GRILLED TEQUILA-GARLIC-LIME FLANK STEAK

"Flank steak has a large surface area, which means you get more of a Maillard reaction -- that?s a fancy term for browning -- and more flavor," says Guy.

Number Of Ingredients 10

1 cup roughly chopped garlic (about 3 heads)
3/4 cup fresh lime juice (from about 8 large limes)
1/2 cup silver tequila
1/4 cup soy sauce
1 bunch fresh cilantro, leaves and stems roughly chopped
1 jalapeno pepper, seeded and diced
1 serrano chile pepper, seeded and diced
1 tablespoon freshly cracked black pepper
1 teaspoon ground cumin
1 1/2 to 2 pounds flank steak

Steps:

  • Combine the garlic, lime juice, tequila, soy sauce, cilantro, peppers, black pepper and cumin in a resealable gallon-size plastic bag. Add the steak and let marinate in the refrigerator for 2 hours. Remove from the refrigerator and let marinate at room temperature another 30 to 45 minutes.
  • Preheat a grill to medium high. Remove the steak from the marinade. Put the marinade in a small saucepan and bring to a boil, then strain and reserve.
  • Place the steak on the grill. Cook for 4 minutes, turn 180 degrees and cook for 3 more minutes (to create crosshatch grill marks). Flip and finish cooking for 3 to 6 minutes, depending on desired doneness. Remove from the grill to a cutting board and let rest, loosely covered with foil, for 5 minutes.
  • Slice the steak against the grain and serve immediately with the reserved marinade.

2/3 cup tequila, preferably blanco, divided
1/3 cup soy sauce
2 limes, zested and juiced, divided, rinds reserved
1/2 teaspoon ground cumin
1/4 teaspoon freshly cracked black pepper
1 pound flank steak, trimmed and julienned on the bias
1/3 cup sour cream
1/3 cup white vinegar
8 whole-grain taco-sized tortillas (Chef s Note: flour or corn tortillas are acceptable)
2 cups Taco Slaw, recipe follows
3/4 cup small diced white onion
1/4 cup chopped fresh cilantro leaves
1/3 cup grated Cotija cheese
1 carrot, grated
1/2 head green cabbage, shredded
1/4 cup sliced green onions
1/4 cup finely chopped cilantro leaves
1/4 cup chopped jalapenos (Chef s Note: pickled jalapenos are optional)
1/2 teaspoon kosher salt
1/2 teaspoon freshly cracked black pepper
1/3 cup white vinegar

Steps:

  • In a nonreactive bowl, combine 1/3 cup of the tequila, the soy sauce, the zest and juice of 1 lime, the cumin, and freshly cracked black pepper. Add the steak to the marinade and let it sit at room temperature for 30 minutes, or refrigerate it for no longer than 1 hour.
  • In a small bowl combine the remaining lime zest, lime juice and sour cream. Cover and refrigerate until ready to use.
  • Strain the steak from the marinade. Pour the marinade into small saucepan over medium-high heat and bring to a simmer. Let it simmer until it reduces by a third, about 10 to 15 minutes.
  • Heat a large skillet over high heat. Add the steak and cook until it barely starts to brown. Switch off the heat, then add the marinade reduction, the white vinegar, and the remaining tequila.
  • Prepare the taco shells, either by frying or heating in an oven.
  • For service, rub the shells with the reserved lime rinds. Add the some of the beef, taco slaw, sour cream and onions to each taco. Garnish with the cilantro and Cotija cheese. Serve and enjoy!
  • Prepare all the vegetables and add to a large bowl. Season them with the salt and pepper and add the vinegar. Toss to combine.

I came up with this the other night when I had a lime in the fridge I had to use before it started looking like a prune and some beef that my husband had gotten out of the freezer that I didn't know what to do with.

1 1/2 lbs sirloin steaks, sliced very thin across the grain
1/3 cup garlic teriyaki sauce
1 lime, zest and juice
1 tablespoon hot catsup (or regular catsup and a couple good dashes tabasco)
2 -3 tablespoons tequila
3 -4 fresh mushrooms
3 tablespoons water
2 teaspoons cornstarch
1 bunch green onion, sliced on the bias
olive oil, for skillet or wok

Steps:

  • Combine the lime zest and juice, the teriaki sauce, the tequila and the catsup.
  • Marinate beef in this mixture for 30-40 minutes at room temperature.
  • Mix water and cornstarch to make a slurry; set aside.
  • Heat olive oil practically to smoking in large skillet (cast iron is best, but we're not*all* that lucky).
  • Add mushrooms and onions, stir fry until mushrooms and onions slightly soften.
  • Remove from skillet.
  • Add beef and stir-fry for 2-3 minutes until cooked through, then add veggies back in, and add cornstarch mixture.
  • Cook over medium-high heat until bubbly and thickened.
  • Serve with noodles, rice, or just by itself.

3/4 cup freshly squeezed lime juice (about 8 large limes)
1/2 cup clear tequila
1/4 cup soy sauce
1 bunch roughly chopped fresh cilantro, leaves and stems
1 jalapeno pepper, seeded and diced
1 serrano pepper, seeded and diced
1 teaspoon cumin powder
1 tablespoon freshly cracked black pepper
1 1/2 to 2 pounds flank steak
12 corn tortillas, wrapped in foil
1/2 cup chopped fresh cilantro
1 bunch radishes, cleaned, ends cut and sliced
1/3 cup grated queso fresco cheese
2 ripe avocados, seeded and sliced
3 vine ripened tomatoes, sliced in wedges
Hot sauce, for serving

Steps:

  • Combine the garlic, lime juice, tequila, soy sauce, cilantro, peppers, cumin and black pepper in a resealable plastic gallon bag. Add the steak and let marinate in the refrigerator for 2 hours. Remove from the refrigerator, and let marinate at room temperature another 30 to 45 minutes.
  • Prepare a grill to medium-high heat. Remove the steak from the marinade, reserving the marinade. Put the marinade in small saucepot and bring to a boil. Then strain and reserve.
  • Put the tortillas on the corner of the grill and flip the package a few times to heat through while the steak is cooking
  • Place the steak on the grill. Cook for 4 minutes, turn 180 degrees, and cook for 3 minutes more (to create cross grill marks). Flip over and finish cooking for 3 to 5 minutes, depending on desired doneness. Remove from the grill to a cutting board and let rest, lightly covered, for 5 minutes.
  • Slice against the grain, and serve immediately with the reserved marinade, garnishes, tortillas and hot sauce.

TEQUILA LIME SAUCE

1/2 cup white tequila
2 tablespoons freshly squeezed lime juice
2 tablespoons minced shallots
1 teaspoon minced garlic
1 tablespoon chopped fresh cilantro
1/2 teaspoon salt
3 turns freshly ground black pepper
1/4 cup heavy cream
8 tablespoons unsalted butter, cut up, at room temperature (1 stick)
Essence, recipe follows
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Combine the tequila, lime juice, shallots, garlic, cilantro, salt and pepper in a saute pan over high heat and bring to a boil. Reduce by half. Stir in the cream and simmer for 3 minutes. Whisk in the butter and remove from the heat. Continue whisking until all of the butter is incorporated. Serve immediately.
  • Remove the rellenos from the oven. Spoon 1/4 cup of the sauce on each plate and place the rellenos directly on top. Garnish with the tortilla strips and the cilantro sprigs. Sprinkle Essence on the rim.
  • Combine all ingredients thoroughly.

ARRACHERA BEEF MARINADE

When not in Mexico I use this recipe to make my own Arrachera Beef, a marinaded flank steak. The beef is perfect for tacos, fajitas or chili. Please note that cooking time is actually the minimum time needed to marinade.

3 tablespoons finely chopped garlic
3 tablespoons olive oil
1/2 cup tequila
1/4 cup fresh lime juice

Steps:

  • Whisk together garlic, olive oil, tequila, lime juice, salt, cumin and black pepper.
  • Place flank steak in zip lock bag and pour in marinade.
  • Chill at least 1 hour (but not more than 24 hours); turning often.

  • Prepare barbecue (medium-high heat). Remove meat from marinade. Discard marinade.
  • Grill meat to desired doneness, about 10 minutes per side for medium-rare. Transfer to cutting board.
  • Tent with foil; let stand 10 minutes. Cut diagonally across grain.

1/2 cup fresh lime juice
1/3 cup corn oil
1 tablespoon oil
1/2 cup tequila
1 teaspoon ground cumin

6 small onions, peeled, cut in half
18 flour tortillas
3 cups refried beans

Steps:

  • Trim the excess fat from the meat and cut it crosswise into long strips about 1/2 inch wide. Place the strips in a shallow, nonreactive dish. In a bowl stir together the lime juice, 1/3 cup oil, tequila, cumin, oregano, pepper and garlic. Pour over meat, coating each piece well.
  • Cover with plastic wrap and refrigerate for 24 hours, turning the meat over a few times. In a heavy frying pan or a griddle over medium heat, warm the 1 tablespoon oil. Cook the onion, stirring, until well browned, 6 to 8 minutes. Transfer to a plate and keep warm.
  • Place the same pan or griddle over high heat. Drain the meat well, reserving the marinade. Add the meat to the pan or griddle and cook, turning once and basting with the leftover marinade, until done to your liking, about 2 minutes on each side for medium-rare. Transfer to the plate holding the onions and keep warm.
  • Heat the tortillas, turning once, on the same pan or griddle, about 10 seconds on each side. Alternatively, wrap in plastic wrap and place in microwave oven for about 30 seconds. Just before serving gently heat the refried beans in heavy saucepan. Cover and keep warm. Arrange the meat, onions and tortillas on a warmed platter. Place the refried beans, guacamole, salsa, sour cream and cilantro in separate dishes on the side. Diners can prepare their own fajita according to their liking.
