1/3 cup self-rising flour
1 tablespoon grated Parmesan cheese
1/8 teaspoon garlic salt
3 tablespoons reduced-fat cream cheese
3 tablespoons fat-free milk
1 tablespoon fat-free plain yogurt

Steps:

  • In a small bowl, combine the flour, Parmesan cheese and garlic salt. Cut in cream cheese until mixture resembles coarse crumbs. Stir in milk and yogurt just until moistened., Drop by scant 1/3 cupfuls 2 in. apart onto a baking sheet coated with cooking spray. Bake at 400° for 12-15 minutes or until golden brown. Serve warm.

These biscuits rival any restaurant or fast food joint. They're so tender, fluffy, and buttery. They're the best biscuits I've ever made at home!

Number Of Ingredients 6

4 cups self-rising flour (plus more for dusting)
2 tablespoons baking powder ((see blog post above for more details; use double-acting, aluminum-free baking powder))
1 teaspoon baking soda
3/4 pound (3 sticks) SALTED butter (cold, cut into 1/2-inch cubes)
2 large eggs (beaten PLUS 1 large egg for brushing)
1 1/2 cups buttermilk (plus more as needed and for brushing)

Steps:

  • In a large bowl, whisk together flour, baking powder, and baking soda.
  • Add the butter and using a pastry blender, cut the butter into the flour until pea-like crumbs form.
  • Stir in the beaten eggs with a wooden spoon until just combined. Then pour in the buttermilk until the dough comes together into a sticky mass. You may need more buttermilk if it's still too dry and there is flour still at the bottom of your bowl. I ended up having to add in 1/2 cup more. DO NOT add 1/2 cup more all at the same time. Do 1 tablespoon at a time until the right consistency is reached.
  • Cover the bowl and refrigerate for at least 30 minutes.
  • When ready, preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  • Dust a little flour onto your work surface then put the dough onto the work surface and use your hands (flour them) to press into a round, roughly 14 inch diameter and 1/2 inch thick. See photos in the blog post.
  • Use a floured 2 3/4-inch round biscuit cutter to cut out about 20 biscuits. Reform the scraps of dough into a circle again to cut more.
  • Transfer biscuits to prepared baking sheet and arrange them so they are touching each other. See photos in the blog post.
  • In a small dish, beat together remaining egg and buttermilk then brush on top of the biscuits.
  • Bake for 15-20 minutes, or until the tops are golden brown.
  • Let cool slightly before devouring! They're best eaten out of the oven, day of.
  • Serve with your favorite sausage gravy, jam, or clotted cream.

  • Preheat oven to 450°. In a small bowl, combine the flour, baking powder and salt; cut in shortening until mixture resembles coarse crumbs. Add milk, tossing with a fork until a ball forms. , Turn onto a lightly floured surface; knead 5-6 times. Roll or pat to 1/2-in. thickness; cut with a 2-1/2-in. biscuit cutter. 2 c flour
1 Tbsp + 1 1/2 tsp. baking powder
1 tsp salt
1/2 tsp baking soda
1 1/2 c sour cream, i would not suggest subbing light
1 Tbsp + 1 tsp. vegetable oil
4 Tbsp soft butter

Steps:

  • 1. In medium-sized bowl, whisk first 4 ingredients til well mixed.
  • 2. Add sour cream in spoonfuls on top, add oil and mix til all is just moistened with a spoon. Switch to using your hands turning the dough to get all the last of the dry stuff on the bottom of the bowl. Knead 8 times on floured surface.
  • 3. Roll thick to only about an 8" circle. Just a few passes with your (floured) rolling pin. Cut out 6 biscuits with a biscuit cutter or a floured glass. Get 2 more out of the last of the dough. (Bunch it back together, knead it just a bit, pat or roll it and cut.) Pitch any last little tidbit if any left. I place mine on my old round metal pizza pan covered with foil and sprayed with butter-flavored Pam. But a cookie sheet will work just fine.
  • 4. Place little pats of butter on top, or spread it a little if the butter is VERY soft and doesn't deflate the biscuits while doing so. Bake in hot, preheated 425 oven for 12-15 minutes (ovens vary) or til golden brown on top. Remove from oven and butter tops again with other half of butter. Serve warm with more butter and homemade jam or honey. Makes 8 tall sour cream biscuits.

I bought the book "Small-Batch Baking" and this was a recipe I tried this morning and loved!! It made 2 normal size biscuits and one about 1/2 the size. The author, Debby Maugans Nakos, states that this is similar to "Hardee's" biscuits. Mine turned out golden on the outside and tender in the inside and so quick and easy.

2 tablespoons unsalted butter, melted
1/2 cup self-rising flour, plus extra for the work surface
2 tablespoons cold unsalted butter, cut into 12 pieces
3 1/2-4 tablespoons heavy whipping cream (cold)

Steps:

  • Place a rack in the center of the oven and preheat the oven to 450 degrees. Brush 1 tablespoon of the melted butter over a 6-inch square area on the baking sheet. Set the baking sheet aside.
  • Place a large fine-mesh sieve over a medium size bowl. Place the flour in the sieve and sift it into the bowl. Cut in the butter pieces with a fork by dragging the tines of the fork through the flour and butter, pressing the tines to the bottom of the bowl, until the remaining lumps are no larger than peas. Sprinkle 3 1/2 tablespoons of the cream over the mixture, and toss lightly with the fork just until the dough begins to hold together. If necessary, sprinkle the remaining 1/2 tablespoon cream over the dough to make it hold together as a soft dough. ( I needed the full 4 tablespoons).
  • Flour your hands, and lightly knead the dough in the bowl 5 or 6 times. Lightly flour a cutting board, place the dough on it, and pat the dough out to form a 5 X 2 1/2 inch rectangle, about 1/2 inch thick. Cut out 2 biscuits with a 2 1/2 inch round cutter. If you wish, form the scraps into a third biscuit.
  • Place the biscuits on the buttered square on the baking sheet. Bake until they are golden, about 10 minutes. (I baked mine for 13 minutes, until they were golden).
  • Remove the baking sheet from the oven and serve, or wrap in a cloth napkin to stay warm. For buttery tops, brush the biscuits lightly with the remaining 1 tablespoon melted butter when you remove them from the oven. Serve hot or warm.

  • Preheat your oven to 400 degrees. Combine 2 cups of flour and 2 cups of heavy whipping cream. Stir until mixed. Scoop out onto the floured countertop and knead 10-12 times. Sprinkle with flour so the dough is not sticky, as needed. Then roll out the biscuit dough 1/2 inch thick with a floured rolling pin. Cut out the biscuits and place them on a greased cookie sheet. Bake for 15-20 minutes or until light golden brown. Serve with butter, jam, or honey. Enjoy. They will melt in your melt, I promise.
  • If you only have Bread FLOUR: You can use bread flour but you will have to add 1-1/2 teaspoons of baking powder and 1/4 teaspoon of salt to EACH CUP of flour. This recipe calls for 2 cups of flour so you would add 3 teaspoons of baking powder and 1/2 teaspoon of salt to the recipe.

1 teaspoon Kosher salt

1 cup cold buttermilk (see note)
Heavy cream (for brushing)

Steps:

  • Preheat oven to 450 degrees F. Line a small sheet pan with parchment paper. Set aside.
  • In a large bowl, whisk flour with sugar, salt, baking powder, and baking soda. Alternatively, you can pulse everything in a food processor.
  • Add the COLD cubed butter (freeze the butter beforehand). Using a pastry blender, cut the butter into smaller pieces, incorporating it with the flour until you get pea-sized pieces. You may also need to use your fingers to work the butter into the flour. If using a food processor, pulse a few times until you get pea-sized pieces.
  • Gradually add the buttermilk and incorporate using a rubber spatula until you get a shaggy and crumbly dough. If using a food processor, pulse a few times until a shaggy and crumbly dough forms. The pieces of butter should be visible in the dough.
  • Transfer the shaggy dough onto a working surface. Bring everything together and press the dough to form a 1-inch thick rectangle. Fold it over, from short end to short end, and press it down again to re-form a 1-inch thick rectangle. Tip: I like to transfer the dough to a large piece of parchment paper and use it to press the dough - it's much easier, less messy, and helps keep the dough cold.
  • Cut into 9 biscuits using a 3-inch round biscuit cutter. Note: Do not twist the biscuit cutter as you press it down, as this can seal the edges and prevent the biscuits from rising and forming flaky layers.
  • Arrange biscuits in the prepared sheet pan, about 1 inch apart (biscuits tend to rise taller when you place them close together). Brush the tops with some heavy cream. Bake at 450 degrees F for 15 to 16 minutes, or until risen and golden brown. Enjoy!

  • Gather the ingredients.
  • Preheat the oven to 400 F and grease a baking sheet .

  • Grease a 9-inch iron skillet and set aside. If you don’t have an iron skillet lightly grease a round cake pan or small cookie sheet. I don’t recommend buttering your skillet or pan. Butter causes biscuits to brown too much on the bottom before the tops get brown enough. I always use solid Crisco shortening to grease my pan, but liquid shortening should work too.
  • Add the flour, baking powder, baking soda, salt and sugar to a large bowl. Use a fork or whisk to thoroughly combine the dry ingredients.
  • Cut the stick of butter into 3 long pieces. Flip the butter over one turn and repeat. (see picture above). Now slice the butter off into small chunks and transfer them to the bowl of flour. Using a pastry cutter, cut the butter into the flour until the butter is about the size of peas.
  • Make a well in the center of the flour and pour 1 cup plus 2 tablespoons of buttermilk into the well. Using a wooden spoon or spatula, gently fold the flour into the buttermilk and mix just slightly until all of the flour is wet. It’s important to not overwork the dough. Overworking the dough will result in tough biscuits.
