TEA SANDWICHES WITH HERBED CREAM CHEESE



Tea Sandwiches with Herbed Cream Cheese image

Yield Serves 4-6

Number Of Ingredients 9

12 ounces cream cheese, softened
2 tablespoons fresh dill, chopped (more to taste)
Pinch of salt and ground black pepper, to taste
1-2 tablespoons lemon juice
Zest of 1/2 lemon
Choice of sliced bread, about 10 slices, crusts cut off
Radish slices (about 4-6 radishes)
Cucumber slices (about 1-1/2 cucumbers)
4-6 ounces smoked salmon

Steps:

  • Add the cream cheese, dill, salt and black pepper, lemon juice and zest to a bowl and mix to combine. Be sure the cream cheese is spreadable before starting.
  • Taste and adjust the seasoning as needed.
  • Add the slices of bread (be sure the crusts are cut off) to a flat, clean work surface. Spread the cream cheese over a few slices of bread at a time.
  • Add the ingredients to one slice of bread, and top with a second slice of bread so your sandwiches have cream cheese on both slices of bread.
  • Carefully slice in diagonals or smaller squares using a serrated knife.
  • If you're using a cookie cutter, they work best on sturdier bread. Cut into the bread with the cookie cutter before adding the ingredients, then form your sandwiches.
  • Serve immediately.
  • You can also serve these sandwiches open-face style, too.

8 ounces cream cheese, room temperature
1/4 cup fresh flat-leaf parsley, finely chopped
1 1/2 tablespoons finely chopped fresh oregano
1 teaspoon finely chopped fresh rosemary
2 teaspoons finely chopped fresh thyme
Coarse salt and freshly ground pepper
1 bunch red radishes, cleaned and trimmed
3 medium carrots, peeled
1 seedless cucumber, peeled
48 thin slices wheat bread

Steps:

  • In a medium bowl, combine cream cheese, parsley, oregano, rosemary, and thyme; stir well. Season with salt and pepper, and set aside. Grate radishes, carrots, and cucumber into separate bowls.
  • Spread a thin layer of herb cream cheese on two slices of bread. Cover one slice with an even layer of one of the grated vegetables (use only one in each), and top with other bread slice. Use a serrated knife to trim crusts and cut in half diagonally into two triangles. Repeat with remaining ingredients. Cover with damp paper towels until ready to serve.

8 ounces cream cheese, room temperature
10 1/2 ounces goat cheese, room temperature
1 1/2 teaspoons garlic, minced
1/2 teaspoon fresh thyme, minced
2 tablespoons fresh parsley, minced
5 tablespoons half-and-half or 5 tablespoons heavy cream
3/4 teaspoon kosher salt
1/2 teaspoon pepper, freshly ground
2 loaves seven-grain bread, thinly sliced
1 English cucumber, not peeled

Steps:

  • For the spread, place the cream cheese, goat cheese, garlic, thyme, parsley, 5 tablespoons milk, salt, and pepper in bowl of an electric mixer fitted with paddle attachment.
  • Beat on medium speed until well mixed. Add an additional tablespoon of milk if the spread is very thick.
  • To make sandwiches, spread each slice of bread with the goat cheese spread.
  • Slice the cucumber in thin rounds and arrange on half the bread slices.
  • Top with remaining bread, press slightly.
  • Trim off the crusts, and cut into halves, thirds, or triangles.

4 ounces cream cheese, at room temperature
2 ounces fresh goat cheese, at room temperature
3 tablespoons butter, at room temperature
2 tablespoons grated Parmesan
2 teaspoons freshly squeezed lemon juice
1 small clove garlic, crushed
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh dill, plus sprigs for garnish
Kosher salt and freshly ground black pepper
6 slices crustless white sandwich bread, cut into quarters
1 Persian cucumber, thinly sliced
4 breakfast radishes, thinly sliced

Steps:

  • Combine the cream cheese, goat cheese, butter, Parmesan, lemon juice and garlic in a small food processor and process until very smooth and light. Transfer to a medium bowl and stir in the chives, parsley and dill. Season with salt and pepper. Refrigerate until chilled but still spreadable, about 30 minutes.
  • Preheat the oven to 350 degrees F.
  • Spread the bread on a baking sheet and bake, flipping the pieces once, until lightly toasted but not colored, about 10 minutes. Let cool.
  • To serve, spread the cheese mixture on the toasts. Top with the sliced cucumber and radishes and garnish with dill sprigs.

1 carrot, peeled and grated
4 tablespoons soft cream cheese
1 teaspoon brown sugar
1/8 teaspoon five-spice powder
4 slices dark rye bread

Steps:

  • Combine the grated carrot, cream cheese spread, brown sugar, and five-spice powder in a bowl. Mix well.
  • Chill the mixture for 1/2 hour to allow the flavors to blend.
  • Cut the crusts off of the pumpernickel slices and roll the bread to flatten it.
  • Spread the mixture onto two of the slices of bread and top with the other two slices.
  • Cut these sandwiches diagonally into two triangles each.

4 slices whole grain bread (can use whole grain crackers, if desired)
softened butter, for spreading
1 tablespoon fresh salad burnet, leaves (read *Note)
1/2 cup cream cheese, softened
salt, to taste
black pepper, to taste

Steps:

  • Spread the butter on each slice of bread.
  • *Note: due to salad burnet's delicate nature, it is not necessary or really possible to mince the leaves. Add them whole to the cream cheese.
  • In a small bowl combine the salad burnet and cream cheese. Add salt and pepper, to taste. Mix well.
  • Spread the cream cheese mixture on two slices of bread. Place other slices on top and cut sandwiches in half or quarters.

1 lb loaf rye bread (avg. 16 slices, can use whatever kind you like best)
3/4 lb lox, sliced thin (salt-cured salmon)
16 ounces cream cheese, softened
1/4 cup milk or 1/4 cup cream
2 tablespoons fresh dill, chopped
2 tablespoons fresh squeezed lemon juice, more to taste
1/2-1 teaspoon beau monde seasoning (can substitute celery salt)
10 chives, cut into 1 1/2-inch pieces
red onion, sliced thin (optional)
capers (optional)

Steps:

  • Preheat oven to 350°F.
  • Cut crusts off of each piece of bread, then cut each piece in half (doesn't matter which way--you pick the shape). Place pieces of bread in single layer on one or two baking sheets, and bake for 10 minutes, or until golden and toasty. Remove bread from oven and cool to room temperature.
  • Meanwhile, in a mixing bowl, whip cream cheese until no lumps remain. Add milk or cream, and continue whipping until soft and "silky". Add dill, lemon juice and seasoning; whip again and adjust any flavorings to your liking.
  • TO ASSEMBLE: Spread 1-2 tbsp cream cheese mixture on each piece of toast, then layer a "ribbon" of lox on top. Top lox with a couple/few pieces of chives and it's ready to serve! If preferred, ribbons of red onion and capers could also be used, either on top of the cream cheese or lox--whatever looks best to you.
  • (There may be some cream cheese mixture left at the end, depending on how much you use. It's great on breakfast bagels, too!).

This recipe is really easy to make your own-change it up by using different shredded cheese, dijon mustard, flavored cream cheese, and /or breads. Sandwiches may be frozen, omitting the cucumber; thaw in refrigerator, and add cucumber before serving. Also, I will make this sandwich just for me-esp. when cucumbers are in season or just top some crackers with the cheese mixture. Cooking time is refrigeration time after preparation.
