2 tablespoons canola oil
1/4 cup chopped white onion
2 -3 minced garlic cloves
1 1/2 teaspoons grated fresh ginger
1/2 cup teriyaki sauce
1/4 honey
4 (6 ounce) center cut swordfish steaks

Steps:

  • In a medium saucepan, heat the oil over medium heat.
  • Add onion, garlic and ginger, saute about 3 minutes.
  • Add teriyaki sauce and honey; bring to a boil, stirring constantly.
  • Simmer about 2 minutes.
  • Allow to cool to room temperature.
  • In a small dish reserve 1/4 cup sauce for basting, cover and place in fridge.
  • Put the fish steaks in a large resealable plastic bag and pour remaining sauce over them.
  • Put the fish in fridge and marinate 2 to 3 hours.
  • Preheat the grill for 5 minutes.
  • Spray both sides of grill with non-stick cooking spray.
  • Grill fish steaks for 4 minutes or until almost half done.
  • Open grill and remove steaks; wipe grill clean and spray both sides again with non-stick cooking spray.
  • Return the steaks to the grill and baste with the reserved 1/4 cup sauce.
  • Grill 3 more minutes.

1 lb swordfish steaks or 1 lb skinless chicken breast half
1 large red bell peppers (or mix of both) or 1 large green bell pepper (or mix of both)
4 green onions
1 (8 ounce) can pineapple chunks (optional)
1 (5 ounce) package chicken and broccoli flavor Rice-a-Roni
1 1/2 tablespoons soy sauce
2 tablespoons dry sherry or 2 tablespoons water
1 tablespoon sesame oil
1 garlic clove, minced

Steps:

  • Cut fish, red or green pepper, and onions into 1 inch pieces.
  • Alternately thread fish, red or green pepper,onions, and pineapple chunks, if using, onto 4 large skewers; set aside.
  • Prepare Rice a Roni mix as package directs.
  • While rice is simmering, combine soy sauce, sherry, oil and garlic.
  • Brush kabobs with soy sauce mixture.
  • Grill over medium coals 14 minutes or broil 5 to 6 inches from heat 10 minutes, or until seafood is opaque, turning once and brushing with remaining soy sauce mixture.
  • Serve rice topped with kabobs.

1/3 cup soy sauce
2 tablespoons vegetable oil
1 tablespoon brown sugar
1 garlic clove, minced
1 teaspoon ground ginger
1 teaspoon seasoning salt
1 1/2 lbs boneless sirloin steaks, cut into 1 1/4 inch cubes
12 fresh mushrooms (whole)
1 large green pepper, cut into pieces
1 large onion, cut into wedges

Steps:

  • In a bowl, combine soy sauce, oil, brown sugar, garlic, ginger and salt; mix well. Pour half of the marinade into a large resealable plastic bag; add beef and turn to coat. Seal; refrigerate for 4-8 hours, turning occasionally. Cover and refrigerate remaining marinade.

1 clove garlic, finely chopped
2 tablespoons chopped cilantro
2 tablespoons lime juice
Salt and pepper
3/4 pound swordfish, cut into 1 1/2 inch cubes

8 canned pineapple chunks, 1/4 cup juice reserved
1 green bell pepper, seeded and cut into 1 inch squares

Steps:

  • Combine marinade ingredients and pineapple juice in a large bowl and add swordfish chunks. Let sit for 15 minutes. Soak 8" bamboo skewers in water for 15 minutes. 1 lemon, zested
1 lime, zested
1 orange, zested
2 ounces olive oil
1 tablespoon ground coriander

Steps:

  • Place swordfish in a non-reactive container. Whisk together zest, olive oil, coriander, herbs and salt. Pour marinade over swordfish and let marinate in refrigerator for 8 hours. 1/2 cup mirin
1/2 cup low-sodium soy sauce
1 tablespoon rice vinegar
2 cloves garlic, grated
3 tablespoons light brown sugar
1 pound skinless salmon fillet, cut into 1-inch cubes
2 teaspoons cornstarch
1 red bell pepper, seeded and cut into 1-inch squares
Kosher salt
2 1/2 cups pineapple chunks (fresh or canned)
Vegetable oil, for brushing the grill pan
Sesame seeds, for serving
Sliced scallions, for serving

Steps:

  • Whisk together the mirin, soy sauce, vinegar, garlic and 1 tablespoon of the brown sugar in a large bowl. Transfer 1/2 cup of the marinade to a small saucepan and set aside. Add the salmon to the bowl with the remaining marinade and toss to coat. Cover and refrigerate for at least 30 minutes and up to 1 hour.
  • Stir to combine the cornstarch and 1/4 cup water in a small bowl, then add to the reserved marinade in the saucepan along with the remaining 2 tablespoons of brown sugar. Bring to a boil and cook until the mixture thickens to a glaze consistency, 4 to 5 minutes. (You should have about 1/2 cup.) Reserve half of the sauce for serving and the other half for basting.
  • Have ready eight 12-inch metal skewers or soak eight 12-inch wooden skewers in water for 30 minutes.
  • Meanwhile, add the bell pepper to a large microwave-safe bowl, then add a splash of water and a pinch of salt. Cover and microwave until the pepper is just tender, 1 to 2 minutes. Let cool.
  • Remove the salmon from the marinade. Thread the salmon onto the skewers, alternating with the pineapple and bell pepper.
  • Heat a grill pan over medium-high heat. Lightly brush the pan with oil.
  • Grill the kebabs, turning occasionally and brushing with half of the reserved teriyaki sauce, until the salmon is opaque throughout and the vegetables are tender, 7 to 9 minutes. Transfer to a serving plate, sprinkle with some sesame seeds and scallions and serve the other reserved teriyaki sauce alongside.

3 tablespoons lemon juice

Steps:

  • If using wooden skewers, soak them in water in a casserole dish or baking sheet for 30 minutes prior to grilling. Prepare a grill or grill pan for medium-high heat; oil the grill grates with olive oil.
  • Mix the balsamic, lemon juice and mustard in a small bowl. Add the olive oil in a slow stream while whisking. Season with salt and pepper.
  • Thread the fish, fennel and tomatoes onto 8 skewers, alternating between fish and vegetables. There should be roughly 3 pieces of fish per skewer. Season all sides of each skewer with salt and pepper. Brush the balsamic mixture over all the skewers.
  • Add the skewers to the grill and cook until there are clear grill marks on the flame side, 3 to 5 minutes. Flip the skewers and cook for an additional 3 to 5 minutes. Continue to rotate the skewers and cook on each side until all sides are cooked and have a slight char.
  • Serve hot!

⅓ cup teriyaki sauce
16 (1 inch) cubes fresh pineapple

2 tablespoons teriyaki sauce, or to taste

  • Place bamboo skewers in a shallow bowl, cover with water, and soak for 30 minutes.

You can add bell pepper or onion to these kabobs. I served them at a party so I used the 21-25 count shrimp and they were devoured. Can be an appetizer or a main dish, depending on your presentation.

1 lb large shrimp, shelled and deveined (I used 21-25 per pound)
1/3 cup teriyaki marinade (homemade or bottled)
1 green onion, finely chopped
1 -2 garlic clove, finely minced
1 teaspoon lemon zest
1/2 teaspoon sugar
1 (20 ounce) can pineapple chunks (I used the chunks in pineapple juice, not heavy syrup)

Steps:

  • In a large zip-lock bag combine teriyaki sauce, onion, garlic, sugar, zest and a splash of pineapple juice from the chunks.
  • Add shrimp and toss to coat.
  • I let them set in the fridge all day till I was ready to skewer them to grill.
  • Be sure and soak your skewers if you are using wood!
  • Place a pineapple chuck in the curve of each shrimp and place on a skewer, going through the "head" of the shrimp, the pineapple and then the "tail".
  • I was able to get about 4 on each skewer.
  • Grill about 2-3 minutes on each side or until shrimp is pink.
  • You can baste with the marinade if you want but I did not.
  • You can also broil this if you don't have a grill.
  • I removed from the skewers for my guests but would probably serve on skewers if I had fancy ones.

2 tablespoons reduced-sodium soy sauce

4 sea scallops
4 uncooked jumbo shrimp, peeled and deveined
2 bacon strips, halved
1 small sweet red pepper, cut into 1-inch pieces

1-1/2 pounds tuna steaks, cut into 1-1/2-in. chunks
2 medium sweet red peppers, cut into 1-in. pieces
1 large sweet onion, cut into 1-in. pieces
MARINADE/DRESSING:
1/4 cup minced fresh cilantro
1/4 cup sesame oil
3 tablespoons lime juice
2 tablespoons soy sauce
2 tablespoons extra virgin olive oil
1 tablespoon minced fresh gingerroot
2 garlic cloves, minced
SALAD:
1 package (5 ounces) fresh baby spinach
1 medium sweet yellow pepper, cut into 1-in. pieces
8 cherry tomatoes, halved

Steps:

  • Thread tuna chunks onto 4 metal or soaked wooden skewers. Thread pepper and onion pieces onto 4 more skewers. Place skewers in a 13x9-in. baking dish., Whisk together marinade ingredients. Reserve half of mixture for salad dressing. Pour remaining marinade over skewers; refrigerate, covered, 30 minutes., Grill kabobs, covered, on a greased grill rack over medium heat, turning occasionally, until tuna is slightly pink in center for medium-rare (2-3 minutes per side) and vegetables are crisp-tender (10-12 minutes). Remove tuna kabobs from direct heat and keep warm while vegetables finish grilling., For salad, toss spinach, yellow pepper and cherry tomatoes with reserved dressing. For each portion, serve a tuna kabob and vegetable kabob over salad.

2 (6 ounce) skinless, boneless chicken breast halves
1 cup teriyaki marinade
4 bamboo kabob sticks
1 medium sweet onion
1 medium red bell pepper
1 (20 ounce) can pineapple chunks, drained

Steps:

  • Cut each chicken breast into 10 pieces. Place in a glass bowl and cover with teriyaki marinade. Cover and marinate in the refrigerator for at least 30 minutes.
  • Soak bamboo kabob sticks in water for 30 minutes.
  • Meanwhile, cut onion into four 1-inch square pieces. Repeat with bell pepper. Set aside 14 pineapple chunks and reserve any extra for another use.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Remove chicken from the marinade and shake off excess. Discard the remaining marinade. Dividing ingredients evenly, alternating layers of chicken, onion, pepper, and pineapple on each kabob stick.
  • Place kabobs on the preheated grill and cook until chicken is no longer pink in the center and the juices run clear, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Be careful when turning kabobs, they will be hot.
