GEORGIA'S TENNESSEE JAM CAKE



Georgia's Tennessee Jam Cake image

This rich holiday dessert was invented by my grandmother and is a tradition in our house over Christmas. These ingredients were originally the authentic thing -- homemade jam, buttermilk out of the churn, and walnuts you gather and crack yourself. Now we use purchased items, but the cake is just as good. Frost with homemade caramel frosting, or your favorite cream cheese frosting.

1 cup butter, softened
2 cups white sugar
8 eggs
2 teaspoons baking soda
2 tablespoons water
2 cups seedless blackberry jam
3 ½ cups all-purpose flour
1 ½ teaspoons ground cloves
2 teaspoons ground nutmeg
1 tablespoon ground cinnamon
1 teaspoon salt
1 cup buttermilk
1 cup chopped black walnuts
½ cup golden raisins

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease three 8 or 9 inch round cake pans and set aside.
  • In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing until each one is blended in. Dissolve the baking soda in the water; stir into the batter along with the blackberry jam. Combine the flour, cloves, nutmeg, cinnamon and salt; stir into the batter by hand, alternating with the buttermilk. Fold in the black walnuts and raisins if using. Divide the batter equally between the three pans, and spread in an even layer.
  • Bake in the preheated oven until the top of the cakes spring back when lightly touched, about 35 minutes. Cool in the pans until cool enough to handle, then invert the cakes over a wire rack and remove pans to cool completely.

Strawberry jam and coconut sponge cake just like the old-school dessert!

250 ml Unsweetened soy milk ((1 cup))
2 Teaspoons Apple cider vinegar ((you can use white vinegar or lemon juice instead))
230 g Self-raising flour ((1+¾ cups))
½ Teaspoon Baking soda ((bicarbonate of soda))
180 g Caster sugar ((¾ cup + 2 tablespoons))
95 ml Sunflower or rapeseed oil ((⅓ cup + 1 tablespoon))
2 Teaspoons Vanilla extract
200 g Strawberry jam ((⅝ cups))
50 g Desiccated coconut ((~¾ cup))

Steps:

  • Preheat your oven to 180°C/350°F (or 160°C/325°F if you're using a fan or convection oven). Line an 8x10" tray with baking paper.
  • Mix the soy milk with the apple cider vinegar and set aside for 5 minutes. This will act as your vegan buttermilk.
  • In a large bowl, mix together the flour, baking soda and caster sugar.
  • Add the buttermilk to the bowl along with the oil and vanilla extract. Mix well until you have a smooth cake batter.
  • Transfer the cake batter into your lined tin and spread it out evenly. Bake for 22-25 minutes, or until a toothpick through the centre comes out clean.
  • Let the cake cool in the tin for around 20 minutes, then flip it out onto a wire rack. Peel off the baking paper and leave the cake to cool completely.
  • Once the cake is cool, spread over the strawberry jam then sprinkle over the desiccated coconut. Cut into 12 square slices and enjoy!

1 cup strawberry jam
1 teaspoon vanilla extract
1/2 cup plain soy yogurt
1 1/2 teaspoons Ener-G Egg Substitute, mixed with
2 tablespoons water
2 cups flour
1 1/2 teaspoons baking soda
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 cup soy buttermilk (1/2 cup soy milk mixed with 1 tsp. vinegar)

Steps:

  • Cream together sugar and margarine.
  • Add jam, vanilla, soy yogurt, and egg replacer mixed with water. Mix well.
  • In another bowl, combine flour, baking soda, and spices.
  • Add thus to sugar mixture alternately with soy buttermilk and stir well.
  • Pour into greased and floured 9" pans, bake at 350 for 30 minutes.
  • I usually frost this with a coconut-pecan frosting, which is just caramelized sugar and margarine mixed with shredded coconut, chopped pecans, and powdered sugar.

1 c butter

1 c chopped dates
1 c jam (any kind, preferably blackberry)
1 c raisins
1 apple, grated
1 c chopped nuts
1 tsp baking soda or baking powder

1/8 tsp cinnamon (optional)
1/8 tsp allspice (optional)
1/8 tsp ground cloves (optional)
BROWN SUGAR FROSTING
1 c brown sugar, packed
1/2 c butter
1/4 c milk
3 c powdered sugar

Steps:

  • 1. Sift flour, salt, baking soda, and spices together, reserving 1/4 cup of flour to flour nuts, dates, and raisins. Cream together the sugar and butter. Add eggs, one at a time and mix well after each addition.
  • 2. Combine buttermilk and jam. Add alternately with combined dry ingredients to the creamed mixture.
  • 3. Flour the fruit and nuts and stir them into the batter. Stir in the grated apple.
  • 4. Bake in 3 greased and floured 9 inch cake pans in a 350 degree oven for 30 minutes or until cake tests done. Cool on wire racks before frosting.
  • 5. Brown Sugar Frosting: Combine brown sugar, butter and milk in large saucepan; bring to a boil, stirring constantly. Remove from heat; cool 10 minutes. Gradually add powdered sugar until well blended.

1/3 cup sugar
1/4 cup water
1 tablespoon lemon juice (fresh)
1 teaspoon arrowroot
2 cups fresh blueberries
1 cup flour
1/2 cup sugar
1 3/4 teaspoons baking powder
1/2 teaspoon salt
1 egg substitute (Ener-G)
1/2 cup soymilk
1/2 cup vegan margarine (1 stick, melted and slightly cooled)
1 teaspoon vanilla

Steps:

  • Put the oven rack in the middle position and preheat to 375'F. Spray a 9 inch square baking dish lightly with oil.
  • Stir together the 1/3 cup sugar with the water, lemon juice, and arrowroot flour in a small saucepan, then stir in the berries. Simmer for 3 minutes and stir occasionally. Remove from heat.
  • In another bowl whisk together flour, baking powder, salt, and remaining 1/2 cup sugar in a medium bowl.
  • In a large bowl whisk the egg replacer, milk, margarine and vanilla. Then add the flour mixture and whisk until just combined.
  • Spoon the batter into your prepared baking dish and spread it evenly on the bottom. Pour the berry mixture evenly over the batter. The berries will sink.
  • Bake 25-30 minutes until a knife inserted in the center comes out clean.
  • Cool on a metal rack before cutting.
  • Cook's note: Cake can be made 1 day ahead and cooled completely, uncovered, then kept, wrapped well in foil, at room temperature.

1 cup buttermilk
1/3 cup sweetened applesauce
1/3 cup vegetable oil
3 large eggs
1/4 teaspoon cinnamon
1 cup blackberry jam
1/2 cup butter or 1/2 cup margarine
1/2 cup light brown sugar, firmly packed
1/2 cup dark brown sugar, firmly packed
1/4 cup milk
2 cups powdered sugar, sifted
1 teaspoon vanilla extract

Steps:

  • Beat the first 6 ingredients at low speed with an electric mixer for 1 minute. Scrape down sides and beat at medium speed 2 more minutes until well blended, scraping down sides if needed. Pour batter evenly into 3 greased and floured 9-inch round cake pans.
  • Bake at 350 for 20-23 minutes or until cakes are light brown and spring back when lightly pressed with your finger.
  • Cool in pans on wire racks for 10 minutes. Remove from pans; cool completely on wire racks.
  • Place on layer on a serving platter. Spread with 1/2 of blackberry jam, leaving a 1/2-inch border. Spread a smooth, thin layer of warm Quick Caramel Frosting over jam. Repeat layers. Top with third cake layer. Spread top and sides of cake with remaining Quick Caramel Frosting, working quickly before the frosting hardens. (If frosting becomes too hard to spread, place it over low heat for 1 minute, stirring constantly.) Let cake stand 10 minutes.
  • Quick Caramel Frosting:.
  • Bring first 3 ingredients to boil in a 3 1/2-quart saucepan over medium heat, whisking constantly, about 2 minutes.
  • Stir in milk and bring to a boil. Remove from heat. Add powdered sugar and vanilla, stirring with a wooden spoon until smooth. Use immediately.

An upside down pudding cake from "How it all Vegan"....my first ever pudding cake, and it was pretty fabulous. I'm somewhat in awe of how simple it was....as we were putting it together it looked a little strange having never made one before, but it worked!! This is one of those cakes (desserts) you more than likely always have the ingredients on hand for. My 5 year old actually put this together aside from the boiling water part - it worked out just fine, lumps and all! The original recipe called for 1/2 cup margarine...I subbed oil. My only wish would be that the pudding part was a little "creamier", but I'm not sure how to accomplish that. I served this to non vegans tonight and they all enjoyed it, no mention of it being vegan or otherwise. Served with vanilla ice "cream".

1/4 cup cocoa powder
1/4 teaspoon salt
1/2 cup dry sweetener (I used organic sugar or cane juice)

1/2 cup soymilk

3/4 cup dry sweetener
1/4 cup cocoa powder
2 cups boiling water

Steps:

  • Preheat your oven to 350 degrees F. In a large bowl stir together the first 4 ingredients (flour, baking powder, cocoa powder and salt).
  • Add in the 1/2 cup sweetener, oil, soy milk and vanilla. Mix gently until just combined (don't over mix).
  • The mixture will resemble cookie dough more than cake batter. Spread it into a lightly oiled casserole dish or loaf pan and set aside.
  • Clean and dry out your bowl then mix together the 3/4 cup of sweetener and the other 1/4 cup of cocoa. Sprinkle this evenly on top of the cake mixture.
  • Carefully pour the boiling water over top of everything - and DO NOT MIX! it really does do it's own thing in the oven. Bake for 40 minutes and enjoy!

BASIC WHITE CAKE (VEGAN)

Steps:

  • Pour blended ingredients into a large mixing bowl. Add flour and baking powder and mix until well combined.
  • Pour batter into a 8"x8" cake pan that has been lightly sprayed with vegetable oil. Bake for 35 to 40 minutes or until done.
  • Remove from oven and allow to cool.
  • Frost or decorate as desired and serve.
  • APPLE CAKE VARIATION:.
  • Same directions as above except once patter is in the cake pan peel, quarter and core two large apples. Cut part way through the top of each apple quarter so that it fans out. Place the apple fans evenly across the top of the batter.
  • Put in the oven and follow same baking instructions.
  • Cool and sprinkle with icing sugar and serve.
