1-1/2 pounds lean ground beef (90% lean)
1 can (8 ounces) water chestnuts, drained and chopped
1/2 cup reduced-sodium soy sauce
1/3 cup sherry or reduced-sodium beef broth
2 green onions, chopped
1 tablespoon brown sugar
2 garlic cloves, minced
1/2 teaspoon ground ginger
6 lettuce leaves
6 hamburger buns, split

Steps:

  • In a large bowl, combine the beef and water chestnuts. Shape into six patties. Place in a 13x9-in. dish. , In a small bowl, combine the soy sauce, sherry or broth, onions, brown sugar, garlic and ginger. Pour 1/2 cup over patties; cover and refrigerate for 2-3 hours or overnight. Cover and refrigerate remaining marinade for basting. , Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill patties, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear, basting occasionally with reserved marinade. Serve on lettuce-lined buns.

2 tablespoons reduced-sodium soy sauce
1 tablespoon brown sugar
1 tablespoon unsweetened crushed pineapple

BURGERS:
1 egg white, lightly beaten
1/3 cup dry bread crumbs
3 green onions, chopped
2 tablespoons unsweetened crushed pineapple
3/4 pound ground beef
3/4 pound lean ground turkey
6 slices unsweetened pineapple
6 hamburger buns, split and toasted
6 lettuce leaves
6 slices tomato

Steps:

  • In a small bowl, combine the ketchup, soy sauce, brown sugar, pineapple, ginger, garlic and sesame oil; set aside., In a large bowl, combine the egg white, bread crumbs, onions, crushed pineapple and 3 tablespoons ketchup mixture. Crumble beef and turkey over mixture and mix well. Shape into six burgers., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 165° and juices run clear, brushing occasionally with remaining ketchup mixture., Grill or broil pineapple slices for 2-3 minutes on each side or until heated through. 1 cup thick teriyaki marinade
2 tablespoons sweet chili sauce
2 tablespoons olive oil
2 tablespoons golden syrup
2 cm fresh ginger, peeled finely grated
12 minute steaks
3 red onions, thinly sliced
6 butter lettuce leaves
2 carrots, peeled grated
6 hamburger buns, split

Steps:

  • Combine marinade, sweet chilli sauce, 1 tbs oil, 1 tbs golden syrup and ginger in ceramic dish.
  • Add steaks, turn to coat and marinate in refrigerator 2 hours or longer.
  • Place onions in microwave safe bowl. Cover with lid and microwave on high for 3 minutes. Stir after 1 1/2 minutes. Stir through remaining syrup. Season with salt and pepper and set aside.
  • Preheat bbq plate until hot.
  • Grease plate with remaining oil.
  • Add onions, tossing for 3-5 minutes until golden brown. Transfer to plate and keep warm.
  • Cook steaks until cooked to your liking.
  • Arrange lettuce leaves amd carrots on rolls, top with 2 pieces steak and onions.
  • Serve with potato crisps.
  • A real kids meal! Both big and small.

1 1/2 pounds lean ground beef
1 packet beefy onion soup mix (recommended: Lipton)
2 tablespoons ginger teriyaki marinade mix (recommended: McCormick Grill Mates)
1 (8-ounce) can pineapple rings, drained, juice reserved
Salt and freshly ground black pepper
1/3 cup mayonnaise
1 tablespoon wasabi paste
1 tablespoon soy sauce
4 whole-grain burger buns
Lettuce, tomato, onion, for serving

Steps:

  • Set up grill for direct cooking over high heat. Oil grate when ready to start cooking.
  • In a mixing bowl, stir to combine ground beef, soup mix, teriyaki marinade mix, and 1/4 cup reserved pineapple juice.
  • Form 4 patties slightly larger than bun. Gently press pineapple rings into tops of burgers.
  • Season burgers with salt and pepper and place on grill pineapple side down. Cook 8 minutes per side for medium.
  • Mix together mayonnaise, wasabi, and soy sauce.
  • Serve hot on toasted buns with lettuce, tomato, onions, and wasabi mayonnaise.
  • INDOORS: Follow instructions for preparing burgers. Preheat broiler. Place burgers pineapple side up on wire rack over foil lined baking sheet or broiler pan. Broil 6 inches from heat source for 4 to 5 minutes per side for medium.

1 pound ground beef sirloin
1 pound ground pork
1/2 medium yellow onion, grated on the large holes of a box grater
2 tablespoons minced fresh garlic
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
1/4 cup firmly-packed light brown sugar
1 ripe pineapple, peeled, quartered, cored and cut into 1/4-inch dice
1 dragon fruit, peeled and cut into 1/4-inch dice
1 bunch fresh cilantro, minced
1/4 cup soy sauce
2 tablespoons minced fresh ginger
6 hamburger buns

Steps:

  • Combine the ground beef, ground pork, onion, garlic and 1 tablespoon each salt and pepper in a large bowl; stir until well mixed. Form the mixture into 6 balls. Press 1 teaspoon butter into the center of each ball; wrap the meat around the butter to enclose it and form a patty. Place the patties on a plate and refrigerate for 1 hour.
  • Combine 1 tablespoon of the brown sugar, half of the pineapple and the dragon fruit and cilantro in a medium bowl. Toss until well mixed. Season with salt and pepper.
  • Preheat a grill pan or outdoor grill to medium-high.
  • Combine the soy sauce, ginger and the remaining pineapple and brown sugar in a large skillet. Bring to boil, then reduce the heat and maintain a gentle simmer. Remove the patties from the refrigerator and let stand at room temperature for 10 minutes.
  • Place the patties on the grill and cook, flipping halfway through, until no longer pink in the center, 6 to 8 minutes. As the patties finish cooking, transfer them to the simmering sauce and cook, rotating in the sauce, until they are well coated and have absorbed some of the sauce, about 1 minute.
  • Place each patty on a bun, top with some of the salsa and serve hot.

It may not be a traditionally Japanese combination, but that's not to say that teriyaki sauce doesn't go well with hamburgers. It does. Spectacularly so. But you can't just go to the store, buy a bottle of sauce, and start dousing your burger in it willy-nilly. There's technique at the heart of a good teriyaki-glazed burger-here's how to make it the right way.

1 1/2 pounds fresh ground beef chuck (about 80% lean)
Kosher salt
2 teaspoons shichimi togarashi (see note)
1 cup thinly sliced scallions
1 recipe Teriyaki Sauce (I strongly advise homemade over any store-bought brand)
4 soft hamburger buns
4 tablespoons mayonnaise, preferably Japanese-style
2 cups finely shredded green cabbage

Steps:

  • Form beef into 4 patties, about 1/2 inch wider than the burger buns, with a slight depression in the center to account for bulging as they cook. Season generously with salt and togarashi and refrigerate until ready to cook. Sprinkle scallions evenly over a large plate or a cutting board.
  • Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Alternatively, set half the burners on a gas grill to the highest heat setting, cover, and preheat for 10 minutes. Clean and oil the grilling grate. Place burgers directly over hot coals, cover with vents open, and cook, turning occasionally, until burgers are well charred and burgers' centers register 110°F on an instant-read thermometer for medium rare or 120°F for medium, 5 to 7 minutes total.
  • Brush burgers on both sides with teriyaki sauce and continue cooking, flipping and brushing occasionally, until they register 120°F for medium rare or 130°F for medium. Remove from grill and transfer to scallion-covered plate or cutting board. Brush with more sauce and flip burgers, brushing with sauce until well glazed and coated in scallions.
  • Toast burger buns over grill until well browned and crisp. Spread bottom and top buns with mayonnaise. Divide half of cabbage over bottom buns. Top with cooked burgers. Brush with more teriyaki sauce. Top with remaining cabbage, close buns, and serve.
