  • For the sesame tofu bites: In a food processor, add the tofu, almonds, pumpkin seeds, ground flaxseed, soy sauce, sesame oil, garlic, ginger and sundried tomatoes. Pulse until the mixture comes together, but still has some texture, 8 or 9 pulses. Be careful not to over process.
  • Roll the mixture into 1-teaspoon balls using clean hands.
  • On a small plate, roll each ball in the sesame seeds to coat and then place on a baking sheet.
  • Bake for 15 to 20 minutes until golden brown.
  • For the teriyaki sauce: Place the finely grated ginger, sesame oil and garlic in a small saucepan and warm through over a low heat for about 1 minute. Then add the soy sauce, mirin, brown sugar and rice vinegar. When the sugar has dissolved, pour in the cornstarch slurry and continue to stir over low heat for a couple of minutes until thickened and glossy.
  • When the tofu balls are cooked, remove them from the oven. Pour the sauce onto a serving platter.
  • Arrange the sesame tofu bites on top of the teriyaki sauce.
  • Sprinkle over the cilantro and scallions.
  • Serve with cocktail sticks on the side.

I got this recipe from the Biggest Loser Cookbook. I have made it with both tofu and chicken and both times it tasted great!! When I use chicken I only use 6 oz. instead of the 12 oz. called for if using tofu. Very great taste, may be slightly too salty for some, but I really enjoy this dish!!

3 whole green onions, finely chopped
1 teaspoon fresh garlic, minced
1 teaspoon fresh ginger, minced

1/4 teaspoon hot sesame oil
1 cup fresh broccoli, chopped
2 tablespoons light teriyaki sauce
1/8 teaspoon red pepper flakes

Steps:

  • Place a nonstick wok or skillet over high heat until it is hot enough for a spritz of water to sizzle on it.
  • With an oven mitt, briefly remove the pan from the heat to lightly mist with olive oil spray; heat for 3 seconds.
  • Add the tofu, green onions, garlic, ginger, olive oil, and sesame oil; cook, stirring frequently, for about 12 minutes, or until the tofu is browned on all sides.
  • Stir in the teriyaki sauce and season with red-pepper; cook for 30 to 60 seconds, or until the sauce thickens slightly.
  • Serve immediately.

Grilling the veggies and tofu adds so much flavor to this vegetarian dish. I recommend using a grill topper or pan to make grilling the vegetables easier. For a lower carb option, serve over cauliflower rice.

1 (16 ounce) package extra firm tofu, drained and pressed
⅔ cup teriyaki sauce, divided
1 large red bell pepper
2 small zucchini
½ fresh pineapple, peeled and cored
1 large onion
¼ cup olive oil
salt and ground black pepper to taste
2 cups hot cooked rice
1 tablespoon sesame seeds

Steps:

  • Slice tofu into 4 thick slices. Marinate in 1/3 cup of teriyaki sauce while you prepare the vegetables.
  • Cut bell pepper into 4 wedges; remove core and seeds. Cut ends off zucchini, then cut each zucchini in half lengthwise. Slice pineapple into 4 wedges. Cut onion into quarters. Place vegetables and pineapple onto a large platter. Brush with olive oil and season vegetables with salt and pepper.
  • Preheat an outdoor grill for medium-high heat and lightly oil grate.
  • Grill onions for 4 minutes, turning halfway through. Add bell pepper, zucchini, and pineapple to the grill and continue grilling, turning occasionally, until done to your liking, 8 to 10 minutes. Remove to a platter as each item finishes cooking, and cut into bite-sized pieces when cool enough to handle.
  • Remove tofu from the marinade. Lightly oil the grate and grill 2 to 3 minutes per side.
  • Divide hot rice between 4 bowls. Top with grilled vegetables, pineapple, and tofu. Drizzle with remaining 1/3 cup teriyaki sauce. Sprinkle with sesame seeds and serve.

Steps:

  • Whisk together soy sauce, pineapple concentrate, ketchup, sugar, onions, ginger, garlic, lemon juice, sesame oil and sesame seeds.
  • Grill pineapple slices over medium heat, brushing often with sauce, until pineapple is brown and tender, 2 to 3 minutes each side.
  • Cut tofu into quarters lengthwise then in half crosswise.
  • Gently set tofu slices on grill and brush with sauce.
  • Carefully turn several times so tofu browns evenly, brushing with sauce.
  • Grill 2 to 3 minutes per side.
